orange & cinnamon pastry mince pies with a cream-cheesy twist From our very own Karen English This is one of our family’s favourite Christmas recipes. Takes about 30mins. Don’t be scared of the cheesy twist! WHAT YOU’LL NEED Makes about 18 225g plain flour 4 tablespoons icing sugar 2 teaspoons ground cinnamon 150g butter, softened 2 tablespoons orange zest 4 tablespoons ice water 200g mincemeat One small tub of Philadelphia cheese (I use the Original as the taste is better) 1 egg, beaten icing sugar for dusting WHAT TO DO Preheat oven to 200°C / Gas mark 6. Sift together the flour, 4 tablespoons icing sugar and cinnamon. Use a fork to mix in the butter until mixture resembles fine breadcrumbs. Stir in the orange zest. Sprinkle with iced water, and gather dough into a ball. Roll out on a lightly-floured surface to ½ cm thick. Place these in your muffin/bun tray and then fill each pastry shell with about 1 level tablespoon of mincemeat, then add a small teaspoon of the Philadelphia cheese. Finally top with smaller pastry circles, pinching pastry together to seal the edges. Brush the top of each pie with egg. I also use a small sprinkle of Demerara sugar which gives additional flavour. Bake pies in preheated oven until tops are golden brown, 15 to 20 minutes. Cool slightly on wire racks. Dust with icing sugar just before serving.

Youngsters ‘awe-inspiring’ in Rickshaw Challenge Steve Moir and 26 other riders supported the BBC Children in Need Rickshaw Challenge, on its way through Cornwall & Devon recently. “It was awe-inspiring to see the courage and determination of these youngsters, all of whom have illnesses or have suffered life-changing events, tackle the challenging hills through driving wind and rain”, said Steve.

TO CHILDREN’S HOSPICE SOUTHWEST

Next year we will be fundraising for Children’s’ Hospice South West, with a £100 donation for every new property that comes on with us. Also, our director and former Royal Marine, Steve Moir, is cycling to the Somme for the 100th Anniversary commemorations. As a local business we continue to support Saltash Foodbank and local groups like Saltash Rugby Club.

All of the children have been helped by organisations supported by Children in Need. Steve said that “the public support was amazing: Callington Cycles provided a ‘guard of honour’ on the A38 and the streets were lined with people making generous donations and cheering the riders on their way”.
