Greetings from Gustavo The year goes by in a flash! It is hard to believe that we are already in the second part of 2013. Many families (including my own) have been blessed with an opportunity to relax and unwind in a mid-year break, enjoying fun adventures and a respite from routine. As the vacation period draws to a close, we remind you that it is not too late to schedule an August/September last-minute escape. We also look forward to the coming months, anticipating a time stretch that is especially attractive for honeymooners and couples. Costa Rica’s forests will be in full bloom, providing exuberant landscapes teeming with life & romance.

Hotel Punta Islita’s Edgar & Yariela held the wedding of their dreams at their native Corozalito Beach. And El Silencio Lodge & Spa joined Nelson and his bride Guiselle in a classic ceremony at the picturesque Zarcero church. Surrounded by family, friends, and colleagues, both couples enjoyed a magical day. We were honored to be part of it. Congratulations and many blessings!

Surprise Your Sweetie

Pancakes ½ cup of whole wheat flour 1 cup of all-purpose flour 2 tbsp of raw sugar 3 tsp baking powder Pinch of salt 1 Can of Evaporated Milk (12 oz) ¼ cup of 2% milk 1 egg

Homemade pancakes are a delicious way to say “I Love You”.

Sift flour, sugar, baking powder & salt in a bowl. Fold in milk, egg & butter until smooth. Preheat a lightly oiled pan to medium high. Scoop about a 1/4 cup of batter and pour on pan to make each pancake. Sprinkle fruit mix on the batter before it completely sets. Dab a bit of extra batter on top of fruit to seal in the banana and berries. Brown on both sides and stack. For the sauce: add pineapple, orange juice, butter, and sugar to a sauce pan. Reduce on low heat until the mixture becomes a syrup. Pour warm on pancakes and add more fruit as topping..

3 tbsp melted butter 1 banana (in thin round slices) 1 cup of fresh berries (finely diced) Sauce 1 cup of diced fresh pineapple 1 cup of fresh orange juice 1/3 cup raw sugar 1 tbsp of butter

Quetzal Sighting! Recent guests were treated to the rare sight of a Resplendent Quetzal as it guarded its offspring along El Silencio’s La Promesa Waterfall trail. The Quetzal’s signature long tail and luminous blue, green, and red plumage were the talk of the town! We are quite thrilled because this evidences the gradual success of our Quetzal initiative, a reforestation program that is bringing back the native tree species that are essential to these endangered birds’ survival.

Resplendent Quetzals are considered one of the planet’s most beautiful and elusive birds. Doting parents, they take turns incubating the eggs. Near the end of the rearing period, the male will remain with the hatchlings for the last couple of weeks. It was during this stage that our Eco-Concierges spotted our longtailed friend. We look forward to more sightings in the near future!

Lapa Lookout Our partnership with The Ara Project keeps growing! With the generous support of the British Embassy in Costa Rica, we have completed the latest stage in the wildly successful Red Macaw recovery program. The Lapa Lookout is a welcoming spot that offers a vantage view of

the playful specimens as they thrive in the dry forest. An information and training center provides educational material to guests and community members. Hotel Punta Islita is thrilled to be part of this ambitious plan to restore fit numbers to the local macaw population.
