Our Cover Written by Dawn M. Gowery January starts a brand new year, so why ice as a cover photo? Even though it is cold outside we still need to drink lots of water. Water is crucial to your health. It makes up, on average, 60 percent of your body weight. Every system in your body depends on water. Your lungs expel between two and four cups of water each day through normal breathing – even more on a cold day. If your feet sweat, there goes another cup of water. If you make half a dozen trips to the bathroom during the day, that’s six cups of water. If you perspire, you expel about two cups of water (which doesn’t include exercise-induced perspiration). A person would have to lose 10 percent of her body weight in fl uids to be considered dehydrated, but as little as two percent can affect athletic performance, cause tiredness and dull critical thinking abilities. Adequate water consumption can help lessen the chance of kidney stones, keep joints lubricated, prevent and lessen the severity of colds and fl u and help prevent constipation.

D

r. Rhonda Henry is a unique practitioner in the alternative medicine arena. She can be described as being set apart from the rest thanks to her compassion and authentic understanding of a person suffering from illness. Her empathy is due to experience, as she was once obese, unhealthy and struggling with diabetes. That was until 26 years ago, when she decided to draw from her strong-will and curiosity to educate her self about nutrition’s link to health and permanently change her life. Dr. Rhonda Henry, Doctor of Nutritional Science, calls herself a “health detective” or “nosy”, she laughs. Dr. Henry is open about her previous struggles with obesity. At the age of 35, her heaviest, she was 311 pounds. Common to many people’s struggles, she tried every weight loss diet, pill and gimmick in the book with no success, hence she adopted the term “DIE-t”. The one time she did lose a large amount of weight, she also lost her energy, hair and complexion. She recognized the need to use a different approach. Dr. Henry began to research nutrition and the role it plays in health and the puzzle pieces began fitting together. She lost a great deal of her weight, regained her health and gained control of her diabetes. In 1980, at a size 10, Dr. Henry graduated with her Doctorate in Nutritional Science and began a crusade to help educate and treat others who shared her health history. But it wasn’t easy… “When you get into this business, you buck a lot of traffic.” Dr. Henry said. And not everyone was looking for help, or not looking for it in the right places. According to Dr. Henry, the search for information on health and the resources available are for the most part well-intentioned, but ineffective. At her office in

Carson City, Dr. Henry is focused on “listening to a person’s symptoms” to decide the root cause of their ailment. Dr. Henry deciphers an individual’s metabolic nutritional needs, which requires extensive, but effective testing. Her goal is to correct a “nutrient-deficient body to a nutrientsufficient one, so that it can heal itself.” Dr. Rhonda Henry believes that approaching the obesity epidemic and health afflictions in the United States should be done proactively, starting with educating children. She is a weekly contributor to Carson City’s newspaper, The Nevada Appeal. Her column is geared to parents and gives practical ideas and tools to teach proper nutrition to children before they reach adulthood. “There is a misconception that eating healthy is expensive and time consuming,” Dr. Henry said, “And people look at food as their enemy.” Dr. Henry not only works with nutrition as a key player in health, but also emphasizes the importance of our emotions and controlling the stress in our daily lives. Depression is a common trait among her unhealthy patients and is a direct result of a body being out-of-balance. Dr. Henry capitalizes on nutrition as not only a factor in physical health, but mental health as well. “There is no such thing as a one-sizefits-all to get results,” Dr. Henry said, “When your body is well it works for you, not against you. You have to invest in your self to get the return.” Besides using individualized metabolic testing as a diagnosis and health planning tool, Dr. Henry gained an interest in Eastern medicine and now includes this older version of medicine in her practice. She also uses a MEAS machine, which tests the meridian points of individuals

in order to receive feedback from the major organs and gauge the stress level and nutrient deficiencies of a person. “It is quite exciting to see how Eastern and Western medicine gels.” Dr. Henry said. Dr. Henry emphasizes that if you are unhealthy, you need to become focused on healing. Only with hard work and strength of commitment can an overall life change occur. A Clean Body for 2007 H

