Southern Winter Dinner Beef Tenderloin 1 (4 to 6 pound) filet of beef 2 Tablespoons butter (softened) 1 Tablespoon salt 1 Tablespoon coarsely ground pepper 1 teaspoon garlic powder
Night before cooking, rub butter on beef. Tie tenderloin up if necessary. Apply seasonings, wrap with plastic wrap and refrigerate.

Day of: Preheat oven to 500 degrees. Remove beef tenderloin from refrigerator and bring to room temperature. Place on foil lined sheet pan. Place in oven. Roast 22-23 minutes for rare, 25-26 minutes for medium. Set timer to cook precisely. Remove from oven and cover entire pan tightly with aluminum foil for 20 minutes.
