2 slices wholemeal bread baby spinach 40g shaved turkey breast 50g Sandhurst Lite! 97% Fat Free Semi-dried Tomatoes 50g Sandhurst Artichoke Hearts in Brine, coarsely chopped 1 Sandhurst Dill Cucumber, sliced into quarters Layer ingredients on one slice of bread. Salt and coarse fresh pepper to taste. Top sandwich with other slice of bread and toast in non-stick sandwich grill until heated through and bread is golden brown. Slice in half and serve with dill cucumber spears on side.

chilli con carne Preparation time: 15 minutes Cooking time: 30 minutes Serves: 4 1 tablespoon olive oil

¼ cup Mutti Tomato Paste

1 large onion, chopped

1 cup beef stock

1 red capsicum, seeds and veins removed, diced

1½ teaspoons sugar

500g lean beef mince

420g can Sandhurst Kidney Beans, drained and rinsed

2 cloves garlic, crushed

¼ cup chopped Sandhurst Jalapeño Chillies

1 tablespoon ground cumin

salt, to taste

2 teaspoon ground coriander seed

1/3 cup coarsely chopped fresh coriander leaves (optional)

1½ teaspoons dried oregano

steamed rice and light sour cream, to serve

½ teaspoon chilli powder, or to taste 400g Sandhurst Crushed Tomatoes 1. Heat oil in a large frying pan over a moderate heat. Add onion and capsicum and cook, stirring occasionally, until softened. 2. Increase heat and add beef, garlic, cumin, ground coriander, oregano and chilli powder. Cook, stirring to break up mince, until meat is brown. Add undrained chopped tomatoes, tomato paste, beef stock, sugar and kidney beans. Bring to the boil, then lower heat and simmer, stirring occasionally, for 20 minutes or until thick. Stir in jalapeño chillies, salt and coriander leaves. 3. Serve with rice and reduced fat sour cream.

Combine breadcrumbs, parsley, capers, lemon rind, salt and garlic. Heat oil in a medium frying pan over a moderate heat. Add breadcrumb mixture and stir 6 minutes or until golden and crisp. Set aside and keep warm. 2. Cook fettuccini in a large pot of water until tender. Meanwhile, heat 1 tablespoon of the oil in a large frying pan over a moderate heat and fry onion until soft. Add tomatoes, wine, tomato paste and chilli flakes and simmer 5 minutes or until thick, stirring occasionally. Add olives, capsicum and tuna and stir to combine. 3. Drain fettuccini and return to pot. Stir through remaining oil and half the tuna sauce. Divide between