ere we are, another new year. A new beginning filled with hope, promise and anxiety over what the coming year will bring. Most of us help along all of these feelings by following the custom of some sort of “New Years Resolution.” We swear off coffee, sweets, alcohol and cigarettes. We promise that we will become healthier and start working out and eating right. But, most often, sooner than later we find ourselves embroiled in our same old habits…right back where we started. I believe that there are more ways than the typical “will-power” methods to come closer to our goals of a healthier body and lifestyle. First of all, let’s admit and realize that for 99% of the people whom embark upon the quest for “perfect” health are not so perfect after all. We just continuously and methodically figure out more, better and dif-

ferent ways to upgrade our “plan.” Second, we don’t give up. You better believe that most of us continue to indulge here and there (even daily) in something that pleases us, but we do not throw in the towel. Third, we continue to enjoy life and forgive ourselves for those indulgences, realizing that we are human and that pleasure is part of that human nature. Lastly, we are constantly on the lookout for saner, simpler ways of living while taking care of ourselves. Recently, I rediscovered one of those ways of living and it has helped me once again re-define the way that I treat my body. Detoxification of the body can really give a person a quantum leap forward towards great health. In effect, all of the cells of the body are like a little universe or body of its own. Each cell takes in nutrition and toxins and then must work, exercise (or not) and eliminate. If you are exposing your body and all of your cells and organs to toxins (i.e. Holiday excess) then the body can easily become overloaded and sick. Of course there are many avenues and loads of information out there to assist you in cleansing your body in a safe and sane manner. Chiropractic care helps detoxify the body. Mineral wraps and far infrared saunas are wonderful cleansers. Fasting and cleansings for each organ in the body, including the skin are available. Just by switching from processed foods to whole, lively organic food can make a huge difference in the quality of your health. Be sure and do your research and get support from someone who is at least somewhat knowledgeable about the power of detoxifying the body. Cleansing of the body is a very powerful tool that must be used properly and wisely. I haven’t seen any ideas recently for saving money on energy bills, especially in cold weather, and thought you might have some easy tips for us to consider. Got some to share? A: I started writing this column in 1986 and have been doing it weekly since then, and I used to have a lot more time (and space) for tips like you like. • Finally, keep in mind that energy experts recommend a maximum thermostat setting of 68 degrees in winter. Every degree above that can add from 3 to 10 percent to your heating costs.

One is that it will keep in humidity that really needs to be vented out of the house or you’ll start having problems like sweating windows and more serious problems caused by too much indoor humidity. Second, cooking a hamburger or an egg on a skillet can create a whole bunch of toxic chemistry like aldehydes and benzines which really need to be removed from the interior air. So from the standpoint of causing excessive indoor humidity and indoor air problems, the little heat you might be gaining isn’t really worth it. By the way, I’ve have heard from a number of people over the years who don’t want to use their kitchen range hoods or bathroom vents because they’re so noisy. You might want to check out some of the newer vents on the market these days – they’ve come a long way in noise reduction features. Older kitchen vents can be especially noisy so if this is stopping you from getting those kitchen odors outdoors, consider having a new vent fan installed. Debunking Seafood Myths

W

ith all of the recent news about seafood, it’s easy to get confused about what you can eat and what might pose a risk. Between the warnings about mercury levels and debates about farmed versus wild-caught seafood, it’s enough to make you throw up your hands and avoid seafood altogether. But seafood can and should be a part of a healthy diet. Seafood, especially fish like salmon and tuna, provides essential omega-3 fatty acids, high quality protein, and vitamins and minerals, and is also low in fat, calories, cholesterol and sodium. Fish has been shown to reduce the risk of heart disease, depression, diabetes and other conditions and is a delicious choice for those trying to lose weight. So, what is the right seafood choice? While no seafood has to be cut out of a diet altogether, some should be eaten in limited quantities or not eaten at all by certain populations. Tuna is one of those fish. Tuna is a terrific source of omega-3 fatty acids, selenium, niacin and vitamin B12, but certain species of very large tuna contain high levels of methyl mercury. Higher exposures of the environmental contaminant have been linked to an increased risk of brain and nervous system abnormalities in developing fetuses. The Food and Drug Administration advises pregnant women, women who could become pregnant, nursing mothers and small children to limit their consumption of tuna as well as shark, swordfish, king mackerel and tilefish. There is no reason, however, why tuna can’t be enjoyed by other people in moderate quantities. Tuna is delicious as sushi, on sandwiches, in salads or just grilled with vegetables. Salmon is another fish of mystery. The confusion often lies in whether to choose farm-raised or wild salmon. For more nutritional punch and less environmental contaminants, choose wild salmon. Wild salmon has greater

