TIANA COSTANZO I started my dance career differently than most, with Calisthenics at the age of 2. It wasn’t until I was 8 I did a term of tap and ballet however, funnily enough I didn’t really enjoy it. It wasn’t until I started doing jazz and hip hop that I really fell in love with dance. I was fortunate enough that my Mum loved dance as well so in 2012 she took over AVV Calisthenics club and introduced dance. From a young age I always knew I wanted to perform. If you asked anyone who knew me what I wanted to do when I grow up, it was always a “dancer, singer and actor”. From the age of 12 I really started to grow my dance vocabulary and learnt to become versatile by doing all styles including ballet, even though it was not my strongest style. I loved performing solos as well as doing troupes and duos/trios. Between the age of 12 and 17 I was heavily involved in competitions. I loved comps and wanted to enter every single one that came to Adelaide. Throughout the years I ended up having 4 knee surgeries however, I didn’t let these setbacks bring me down. It only made me stronger, more courageous, and more determined to make my dream of becoming a professional performer a reality. As my love for dance grew so did my passion for teaching children. Helping mentor my students into the artists they can become was my favourite part about being a teacher. Not only was I able to nurture them through dance I was able to create a special bond which is kept for a lifetime. The more teaching and dancing I did, it made me realise that Adelaide doesn’t have as many opportunities as the Eastern States. Being from Adelaide I knew that it was up to me to create my own connections with people in the industry and not rely solely on my talent. I took every opportunity to go to workshops when interstate and international choreographers came over – I absolutely loved doing these workshops. I also then ran my own workshops in Adelaide where I organised leading industry professionals (such as Lauren Elton, Blake John Wood, Paris Cavanagh and many more) to come over and give Adelaide the experiences that places such as Sydney were receiving all the time.


At Follow Your Dreams Nationals in January 2019, I was extremely lucky to receive the Golden Ticket award. This award was a return trip to LA as well as 5 dance classes at Millennium Dance Complex and 5 classes at The Edge. If it wasn’t for Kylie Drew, introducing this award into her competition and the incredible judges I wouldn’t have received an experience that every dancer dreams of. In October 2018, Joffrey Ballet School toured Australia to audition for their summer school programs. I knew that this program was exactly what I needed to help me grow into the performer I am today. This experience was incredible, not only did my love for musical theatre grow but it really helped me figure out what I wanted to do with my career. With both experiences I was able to spend an entire month in America, living my best life doing what I love and learning an immense amount of skills dance related as well as many life lessons.



A turning point for me in dance was having Lucy Ellis and Kylie Norris as my dance teachers and mentors, they guided me in the direction I wanted to go and taught me so much – I appreciate everything they have done. If it wasn’t for them, I probably wouldn’t be dancing today. My favourite memories came from learning my solos, duos, and troupes for competitions. Being able to perform their choreography on stage was so much fun. It really helped me start to explore my characters and how far I could take them. We were lucky that they also brought over many choreographers, which created more opportunities for us. In my final year at school, I decided to really focus on my singing. As musical theatre is not all about dancing, I wanted to train my voice so that I could become a triple threat. My insanely talented vocal coach – Rosie Hosking mentored me in many ways not only through learning technique and how to perform songs she taught me how to become comfortable with myself which I think is the most valuable lesson.

I am so lucky to have such wonderful parents who support me and allow me to follow my dreams as I know it isn’t easy letting their own child move to another state without them. I was lucky enough to have my sister join me at ED5 this year. Living with family again has made this experience even better. My family have been there for me throughout my entire dance journey. From starting competitions from such a young age to now graduating a fulltime course. I couldn’t have done this without them! ED5 has been such an incredible experience. Not only have I grown as an artist but as a person too. ED5 doesn’t only teach you how to become a great performer, it teaches you how to become the best version of YOU. Covid has been such a big part of everyone’s lives and unfortunately my year had to endeavour two years of it. I am so grateful for the people in my year. We were able to overcome so many obstacles and persevere through many highs and even more lows. Many can think of covid as a negative thing but to us it only made us stronger. We made it through to the end and we were able to push through no matter what life threw at us. Not only am I proud to be where I am today but I am proud to be a part of something so special.

