CHICKEN TACO MEATLOAF 1 pound ground chicken ½ pound ground pork 1 cup diced raw bacon (divided) 1 ½ cup Herb flavor croutons ½ cup milk 1-15-ounce jar Salsa (divided) ½ packet Taco Seasoning (or Cumin) 1 cup diced onion 1 jalapeno (seeded) diced 3 cloves garlic 1 t. butter 2 eggs 1 cup Pepper jack cheese S&P 1 T. brown Sugar Preheat oven 350 degrees. In large mixing bowl, place croutons; pour milk and ½ jar salsa over to soften. Set aside 15 minutes stirring occasionally. Place onion, garlic and jalapeno in pan or microwave with 1 pat butter. Cook until softened and translucent. With softened croutons, place meats, ½ cup bacon, onion mixture, salsa (reserve 2 T.), eggs, seasonings, and cheese.

Stir until just combined, place in loaf pan. Spread 2 T. salsa and brown sugar on top. Spread over mixture. Sprinkle remaining bacon over top. Bake 1 hour. Rest for 10 minutes.