omega-3 fatty acid content and is lower in saturated fat because of its high muscle content. It is also lower in PCBs (polychlorinated biphenyls), a mixture of individual chemicals that are no longer produced in the United States but still found in the environment. Farm-raised salmon, on the other hand, has higher levels of PCBs and saturated fat but has fewer omega-3s. So, enjoy salmon as a great protein source but buy wild salmon when you can. The fresh salmon season runs from May to October, and the many species (Chinook or king salmon, coho, sockeye and pink salmon) are a wonderful addition to any diet.

(4) 6 oz. salmon fillets, skin on 1/2 cup warm water 1 Tbsp. Honey 1/2 cup soy sauce or tamari 2 cloves garlic, minced 3 Tbsp. fresh ginger, grated 1/4 tsp. red pepper flakes 1 Tbsp. Wild Oats Organic Olive Oil 1 bunch scallions or green onions, finely diced Rinse salmon fillets and set aside. In a small bowl, add the warm water and honey and mix until the honey dissolves. Add the soy sauce, garlic, ginger and red pepper flakes. Mix well. Pour marinade and place salmon fillets in a large, resealable plastic bag. Refrigerate for about 10 minutes. Heat a large sauté or grill pan over medium high heat. When the pan is hot, add the olive oil and place the salmon in the pan skin side up. Sear for about three minutes. Turn the salmon and cook for another three minutes. Remove from pan, garnish with scallions and serve immediately.

SUPPLEMENTS 101 A Supplement that Provides a Continuous Flow of Energy!

D

id the title grab your attention? Energy, or lack of it, is the main concern of many people in today’s “high stress, high energy” society. If you can believe the headlines or advertisements on TV and in magazines, everybody is looking for the “energy quick fix”. This obsession with energy is one of the reasons why “energy drinks” are becoming so popular. Unfortunately, however, there really isn’t any single supplemental “silver bullet” solution for a person’s lack of energy

What are energy drinks?

Energy drinks are beverages like Red Bull, Monster Energy, Go Girl, Venom, Adrenaline Rush, 180, which contain large doses of caffeine and other legal stimulants like ephedrine. Energy drinks may contain as much as 280 mg of caffeine (the equivalent of 3.5 cups of coffee). Compare this to the 37 mg. of caffeine in a Mountain Dew, or the 23 mg. in a Coca-Cola Classic. Many energy drinks can also contain several teaspoons of sugar or one of its derivatives. Most “energy drinks” are marketed to people in their 20’s and 30’s. In fact, in one year alone there has been a 70% increase in sales of energy drinks to these

age groups. Unfortunately, the “mature” age groups are not immune to the lure of quick energy fixes and are now joining the energy drink crowd.

Are there short-term dangers to drinking energy drinks?

Individual responses to caffeine vary, and these drinks should be treated carefully because of how powerful they are. Energy drinks’ stimulating properties can boost the heart rate and blood pressure (sometimes to the point of palpitations), dehydrate the body (they should not be used while exercising), and, like other stimulants, can inhibit sleep. The energy “high” a person achieves from these drinks is false energy. It works this way. Let’s say you are at 70% of your energy. The energy produced by these drinks may boost your energy level to 110%. However, within a short period of time you will actually “crash” below your 70% starting level, and be left more tired, lethargic and energy drained than when you started. In addition, this “burst” of energy has placed your pituitary, thyroid,

adrenal glands, liver and kidneys under major stress. What happens when energy drinks are combined with alcohol? Energy drinks are also used as mixers with alcohol. This combination carries a number of dangers: • Since energy drinks are stimulants and alcohol is a depressant, the combination of effects may be dangerous. The stimulant effects may actually prevent you from realizing how much alcohol you have consumed and mask how intoxicated you’ve become. • The stimulant effect can give the person the impression they aren’t impaired. No matter how alert you feel, your blood alcohol concentration (BAC) is the same as it would be without the energy drink. • Both energy drinks and alcohol are very dehydrating (the caffeine in energy drinks is a diuretic). Dehydration leads to acidosis and is a major contributor to disease conditions.

