BAHAMIAN GUAVA DUFF Dough 4 cups flour 1 cup sugar (optional) 3 t. Baking Powder 1 t. salt ¾ Crisco Shortening ¾ cup milk 1 egg beaten • Combine dry ingredients, cut in shortening. Gradually add milk and beaten egg until dough can be handled. Roll out dough on floured surface. (Note: can divide dough)

Filling • 2-3 cups fresh pureed guavas (divided) or thinly sliced guava paste or Guava preserves • Spread over dough and roll (jellyroll). Wrap guava dough roll in heavy duty aluminum foil several times tightly. Pinch ends to make waterproof. Place foil wrapped dough in double boiler (or make own steamer). Steam the guava dough gently for one hour. • Remove dough, pat dry, unwrap. Slice and serve with Sauce.
Sauce 1 cup pureed guavas 2 sticks butter 2 Tbsp. Vanilla 1/4 cup sugar (or 1/4 cup Brandy) 1-14 oz. sweetened condensed milk • Combine sauce ingredients in saucepan and gently simmer until combined.
