ONION CASSEROLE Ingredients: 2 Large Vidalia onions 2 Large Red Onions

(Cut in half-thinly slice onions and separate)

2 bunches Green onions, cleaned, sliced

Black Pepper (to taste) 10 oz. bleu cheese, crumbled 10 oz. grated havarti cheese 3 T. butter cut into small pieces ½ - ¾ cup dry white wine

• Preheat oven to 350 degrees. • In a greased 9 x 13 inch baking dish, layer half of sweet onions, red onion and green onions. Sprinkle black pepper. Top with bleu cheese. • Layer remaining onions and sprinkle with black pepper. Top with Havarti cheese. • Place butter evenly over cheese. • Pour wine over casserole. • Bake 1 hour or until onions are tender. If cheese browns too quickly, cover with aluminum foil. Serve hot. Note: Casserole may be assembled 1 day in advance and refrigerated. If refrigerated, increase baking time to 1 hour 15 minutes.
