Tips for Cooking Turkey Proper handling and cooking of poultry can help prevent foodborne illness. If you plan to cook a turkey that has been frozen, thaw it in the refrigerator. Allow 24 hours of thawing time for every five pounds of turkey. Wash your hands and kitchen surfaces frequently to avoid spreading bacteria that may be present on the bird. Cook the turkey until its internal temperature reaches 170 degrees in the thickest part of the breast and 180 degrees in the thigh. Itâ€™s safest to cook stuffing separately.
