SWEET POTATO CRISPS RECIPE BY KAITLYNN CARTER

Simple, Healthy and Delicious Holiday Hors D'oeuvres Ingredients 1 Sweet potato 1 Avocado Garlic Salt Lemon (optional) Cut the ends off a sweet potato and then slice the potato lengthwise. Toast the slices in a toaster oven (may need to toast a few times) until potatoes darken a bit.

Cut an avocado in half and then cut slivers out of each half. Spread the avocado slivers across the toasted sweet potato slices. Sprinkle with garlic salt. They’ll be delicious as they are, but if you wish, squeeze some fresh lemon juice over them which will help keep the avocado from turning brown. Your guests will be pleasantly surprised!

WINTER MINESTRONE

WINTER MINESTRONE RECIPE BY KAITLYNN CARTER

Ingredients: vegetable oil 2 medium red onions, chopped 2 cloves garlic 2 carrots, chopped 2 celery stalks, chopped 1 bunch swiss chard 1 cabbage, coarsely chopped 2 cups arugula 1 parmesan rind 2 tbsp tomato paste 12 oz. canned whole tomatoes 2 cups tubetti pasta Salt & pepper

In a large pot, saute onions, garlic, carrots and celery over medium heat in vegetable oil until they soften (about 4 minutes). Cut the ribs out from the swiss chard. Set the leaves aside, chop the ribs and throw them in the pot. Push the veggies to one side of the pot. On the empty side, cook the tomato paste, stirring constantly, until it begins to caramelize (about 3 minutes). Mix the tomato paste in with the vegetables. Add tomato sauce, swiss chard leaves, parmesan rind and cabbage. Add 8 cups of water. Bring to boil, then simmer for 40 minutes. Mix in the arugula and tubetti pasta. Season to taste with salt and pepper. Simmer another 5 minutes. Remove the parmesan rind from the soup before serving. Serve topped with freshly grated parmesan.

KATE MCDERMOTT’S CHERRY PIE + RECIPE CUISINE

While I was in Montana a couple of weeks ago, I had the good fortune of meeting and baking with Kate McDermott - pie extraordinaire! She taught me how to make a cherry pie with the perfect homemade crust. Fortunately, for those of you who weren’t with us in Montana, Kate has a book. The book is beautifully designed and shares every secret that I learned in person from Kate - plus a thousand more!
