Each specific beer is crafted to bring a unique and colorful flavor profile to the pallet. Four key components and a variety of subtle nuances are carefully balanced together in the beer making process. Water, malt, hops and yeasts are the key ingredients used in the brewing process. Barley is the foundation of most beers, but other fermentable grains are sometimes used. Like hops, a wide variety of barley exist from around the world. The barley used in most beers goes first through a process called germination. After germination the barley is dried then kilned to a specific degree depending upon the desired malt characteristics. The length and heat of the kilning process creates and affects the malt characteristics differently. Once at the brewery the malt is slightly milled to “crack” the barley. Next, the mashing process occurs by mixing hot water with the cracked barley. This creates a porridge like solution which draws the starch out of the malt whereby enzymes inherent in the malt converts the starch into simple sugars. The resulting fermentable liquid base (wort) is separated from the residual grains in a process called lautering.

Hops are the flowers derived and picked from a hop vine at a specific point of ripeness. Hop vines are grown throughout the world in many varieties. All Hop varietals have a unique flavor profile, as such the choice of which Hops to use is critical to the beer being made. Hops creates a bitterness that balances out the sweetness of the malt and helps with head retention in the poured beer. In some cases, other ingredients such as spruce tips, fruits and spices are added into the brewing process which add more complexity into the final product. The wort is boiled together with the chosen hops whereby the wort is sterilized and introduced with hop resins and flavors. This process also allows for certain unwanted proteins and some tannins in the wort to be removed. The wort is then cooled and made ready for fermenting. Beer derives its alcohol through the fermentation process whereby yeast introduced into the sugary wort creates CO2 and alcohol. Yeast is responsible for much of the final beers characteristics. The yeast and fermentation process also creates a variety of flavors which are introduced into the beer from metabolic by-products such as esters (fruity like flavors), phenols (spicy and peppery notes) and others. Hops contain essential resins and oil compounds which are soluble and as such these can be boiled away in the process described above. Common with many IPA’s sometimes hops are reintroduced (dry-hopping) and soaked into what is now beer to bring back more of the delicate aromas and flavors lost during boil. The finished product is the cooled, clarified, carbonated and packaged for your enjoyment.

Hoppy & Bitter: The majority of aroma will be derived from hop. While a solid malt base exists, the hops will dominate the malt and the beer will demonstrate a bitterness to it. These beers will cleanse the pallet of fatty foods. Bold, herbal and citric beers such as IPA’s will use a lighter mild malt allowing the hops to be the focus. Malty ambers will develop a stronger malt allowing the caramel notes to come through the bitterness.

Malty & Sweet: The sweetness of the malt will shine through on these beers. Expect notes of toffee, nuts, caramel and toast. Several German and English beers fall into this category. Beers that lean more towards toast aroma and flavors can bring dark fruit notes (raisin, fig, dates) while others leaning towards caramel may bring a dried fruit note (toffee with red apples, orange zest or plum).

Fruity & Spicy: The flavors in this profile are mainly derived from the yeast and are predominately found in Belgian style beers among other styles. Heavy notes of fruit and spice dominate the malt and hops. Sometimes actual fruit may be added to the brew­ing process to enhance the flavor. The variety of yeasts used to create these styles often bring much of the character found in the beer. Some of the flavors created by the yeast could be described as fruity notes of tart apple, pear, peach, lemon, apricot as well as spicy aromas of clove, pepper, cinna­mon, nutmeg, rose and sometimes a hint of smoke.

Dark & Roasty: Dark roasted malts contribute coffee and cocoa notes. The malt will come through stronger than the other flavor profiles. Typical of porters, stouts, black and brown ales the intense roasting of malt yields flavors of chocolate, nuts, coffee and sometimes a light fragrance of a dark fruit. Many stouts and black ale are produced from the darkest of roasts with notes of espresso, and dark chocolate sometimes complimented with hints of plums and cherries.

