Welcome to the Inca Trail Peruvian Restaurant If you are just beginning your journey into Peruvian cuisine, please allow us to provide you with some key phrases to help you find your favorite dishes. Aji Amarillo is a mild yellow bell pepper native to Peru. It lends both its flavor and its yellow color to our rich, cheese-based sauce. Aji Panca is a mild dark red pepper grown throughout South America that is made into a concentrated paste. This paste brings a rich, smoky and fruity flavor to our dishes. Aji Rocoto is a hot chile pepper with red flesh and black seeds. Made into a fresh salsa-type sauce, it brings it powerful heat to everything on our menu. Salsa Criolla is a light salad of sliced red onions, fresh cilantro, tomatoes and lime juice. Green Sauce is made fresh daily using cilantro, fresh cheese, milk, aji rocoto, garlic, and onion blended together. Yellow Sauce is made fresh daily using aji Amarillo, fresh cheese, milk, red bell pepper and garlic blended together.