I knew I wanted to go to fulltime and so when the time came to decide to pick which fulltime school I were to go too, I took it very seriously. I spent weeks researching the best fulltime schools in Australia. Whenever interstate choreographers came over, I always asked them – What did they think the best school was? 99% of them all said ED5 International. After receiving ED5’s prospectus I knew that it was the school for me. I applied to many other schools online however, knowing that ED5 was the school I wanted, I knew it was the right decision to fly up to Sydney for the live auditions. Moving to Sydney as a fresh 18-year-old is a massive eye opener. At first it was hard to be away from home but once the course started it became a little easier knowing that I moved states to study something I love. Having a strong support system is needed to be able to live away from home.



One of the biggest lessons I have learnt at ED5 is that people want to see who the real you is, not who you think they want to see. I have created so many memories and such amazing relationships with friends as well as teachers. It’s funny that when I started ED5 I thought I knew everything, then I met William A. Forsythe and my whole life was changed. William has been such an important mentor during my time at ED5, he has impacted my life as an artist and person. I wouldn’t be half the artist or person I am today if it wasn’t for him and my time at ED5 International. Elena and Mario De Cinque and William A. Forsythe have created such an amazing course. I am so sad but grateful that I am finally able to graduate. I have found it very hard to write about my time at ED5 because it’s not just a fulltime school, it’s a family. There have been so many wonderful memories, experiences, relationships created and insanely talented teachers that I’ve had who I want to thank for being a part of my journey. Graduating fulltime is not the end of my time as an artist but, it is the beginning of a new opportunity. PHOTO SUPPLIED

Hi, my name is Simona, I am 13 years old and dance with Generation Dance in Adelaide and I have Idiopathic Scoliosis. This means that I have an abnormal curvature of my spine, but with no exact reason of why it curves. So, instead of my spine being straight, mine looks more like the letter ‘S’. I was 3 years old when I started dancing at Generation Dance and have been there ever since. I wanted to be like my big sister and do what she was doing. I was going to her dance classes and watching her and dancing around at home. So, when I could finally start classes of my own, I did. I love all genres of dance, but my favourites would have to be jazz, lyrical and tap. I started competing when I was 5 years old with my troupe and my first ever solo competition was when I was 6 years old – I think I can still remember the routine! Dancing has been my life since then. I love everything about dance, but I especially love performing and my dance family and friends. PHOTO SUPPLIED

Simona Struga I was diagnosed with scoliosis in 2016 when I was 8 years old. My back was hurting after a dance competition which was a little strange for me. At that stage it was just watch and wait to see what happens – it could stay the same, or it could progress. I kept on dancing and playing soccer that year. I just put up with the pain and spent time at the physio. Things did progress, and 18 months later I was seeing a paediatric orthopaedic surgeon for assessment. I was still quite young and had a lot more growing to do, so again it was just watch and wait to see what my spine would do. At this stage I was at the physio every 2 weeks to help with the pain and strengthen my core. All during this time I kept up dancing. I worked on building my core strength as this was the one thing that really helped with the pain. My physio and surgeon were surprised at why I wasn’t in more pain based on how much the curve of my spine had changed. Dancing has so many benefits, but for me this was the biggest benefit.

Most people who know me or see me dance can’t tell that there is anything wrong with me. I don’t think there is anything wrong with me, I’ve always just been a little bit crooked. Sometimes when I’m meant to be standing straight, or my feet are meant to be parallel, it just doesn’t look how it should. To me it feels like I am standing straight, or that my feet are parallel, but I have learnt that I need to overcompensate so that it is straight – it just feels a bit odd to me. There are some things that I just can’t do, but it hasn’t stopped me. I have an amazing dance teacher that makes sure that my solos are choreographed to suit what I can do, but she still challenges me. I’ve also had the privilege to work with some great choreographers that have also kept my “issue” in mind, but still push me. It has been 3 years since I first started wearing a brace – I’ve had three over the years to accommodate for my growth and change in my spine. Things have now progressed a little further and the brace is not able to stabilise the curve in the top part of my spine. It’s done a great job at keeping my lumbar, or lower, spine from moving too much, but my thoracic, or top, spine is now progressing quickly as I grow. I always have some level of pain, but I just put up with that so I can continue dancing.