How can you obtain energy naturally? There are several lifestyle changes that a person can do that will greatly help the body attain and sustain energy. • Stop smoking and limit your amount of alcohol. • Eliminate or greatly reduce your intake of white processed sugar (use “Raw Sugar” or substitutes such as agave, stevia, or xylitol). • Do not use or eat anything that contains the artificial sweetener aspartame (Splenda is included in this list).


• Eliminate processed white flour products (for chronic fatigue conditions, “if it is white, don’t eat it!”). • Eliminate all carbonated soft drinks (there is no nutritive value in any soft drink, and the ingredients in soft drinks are 100% detrimental to the health of the body). However, to really get a long term continuous flow of sustained energy you have to do it the old fashioned way. You have to earn it through good nutrition. Eat organic whole, unprocessed foods and drinks. Take supplements that will work with the whole foods to release the natural energy contained within them. robably anyone who has spent any significant amount of time in front of a computer monitor has experienced some degree of eye fatigue and/or strain. Common symptoms of a condition known as Computer Vision Syndrome (CVS) include headaches, slow re-focusing, blurred vision, double vision, neck and/or backache and dry, irritated eyes.

Computer Vision Syndrome

Common symptoms of CVS HEADACHES Headaches can be one of the most perplexing and difficult symptoms to diagnose and pinpoint the cause of. However, headaches that are related to vision or eye strain often share one or more of the following characteristics:

• Do not appear upon awakening

• Occur in a much different pattern, or not at all, on weekends

• Occur most often toward the middle or end of the day

• Occur on one side of the head more than the other

SOLUTION: If the headaches appear to be eye-related, a complete eye examination is a priority. If they do not seem to be related to vision, consider getting a general physical from your family physician or internist. DRY AND IRRITATED EYES Numerous studies have shown that a person working on a computer monitor tends to blink much less often than normal. This can lead to dry, irritated eyes and even blurry vision, since

the front part of the eye, called the cornea, must remain moist to give sharp visual focus. SOLUTION: Try to blink more often. Although this may sound obvious, it takes a concerted effort when you are actually on the computer. Also, use a good quality artificial tear drop to assist with lubricating the eyes, such as Thera-Tears, or Viva-A drops. BLURRED VISION AND SLOW REFOCUSING Blurred vision can be the result of a number of factors, including a dirty monitor screen, improper lighting, a poor viewing angle or the need for prescription eye wear. Often when you force your eyes to focus up close for long periods of time the involuntary muscle within the eye which controls focusing can become “adapted” to that range of vision. This means that instead of instantaneously relaxing when you look at distance (which is what should happen) this muscle is still flexed to some degree for up close vision. SOLUTION: Make sure that your monitor is a good quality unit (we recommend flat panels of at least 15 -17” viewable area) and that your viewing angle is optimal. Check to be sure that you are not getting too much ambient glare from overhead lighting on your screen. Again, a thorough vision exam is a priority to rule out any inherent focusing problems like nearsightedness (myopia), farsightedness (hyperopia) and/or astigmatism. If glasses are indicated, anti-reflective treatment is a recommended option, as this helps to greatly reduce or eliminate glare from lighting. If the problem appears to be one of slow refocusing, take breaks often and look up from your work at distant objects. Often a low-powered pair of prescription glasses to help magnify can be a tremendous help, as this helps to relieve the need for the involuntary muscle within the eye to continually flex to achieve clear focus at near. NECK OR BACKACHE It is very common to try to contort our bodies to enable our visual system to achieve its optimal positioning. This is because our visual system is so dominant that we will often assume very awkward positioning to compensate for any real or perceived visual deficiency or problem we may have.