Salmon Falls Park is located 14 miles up the road. In 0.6 miles you will cross a bridge - Lower Henline Falls is visible to the left. In another 0.7 miles the road forks at a sign Bear left at the fork (Rd #2209). In 1/2 mile there will be an area that appears to fork to the left and right. Go to the left and there you will find a sign leading the way. In 22 miles - at second yellow light just east of Mehama - turn left onto North Fork Road SE. After 15.1 miles road turns to gravel. Another 1.2 miles you will reach a fork in the road. Bear right at the fork where the sign says “Three Pools”. This will be Forest Road #2207. 3.8 miles from the fork will be a wide spot off to the left of the road for parking. Name: Gooch, Marion & Downing Creek Falls Location: Near Detroit Lake Distance from Eugene: 92 Miles Hike Distance: .1 Mile Difficulty Level: Easy Parking Fee: No Accessible May through October Contact Info: 503-854-3366 Directions: Head east on Hwy 126. When 126 meets up with Hwy 20 head east on 20 for three miles until junction with Hwy 22. Turn left onto the access road, then turn left at the stop sign (Hwy 22). In about 15 miles turn east onto Marion Creek Road between mileposts 67 and 66 on Hwy 22. Name: Butte & Echo Creek Falls Location: Near Silverton Hike Distance: .7 Miles Difficulty Level: Easy Parking Fee: No Accessible Year-round Contact Info: 503-859-2151 Directions: From the town of Scotts Mills, follow Crooked Finger Rd. for 11 1/2 miles (2 miles past the end of the pavement) and turn left onto Road 400, signed for Butte Creek Falls and drive another 2 miles to the trailhead. Follow the trail, staying to the left at all junctions, for about 1/3 of a mile to the viewpoint overlooking the falls.

Continue 4 miles east of Lebanon turn left onto Fairview Rd. and bear right at the T-junction (road to McDowell Creek Park) drive 0.9 miles bear left to stay on McDowell Creek Rd. Go another 7.6 miles turn right into the parking area for McDowell Creek Park. Name: Upper & Lower Panther Creek Falls Location: East of Sweet Home Hike Distance: 1.3 Mile Difficulty Level: Easy Parking Fee: No Accessible Year-round Contact Info: 541-967-3917 Directions: From I-5 exit onto Hwy 20 and head east towards Lebanon. At milepost 33 east of Sweet Home turn left onto Green Peter Dam/Quartzville Rd. Continue 16 miles turn left onto unmarked Trout Creek Rd. The upper falls is located 3 miles up the road at a curve in the road. For the lower falls, go back to Trout Creek Rd. then once Quartzville Rd. turn left. The fall is located across the road behind a guardrail.

Corvallis Area Name: Alsea Falls & Green Peak Falls Location: West of Monroe, Near Glenbrook Hike Distance: 3 Miles Difficulty Level: Easy Parking Fee: Yes Accessible Year-round Contact Info: 541-750-7000 Directions: From the Alsea-Deadwood Hwy from the town of Alsea 1 mile to the South Fork Rd. Follow that road for 8.5 miles, then turn left into the signed Day Use parking area. Then to get to Green Peak Falls head back to the top of Alsea Falls and go across the footbridge. About 1 mile down the trail to see the falls.

Salt Creek Falls is Oregon’s Largest Highest Single drop waterfall.

Turn right on Brice Creek Rd. #2470 and continue for another 8.2 miles to the Champion Creek Trailhead for Brice Creek Trail.

Slight right on Rd. #2470 continuing 8.2 miles to the Champion Creek Trailhead, of the Brice Creek Trail #2470. The Brice Creek Trail begins across the bridge and on the left. Hike 1/3 mile west on the Brice Creek Trail, #1403, to the Trestle Creek Falls Trail junction (just west of the Trestle Creek Trail Bridge), then travel north for another .3 miles to the waterfalls.

Name: Kentucky Falls Location: Near Mapleton Hike Distance: 2.2 Miles Difficulty Level: Easy Parking Fee: No Accessible Year-round Contact Info: 541-750-7000 Directions: Go west on Hwy 126.Turn Left between mile markers 26 and 27 at “Whittaker Creek Recreation Area” sign. Travel 1.6 miles turning right across a bridge onto Rd. #188-28. Travel this road for 1.5 miles, turning to the left onto Rd. #18-8-28.1 (Dunn Ridge Rd.) Continue on this road for 7 miles to a “T” shaped junction at the end of the pavement. Turn left onto Road #18-8-9 (Knowles Creek Rd.). Travel for 2.8 miles veering to the right onto Forest Rd. #919 for 1.6 miles to a “T” shaped junction. Turn right onto Forest Rd. #23 and travel for 2.8 miles to the Kentucky Falls Trailhead. Name: Sweet Creek Falls (11 Falls to See) Location: Near Mapleton Hike Distance: 2.2 Miles Difficulty Level: Easy Parking Fee: No Accessible Year-round Contact Info: 541-750-7000 Directions: Go west Hwy 126 to Siuslaw River Bridge in Mapleton, cross the bridge from town and make immediate turn west on Sweet Creek Rd. After 10.2 miles, Homestead Trailhead is on the right. Continue on Sweet Creek Rd. to Sweet Creek Falls and Wagon Rd. Trailheads.