By the end of 2018, the curvature of my spine had progressed so much that I was fitted for a brace. First a cast was made of my back – this is the same as having a cast put on to a broken arm. From this, they made a rigid, plastic back brace that was specifically designed for me. I got my first brace a few days before Christmas – I was 10 years old and wasn’t happy. I had to wear my brace 23 hours a day – the only time I could take it off outside of that was for dance. Dance was always my happy place, but now it was even more special to me. Like all dancers, dancing gives me the opportunity to express myself, but it also gives me an opportunity to be free. Wearing this brace everyday is uncomfortable. It’s hot and sweaty in summer, pushes on my hips and gives me bruises and rashes. I know it’s helping, but I’ve always loved the time at dance to escape for just a little bit.


Early next year I will be having spinal fusion surgery on my thoracic spine to straighten that part. I will have two metal rods and a whole lot of screws to keep it straight. Unfortunately, that means 6 to 9 months off from dance. I’m a little scared about the surgery, but I’m mostly sad about not being able to dance for that long. I know that I can do anything I put my mind to and plan on getting back to dance as soon as possible, even if it’s just to sit and watch technique classes! I’ve got the most amazing dance friends that will help me get through it and I plan on being there supporting them during competitions in 2022. I know I’ve a got a challenging time ahead of me, but dance has made me resilient and strong. Bring on my straight back!

Ambaasador RECIPES 1 large fennel bulb, trimmed, core removed 3 limes 2 green shallots, trimmed 3 large ripe avocados 250g baby cucumbers, peeled into ribbons 200g (1 bunch) radishes, trimmed, washed, thinly sliced 400g sliced smoked salmon Extra virgin olive oil, to drizzle Crème fraîche, to serve Salmon roe, to serve Fresh dill sprigs, to serve Micro herbs, to serve Gluten-free crackers or crusty bread, to serve (optional)


30min prep l serves 8 Step 1 Use a mandoline to very thinly slice the fennel Unsure of the quantity needed? Click on the underlined ingredient to reveal the quantity. No need to flip back and forth! OK, GOT IT lengthways. Place in a large bowl with the juice of 1 lime. Add a large pinch of salt, toss to combine and set aside to pickle.

Step 2 Cut shallots into 8cm lengths and thinly slice lengthways. Place in a bowl of iced water for 2-3 minutes or until lightly curled. Drain well. Roughly mash the avocados in a bowl. Add the juice from the remaining limes, season and stir to combine.


Step 3 Drain fennel. Arrange avocado in a heaped circle around the edge of a large plate. Arrange pickled fennel, cucumber, radish, shallot and salmon over the top. Drizzle with oil and season with pepper. Dollop on crème fraîche and salmon roe. Scatter with the dill and micro herbs. Serve immediately with crackers or bread, if you like.

3 cups Chelsea white sugar ½ cup Meadow Fresh milk ½ cup sweetened condensed milk 125g butter ⅛ tsp salt 1 Tbsp Chelsea golden syrup 2 tsp vanilla essence

2hr prep 1. Lightly grease a 20cm square tin. 2. Put the sugar and milk into a saucepan and heat gently, stirring constantly until the sugar dissolves, about 10 minutes. 3. Add the sweetened condensed milk, butter, salt and golden syrup and stir until the butter has melted.

4. Bring to the boil and continue boiling for about 5 minutes or until it reaches the soft ball stage (114˚C on a sugar thermometer). Stir occasionally to prevent the mixture burning on the base of the pan. 5. Remove from the heat, add the vanilla and cool for 2–3 minutes.

6. Beat the fudge with a wooden spoon or electric beater for about 3 minutes until it is the consistency of thick custard. It should still level out when you remove the spoon, so check every 30 seconds or so. 7. Pour into the tin and mark into squares. Cut when cold.

Ambaasador RECIPES Taisen Carlino KETO GARLIC BREAD

1 c. shredded mozzarella 1/2 c. finely ground almond flour 2 tbsp. cream cheese 1 tbsp. garlic powder 1 tsp. baking powder Kosher salt 1 large egg 1 tbsp. butter, melted 1 clove garlic, minced 1 tbsp. freshly chopped parsley 1 tbsp. freshly grated Parmesan Marinara, warmed, for serving

30min prep l serves 4 Step 1 Preheat oven to 400° and line a large baking sheet with parchment paper. In a medium, microwave-safe bowl, add mozzarella, almond flour, cream cheese, garlic powder, baking powder, and a large pinch of salt. Microwave on high until cheeses are melted, about 1 minute. Stir in egg.