SOLUTION: Again, get a thorough eye exam to alleviate or rule out any inherent visual defect. Check your posture and be sure that your monitor, keyboard, mouse and lighting are all working in a coordinated manner to give you optimal visual comfort at a natural body posture. DOUBLE VISION When we refer to the coordinated use of the two eyes together, we often call this binocular vision. When the coordination system breaks down, as it can when staring at a computer monitor for extended periods of time, you may experience brief or intermittent double vision. This can often go hand-in-hand with a slow refocusing problem. SOLUTION: Double vision can be a sign of a severe problem, so always consult your eye care professional to determine the cause. The Key to Long Term Weight Loss Success

I

t’s that time of year again, when so many of us make a New Year’s Resolution to go on a diet, get in shape and shed those extra pounds……and THIS time we plan to make that resolution stick. But WILLPOWER alone has never proven to be a good long-term motivator. Despite all good intentions to take control of our weight, far too many people fail at their weight loss resolutions. Why is this such a challenge for so many people? Because they resolve to lose weight using the POWER of their conscious, analytical mind, called WILL. Willpower works quite well in the short run; but resolutions often get sabotaged by a stronger part of the mind, known as the Subconscious. Why, you wonder, is the Subconscious more powerful than the Conscious? The Subconscious is the vast store-house of our memory, experience, beliefs, emotions and habits developed over a lifetime, and as a result, it is the driving force behind our behavior. In hypnosis, we tap into the resources of the subconscious to help redirect old, inappropriate habits and emotions that caused the excess weight. That is the secret to why hypnosis works so well long term and why willpower does not.

Numerous studies on hypnosis and weight loss reinforce this concept. In a 9-week study, 109 people completed a weight loss program; with half the subjects receiving hypnosis in addition. While both groups lost a significant amount of weight over the 9 weeks, the group receiving hypnosis continued to lose significant weight both at 8 month and 2 year follow-ups, while the other group showed little change. (Journal of Consulting and Clinical Psychology, 1985). In a study of 60 females who were at least 20 % overweight, the group using hypnosis lost an average of 17 lbs, while the non-hypnosis control group lost only .5 pounds (Journal of Consulting and Clinical Psychology, 1986). In 1996, a meta-analysis of 18 weight loss studies comparing the results of adding hypnosis to various weight loss interventions, showed that subjects whose weight loss treatment was supplemented with hypnosis lost more weight than 90 % of subjects who did not receive hypnosis. More importantly, it was determined that those receiving hypnosis had maintained their weight loss over an extended period. (Journal of Consulting and Clinical Psychology, 1996.) Another meta-reanalysis looking at “hypnotic enhancement of cognitive-behavioral weight loss treatments”, indicated that hypnosis increases the effectiveness of weight loss interventions substantially over time. . xercise is essential for any program of stress relief. The reason the adrenals spit out more hormones when you are under pressure is so you may be physically ready to fi ght or run. Every once in a while I read where somebody under stress performs some incredible feat of strength, lifting a car to save someone, for example. If that person had not taken action when his body told him to, he would have suffered. Stress requires a physical outlet to “work off” the excess hormones so that they don’t turn inward and damage the body. Another issue with exercise is the fact that it takes effort. This positive action can make all the difference. Take menopause for instance. knows how many symptoms attributed to “the change of life,” are in actuality adrenal stress responses? I’ve found that women with strong adrenals have no problem with menopause. I believe that women who do well respond to menopause with action. That may not be their direct intention, but they end up coping with the stressor by making positive changes. For example, those who step up their exercise regimen don’t even show the biological changes, such as the adverse shifts in lipids implicated in coronary disease, that others do. Let me end this series on stress by acknowledging what we all know: Stress is a part of life. It is how you deal with it that makes the difference to your health status. I have a seminar called, “Stress vs. Dis-stress.” It is taught that stress is a motivator. You may be chairperson of an event and be “all stressed out” because you want the event to go well. This is not harmful. This type of stress is motivating you to do your best because you have a goal to achieve. On the other hand, if you are going through a divorce, this is “dis-stress” - it is painful. You are dealing with lawyers, there may be children involved and you may still have to see this person who hurt you on an ongoing basis because of the kids. This dis-stress, left unaddressed, will develop into illness and disease. In conclusion, regardless of your routine, it is vital in these days of poorly nourishing foods, lack of exercise, not getting suffi cient rest and dealing with stressors that pop up, you now may have another reason to think seriously about fi nding out whether you are nutrient defi cient, start eating according to what your body now requires, setting-up a moderate exercise program and make a date with your best friend to engage in some fun. What a concept! Who, with their busy lives, schedules fun? Yes - I do! You are the most important person you know. Start treating yourself right! That’s planning for “Tomorrow’s Good Health - TODAY!

