THOU MAYEST is going green. After closing the doors to its Crossroads shop in December, the coffee company has been serving up its locally roasted beans at its new concept nestled in Family Tree Nursery in Shawnee (7036 Nieman Rd.). Café Equinox is focused on caffeine and chlorophyll—patrons can get their java fix surrounded by vibrant plant life in the nursery’s greenhouse during cooler months and on the patio as weather heats up. It’s a natural combination of Thou Mayest co-founder Bo Nelson’s two worlds—his family owns the nursery and Nelson grew up working there. At the fresh coffee spot, he continues to serve up Thou Mayest’s roasts along with seasonal creations, teas, and tea lattes and pastries.
