2019 Gala Certified Executive Chef Martino Ortega Chef Martino Ortega was born and raised in Santa Fe, NM. He has studied culinary arts for the majority of his personal and professional life. He spent his early years in the Bay Area and wine country; studying at California Culinary Academy; and, making his way through the South (Louisiana, Alabama, Mississippi, Florida, Georgia, Tennessee, North Carolina, South Carolina) in the role as Regional Executive Chef and ultimately New Mexico and Texas. He is excited to be in the Hill Country in the role as Director of Dining at Schreiner University where the magic continues!

He grew up in Santa Fe, NM with a very unique family dynamic. Santa Fe is a hub of cuisine and growing up with Japanese flavors incorporated into his style has given him a whole new perspective on Spanish/ Asian/ Northern New Mexican cuisine.

An interesting example of this combination of flavors is a dish he created: Edo Negi Maki with Hatch Green Chile Appetizer finished with a Catalan Style Sofrito on a nest of Pomme Rosti‌. Always on the quest for new flavors, Chef Ortega says it has taken him many years to continually master his craft and the disciplines associated with culinary creativity. I think my passion for the auction business stems from spending my early childhood on the catwalks and in alleyways of countless sale barns across the nation. I remember them as a playground while my Dad was hard at work either buying or selling our livestock while the chant of the auctioneer echoed through that auction barn. As I grew older I had the opportunity to be a part of the logistics of planning and working lots of auctions. I loved the excitement and challenge of getting everything ready by sale day. I liked how everyone had to work as a team and how family and close friends would always be present. It began to become a desire of mine to become an auctioneer for many reasons including the fact that my two boys would be able to grow up similar to the way I did, learning to work hard and seeing firsthand how a business functions.


“That experience drove me to attend The World Wide College of Auctioneering� Due to an unfortunate local bank closure in 2010 my family was forced to sell the Safari park that I managed for them. They lost the business and just about everything they had worked so hard for. Assets were auctioned off by a court appointed auction company. I watched the auction crew as they placed bets before the auction on how fast they could sell our livelihood instead of working hard to get the most for the items being sold. Moments later I watched the winning crew member walk around boasting his winnings. That experience drove me to attend The World Wide College of Auctioneering graduating in 2011. I set out to start Garrett Auctions vowing that I would never treat my customers in such an unprofessional manner. One of my favorite things about the auction business is that you can truly make a difference in someone's life. We at Garrett Auctions strive to make a positive difference in our customers lives. Diligently seeking every way possible to realize the highest value we can. SHERRY STELLE, one of the premier wildlife artists in the world, has donated this beautifully framed artist’s proof of the most magnificent of all antelope in the world, the Sable. Entitled “Aristocrat” this pen and ink creation is 18” w X 24”t. In 1994, the insatiable desire to depict wildlife as she sees it became an uncompromising passion for Sherry. Without formal art training, she took the unforgiving medium of pen and ink and made it her own as one of the foremost artists in the world in this medium. Abstaining from the traditional approach of using watercolor washes over black ink outlines, Sherry mixes her own shades of ink and builds layers of rich color. The result creates a texture and depth that becomes almost sculptural as she literally “paints with her pens”. Sherry’s studio is in Austin, and you need to visit if the opportunity presents itself. To put a price on this work would be to limit its value.

Museum of Western Art John Hampton

Gordon Snidow Gordon Snidow has been known as the foremost chronicler of the contemporary cowboy since 1959, after receiving a Bachelors Degree in Art from the Art Center College of Design, in Los Angeles. He was born in Paris, MO in 1936 and now resides in Ruidoso, N.M. When Western Art Collector magazine, in December of 2017, reached out to the museum directors, curators, gallery owners, artists and art experts to ask one simple question, “What is your favorite work of art that depicts the cowboy?” Trailside Gallery responded, naming gordons painting, ‘Remnant of Another Time.’

Well eighties, John Hampton, one of the into his founders of the Cowboy Artists of America, was still painting, drawing, and sculpting the many stories of the American West. Hampton was born in Brooklyn, New York in 1918, but made his way west at an early age. As a boy, he had shown an early aptitude for art and won a drawing contest sponsored by the New York World Telegram. Years later, while he was working as a cowboy in New Mexico, one of his cow bosses told him that he had the makings of a good cowboy, but an even better artist. Hampton combined those two pursuits for the rest of his life. One of his early jobs was working as an illustrator for newspaper comic strips, including Fred Harman’s Red Ryder and Little Beaver. In 1965, Hampton got together with Joe Beeler, Charlie Dye, and George Phippen in Sedona, Arizona, to talk about the need to preserve and promote the art of the American West. As Hampton later recalled, “We didn’t feel the necessity to wait around and let the Eastern critics tell us what was worth painting in the West.”

Included are 5 full days of hunting with a 2X1 PH to hunter ratio, pick up and drop off at airport in San Luis, 3 meals per day, wine and beer, all transportation during the hunt, field prep of trophies, and much more.