W

e all know what it feels like to be doing well and experiencing good health. As we age it seems that it becomes more challenging to stay in this place or experience this place for extended periods of time. Because of our fast speed of life we tend to take care of the “squeaky wheels” in our life. The symptoms of “disconnect” begin to become manifest and result in that sense of feeling off, low energy, constantly anxious, and a slew of other problems reflective of a health-in-crisis state. Let’s talk about the chemistry of stress for a moment. Your body chemistry changes fundamentally every time you react

stressfully. Stress often times starts in the mind and travels directly to the adrenals to initiate the fight or flight response. Heart starts pounding, breathing changes, glucose is released into the blood, the muscles tense, the eyes dilate, and the blood thickens. The average adrenaline rush of a commuter stuck in traffic releases enough glucose into the blood to keep her running for one mile. And where does all of this extra energy and increased alertness come from? The answer is from a diversion of energy from the body’s normal repair and maintenance jobs such as digesting, cleansing, and rejuvenating. So every moment you spend in a stressed out state speeds up the aging process in your body. It’s stressful just thinking about it. And unfortunately what ends up happening is the body goes out of balance and symptoms of fatigue and aging begin to show up in larger and more troublesome ways. Symptoms are the bodies attempt to communicate that something isn’t right. The more we refuse to listen or acknowledge the needs of our bodies the larger volume of our symptoms turn up. Symptoms are a blessing in disguise and offer the pathway necessary to better care for ourselves. Most people would rather ignore the symptoms than listen to what their body is trying to express. So many of us are addicted to stress and have forgotten how to relax and be fulfilled at the same time. Mindfulness techniques like meditation can be instrumental in breaking this cycle of stress addiction. Every choice made to build our health and vitality acts as an investment to our health reserve. Our health reserve is what allows us to stay healthy through stressful times and reflects how much we’ve invested into it via our attitudes and action steps. Establishing a health reserve can be thought of as creating a 401(k) for our well being and insuring a quality aging experience. As one ages it becomes more important to be able to adapt and recover from the demands of a stressful lifestyle. These faculties are naturally strained as we go through life but there’s no reason that they shouldn’t be in good working order. Change is an inevitable consequence of being alive. A Taoist once remarked that change is just gushing life. Sometimes the gush is welcoming like friendly rapids and other times its intense like spring run-off through a steep canyon. Life happens and things don’t always go our way. Part of the challenge is learning to live with grace so that when we encounter resistance we don’t add to it with our own attitudinal friction. There are several areas that work symbiotically to create a health reserve that has enough staying power to withstand the tough, stressful times of our lives. Exercise, nutrition, a positive mental attitude, spiritual practice, detoxification, and body work all work in concert to enhance your health reserve. As we embark upon another year in our life we can prioritize a commitment to our own health and well-being with the intention of increasing the quality of our own lives and those lives that are intimately connected to our own. ZD Winery

Organic by Choice

F

arming organic grapes, for the deLeuze family of ZD Wines, was not their original intention, but became their method by default. When aerospace engineer Norman deLeuze along with his former co-worker Gino Zepponi decided to venture into wine making in the Napa Valley, California in 1969, the distinction between organic and conventional farming was not a pertinent entrepreneurial decision. But because of Norman’s ingenuity, pragmatism and search for “zero-defects”, the eco-conscious principles were adopted. ZD Wines located in the rolling hillside of Silverado County in Napa Valley, also includes a 34-acre, organically-farmed, parcel in the Carneros District, home to the original old vines that were planted over a decade ago. When ZD Wines expanded in 1996 by purchasing the property, the land was already being organically farmed. Not only were the original natural farming procedures surprisingly cost-effective, but they saved the vineyard. Around 1985, Norman’s sons, Robert and Brett deLeuze, were onboard and Napa vineyards were unsuccessfully battling a phylloxera-b infestation. Phylloxera bugs will ravage a grapevine and can devastate entire vineyards. But ZD’s vineyards survived, if not for an apparent “natural immunity” due to its authentic environment described by Brett deLeuze. The 34-acre parcel still bears fruit from its original vines, a rarity in a valley where countless vineyards were forced to replant. “Organic growing is the significant reason, if not the reason why our

