The Creole Cuisine Similarly to the population, the Seychelles' food and drink culture is also characterised by the influence of different regions of the world, resulting in a varied range of influences. The Creole cuisine combines the exoticism of Indian and Asian dishes with the piquant flavours of the Orient, as well as some subtleties of European culinary culture. These elements then find their culinary expression in a unique fusion of influences. The basis for this is the widespread use of natural ingredients that the Seychelles land and its surrounding waters have to offer. Hardly anywhere else in the world offers such a variety of fresh fish and seafood. The best-known fish are tuna, sea bass, red snapper, barracuda, lobster, and squid and are mostly served grilled, fried or baked or prepared as a curry. Grilled fish with a Creole tomato-chilli sauce or as a delicious coconut milk curry make for some unique culinary treats.

Uncorked Part II -“The secrets behind the cork” Come, my brothers, I am drinking stars! The bubbles in champagne can greatly be contested as a mistake and widely considered a fault. The bubbles occurred by chance after yeasts and residual sugars lay dormant in the bottle during the winter months. Suddenly, bursting back into action the following spring creating carbon dioxide. In the late 16th century few people found this wine charming. Dominus Pierre Pérignon, a Benedictine monk in the 16th century of Abbey of Saint-Pierre d’Hautvillers near Epernay was tasked, as the cellar master, to research why their wines had bubbles and find a possible solution to removing them. Although Dom Pérignon did not invent Champagne nor find a solution to removing the bubbles (lucky us) he did contribute greatly to the techniques of Champagne today. Focusing on using only the finest grapes, as well as substituting foot stomping for the gentle pressing of grapes to reduce phenolic compounds from entering the cuvee (finest grape juice) and making the wines bitter. Keep an eye on the current Silhouette island offers some incredible swimming spots like the beach in front of the hotel or the presidential beach a bit up north. These are protected areas and safe all year-round for people to snorkel, swim, do water sports and enjoy any way they can while others can get dangerous due to strong currents and shore breaks. In the south of the hotel you'll find Anse Lascar, a pretty little beach with amazing views over the rough coastline. However swimming and snorkelling here is not recommended. The currents here are powerful, and can quickly pull swimmers out to sea. The best way to stay safe is to recognise the danger and if caught in one, don't fight it! Swim parallel to the shore and swim back to land at an angle. Always remember not to swim alone and let someone know when you decide to for a swim.
