Pre-cut veggies are also available which makes it even easier, so there is no excuse for eating poorly in the colder months. Chicken Curry Soup INGREDIENTS Serves 4 (can be cooked in a slow cooker) 160gm lean bacon, fat trimmed off/chopped 240gm chicken breast, chopped 1 onion, chopped 1 teaspoon prepared garlic 2 teaspoons curry powder 2 teaspoons plain flour 5 cups chicken stock (5 teaspoons chicken stock powder plus 5 cups water) 1 large carrot, chopped 1 large can creamed corn 100gm raw rice 1 teaspoon mixed herbs Salt and pepper Mint leaves. METHOD: Spray a large soup pot with cooking spray. Place the bacon, chicken, onion, garlic and curry powder in the pot and saute for three minutes. Stir in flour and remaining ingredients. Bring to the boil and simmer 40 minutes. Divide evenly and garnish with mint leaves.