Step 2 Shape dough into a ½”-thick oval on baking sheet. Step 3 In a small bowl, mix melted butter with garlic, parsley, and Parmesan. Brush mixture over top of bread.

Step 4 Bake until golden, 15 to 17 minutes. Slice and serve with marinara sauce for dipping.

SUGAR COOKIE 1 cup unsalted butter, softened 2/3 cup sugar 1 egg 1 teaspoon vanilla 1/2 tablespoon salt 1 1/2 cups sifted flour ROYAL ICING 3 1/2 cups confectioners sugar 3 tablespoons meringue powder or egg whites 6 tablespoons warm water

Makes 16-24 cookies SUGAR COOKIE Cream together unsalted butter, sugar and beat in 1 egg. Add vanilla, salt and sifted flour.

Transfer cookies onto cookie liners. Bake about 8-10 minutes or until lightly coloured.

ROYAL ICING Mix all ingredients on medium speed for 5 minutes.

Mix until all ingredients are well blended. Chill dough 3-4 hours before rolling. Preheat over 350 degrees. Roll out on a lightly floured counter to 1/4 inch think and cut with your favourite cookie cutter.

Let cookies cool slightly on cookie sheet then transfer to a wire rack to cool completely. Decorate with buttercream frosting, royal icing or eat plain.

This recipe makes icing the right consistency for piping. To flood, add water a little at a time to achieve a pourable consistency like heavy cream.


250g bacon rashers diced 1 onion diced large 250g cream cheese 1 1/2 cups cream 2 cups mozzarella grated 1 cup tasty cheese grated 1 cob loaf

15min prep l serves 8 Cut the top off cob loaf and pull the soft bread out. Place the top and stuffing aside. Fry onion and bacon, place in a bowl Add the block of softened cheese, cream and grated cheeses. Mix well and fill the cob loaf.


Mix all together Roll out Use cookie cutter

Place bread lid on and wrap in foil. Bake at 180C for 45 minutes. Remove foil and cook for a further 10 minutes.

Add the bread pieces and bake for 7-10 minutes to crisp up. To serve, place on a heat resistant platter with crispy bread pieces around the outside to use as dippers and vegetable sticks.

200g flour 85g brown sugar 1/2 teaspoon ground sugar 1/2 teaspoon ginger powder 1/4 teaspoon salt 1/2 teaspoon baking soda 1/2 egg (30g) 30g honey 50g soft butter

Bake at 160 degrees c for 12 minutes

Ambaasador RECIPES 200g butter, chopped 200g dark chocolate, chopped 1 1/2 cups caster sugar 4 eggs 1/3 cup cocoa powder 1 cup plain flour 24 Oreo biscuits 6 x 23g packets mini Oreo biscuits, chopped


45min prep/cook l 28 servings Step 1 Preheat oven to 190C/170C fan-forced. Grease and line a 20cm x 30cm lamington pan with baking paper, extending paper 5cm above long sides.

Step 2 Stir butter and chocolate in a medium saucepan over medium heat for 5 minutes or until smooth. Remove from heat. Stir in sugar. Cool 10 minutes.

Step 3 Add eggs, cocoa and flour. Stir to combine. Pour half the batter into the prepared pan. Top with Oreo biscuits, then remaining batter. Top with mini Oreo biscuits. Bake for 35 minutes or until top is just firm. Cool in pan completely. STEP 4 Cut into pieces. Serve.

180g self raising flour 90g butter 90g sugar 90g brown sugar 1 egg 1/2 teaspoon vanilla essence 1/4 teaspoon water 1 bag mm's/smarties/choc bits

Charlotte Hermsen POLKA DOT COOKIES

Makes about 50 cookies Sift flour Combine butter, sugars, vanilla and water. BLEND WELL. Beat in egg, then stir flour mixture in thoroughly.

Stir in polka dots. Drop by teaspoonfuls onto greased cockie sheet.
