Shrimp Glossary

Sizing, Processing, and Classifications at a Glance

Shrimp are categorized by size, shell condition, and processing style to meet the needs of every kitchen.

Use this glossary to navigate Inland’s wide range of fresh and frozen shrimp offerings with confidence.

Common Sizing Terms

• U/10, U/12, U/15: “Under” — meaning fewer than 10, 12, or 15 shrimp per pound. Larger shrimp.

• 8/12, 13/15, 16/20, etc.: The approximate number of shrimp per pound. (Example: 16/20 = 16 to 20 shrimp per pound.)

• 21/25, 26/30, 31/35, etc.: Standard sizing indicating a smaller shrimp count per pound as numbers increase.

Origin Terms

• Domestic: Harvested in U.S. waters, primarily the Gulf and South Atlantic.

• Imported: Sourced from international producers, including Mexico, Argentina, and Asia.

Handling Terms

• IQF (Individually Quick Frozen): Each shrimp is frozen separately to maintain quality, minimize clumping, and extend shelf life.

Processing Terms

• P&D (Peeled and Deveined): Shrimp with the shell and vein removed, offering maximum convenience for kitchens. Available tail-on or tail-off.

• EZ Peel: Shrimp that are split along the back and deveined, but still retain their shell. Designed for easy peeling while maintaining flavor during cooking.

• PUD (Peeled, Undeveined): Shrimp with the shell removed but the vein left intact. Ideal for kitchens that prefer to handle final prep in-house.