vineyard survived,” production manager, Robert deLeuze said “Conventional farming is one of the reasons phylloxera spread throughout the rest of the valley.” Organic farming at ZD Wines not only includes discontinuing use of herbicides and pesticides, but also allowing the natural eco-system of the vineyard to flourish. Bright green crop cover pads the rows with vetch, oat and legume sprouts, providing a protective barrier for the soil, keeping it moist and rich with organisms. In one gram of soil, millions of live organisms can be found, many of which are unnamed. By allowing the vineyard to take a natural course, only using organic pest control and using compost as fertilizer, ZD’s vineyards are strong contenders to stave-off disease and bear fruit year-after-year, compared to Napa’s conventional counterparts. “It’s an interesting thing you find,” Robert said “you don’t need pesticides or herbicides when farming organically.” In fact, Norman deLeuze, the founder and father, realized this when he first was experimenting with his new vineyard and had an infestation of leafhopper bugs that were so dense on the vines and in the air, that you couldn’t take a deep breath without inhaling a few. Norman, out of inexperience at the

time, had the vineyard sprayed. The bugs left, but he couldn’t go into the vineyard for three days and it smelled terrible. And the bugs returned only a month after. Norman figured, “I’m not doing that again”, and searched out natural measures of pest control and found that by farming the vineyard organically, along with nature’s hand, the infestation declined on its own. Rafael Llamas, ZD Wines’ vineyard maker was sold too. The soil, organically grown is humus and loose compared to conventional farms. According to Rafael, previously plugging soil down the rows was difficult and timeconsuming, now it “feels like butter.” ZD Wines has been certified organic through the California Certified Organic Farmers Association (CCOF) since 1999, even though they have experience in organic farming since the beginning in 1978. ZD is also a certified organic handler, a more uncommon certification (one out of only two in the Napa Valley) that requires that a vineyard not use one contaminated component in the winemaking process. ZD’s wines are certified as, “wine made from certified organic grapes”, but they are not completely “certified organic wines” due to using a minor amount of sulfites. Sulfites act as antioxidants to protect the wines from oxidation. At this time there is no known substitute for sulfites that has the same protective benefit. ZD uses the lowest amount allowed within their organic certification, 100 parts per million, and still receives the benefits. continued on page 37

COOKINGforHEALTH Simple Steps for Healthy Eating

T

he start of the New Year is a time for reflection and renewal. When it comes to reflecting about the foods that we eat, it is very emotional. There is no doubt that most of us hope to eat healthier. In fact, nearly 90 percent of Americans believe that they could make healthier choices when it comes to eating. As the National Culinary Volunteer spokesperson for the American Heart Association, I have found that those with the most success have made small changes in their diet and cooking rather than dramatic ones. These are a few suggestions that are easy to follow, but that can make the road to healthier eating a little less bumpy. 1. Begin with seasonality – foods that are fresh and in season do not need as much fat. A fresh green salad is delicious tossed with a mixture of balsamic vinegar and water. 2. Don’t buy any vegetables or salad greens that are pre-washed, trimmed, and then chopped. They lose flavor if they are cleaned and chopped before you buy them. If they have no flavor, you will need to add things like butter and oil to make them taste good. 3. Finally, foods will taste better and be more satisfying if you sit down at the table and eat them. We cook and eat because it is food for the soul as well as for nourishment. Enjoy cooking foods as well as eating them. Take your time and enjoy the journey!

