Quinoa Pizza Bites with Roasted Garlic Dipping Sauce Serves: 12 Ingredients: Hannaford Canola Oil Cooking Spray 1 cup cooked quinoa 1/2 cup plus 2 Tbsp. Cabot® 50% Light Cheddar Cheese, shredded 1 whole egg 1/2 cup Fresh Express® Baby Spinach, chopped fine 3 Tbsp. Classico® Riserva Roasted Garlic Sauce (plus extra for dipping) 1 tsp. Directions: 1. Cook quinoa according to package directions. 2. Preheat oven to 400°F and spray a 12 mini muffin tin pan with non-stick spray. 3. Mix all ingredients together, reserving 2 tablespoons of cheese for step 5. 4. Divide mixture evenly into muffin tins and press down with a spoon to pack. 5. Bake for 12-15 minutes. Remove from oven and top with remaining 2 tablespoons of cheese. 6. Set oven to broil and place oven rack within the top 1/3 of the oven. Broil for 3045 seconds, watching closely to avoid burning. Allow to cool on a wire rack for 15 minutes. 7. Remove from pan and serve with extra garlic sauce for dipping.
