The Bacon-Wrapped Shrimp is a staff favorite at Firefly. It’s a no-frills dish with explosive flavor. Whip up this dish after a long day at the beach and enjoy!

Bacon-Wrapped Shrimp 1 cup grits 1 quart cream

6–7 large shrimp per person

6 oz. grated cheddar cheese

Bacon slices (cut in half) to wrap around each shrimp

Salt and pepper to taste 1/2 cup cider vinegar 1 cup pepper jelly 1/2 cup brown sugar 1 cup chicken stock

Wrap shrimp with bacon, but DO NOT OVERLAP. Place on skewer. (If using bamboo skewers, soak beforehand.) Shrimp may be broiled in the oven or cooked on the grill until the bacon is crisp. Cook grits according to package directions, substituting cream for the water. Stir in cheese. For the sauce, heat chicken stock. Whisk in brown sugar and vinegar; reduce by half. Add pepper jelly and stir. Place sauce in a bowl. Next, add grits and top with cooked shrimp. Garnish with chives. Dig in!