M U S TA R D - C R U S T E D C H I C K E N W I T H A TRIO OF PEPPERS AND COUSCOUS For me, light food begins with the grill. No matter how you cook it, the caramelized beautiful flavors that come off of the grill are naturally low in fat. While you are adding it, grill some extra chicken for a great salad tomorrow! Makes 2 servings. 1 whole small, skinless, boneless chicken breast (1/2 pound total), halved horizontally into 2 cutlets 1 tablespoon mustard seeds 1 tablespoon chopped fresh parsley leaves 3/4 cup plus 1 tablespoon water 1/4 teaspoon salt 1/2 cup couscous 2 teaspoons unsalted butter 1 tablespoon fresh lemon juice 1 green bell pepper, seeded, deveined, and very thinly sliced 1 red bell pepper, seeded, deveined, and very thinly sliced 1 yellow bell pepper, seeded, deveined, thinly sliced 2 tablespoons extra-virgin olive oil 2 tablespoons balsamic vinegar Sea salt and freshly ground black pepper to taste Season the chicken on both sides with salt and pepper to taste. On a plate combine mustard seeds and parsley and press chicken into seed mixture, coating both sides. In a small saucepan bring 3/4 cup water and salt to a boil. Stir in couscous; remove from the heat and let stand, covered, 5 minutes. Serving Suggestion: Fluff the couscous with a fork and divide between 2 plates. Top couscous with chicken. To skillet add lemon juice and remaining tablespoon water and simmer, scraping up brown bits, 1 minute. Pour the sauce over chicken. In a medium bowl, add the peppers. Toss with the olive oil and balsamic vinegar. Season with salt and pepper. Serve alongside.

Chicory

A

lthough more commonly used in Europe, chicory, also known as succory, used in cuisine and as a health promoter can be dated back to the Egyptians, as chicory flourished on the enriched banks of the Nile River. The faintest blue petals make up the pretty blooms and the leaves of some chicory plants, known as Belgian endive, are popular in salads. A member of the sunflower/ daisy family, chicory (Cichorium intybus) is native to the Mediterranean regions and was hailed for its healing properties by the ancient Greeks. Its use spread throughout Western Europe and immigrants later brought it with them to the United States. Wild Chicory can grow to be three to five feet tall and can be found growing at will in North American fields. Especially popular in France, ground chicory root is added to mellow and extend a full-bodied coffee. Chicory is similar in taste to coffee, but contains

no caffeine and greatly reduces the acid content, making it ideal for people whose stomachs can not tolerate a strong brew. Chicory root contains inulin, a sweet oligosaccharide, which is used as a successful sugar-substitute for diabetics and increases calcium absorption, as well as promoting healthy bacteria in the digestive tract. Ground chicory root is known to help cleanse the liver and stimulate the urinary tract, as well as soothe the stomach and aid digestion.

It also contains a mild diuretic effect. Esculetin, a phenolic compound found in chicory root, can protect the liver against hepatic damage and is believed to be beneficial in the treatment of jaundice, though this has not been scientifically proven. A particular endive variety of chicory root placed in a dark environment can produce delicate edible leaves that can be slightly bitter in taste, especially as they mature, but impart a lovely flavor to salads or stews. The younger leaves are popular in salads alone or mixed with lettuce, whereas the older are better for steaming and seasoning with herbs, or adding to soups. Even though the actual root of the plant contains the majority of the health benefits, endive leaves are a fantastic nutritive addition to one’s diet, as they are low in calories and high in fiber and nutrients, such as carotenes, vitamin A and C. Why Cholesterol Levels Might Not Be Your Best Indicator of Future Health Problems

E

very day you see commercials suggesting that if only you can lower your cholesterol you’ll be in better health. These commercials are usually for one cholesterol lowering drug or another. What you may not know is that recent research points to a much more reliable indicator of potential cardiovascular problems. In addition, this new information shows promise of identifying other chronic illnesses as well, including some types of cancer, arthritis, Alzheimer’s disease, dysmetabolic syndrome X and type II diabetes. What is this health indicator? It goes by the name of C-Reactive Protein, or CRP for short. Discovered in 1930, blood levels of CRP indicate the degree of infl ammation in the body. This includes acute bacterial infections as well as chronic, longer-term infl ammation. More recent studies show that chronic infl ammation is a major contributing factor for the formation of plaque on the inside of blood vessels. This makes identifying elevated CRP levels a crucial way to assess potential risk for heart disease. This is particularly important because half of all people who experience heart attacks don’t have elevated cholesterol. This isn’t to say that elevated cholesterol is not a factor in heart health, however it may only be important in the presence of infl ammation. Ideally, you will know your levels of both CRP and cholesterol to assess your cardiovascular risk. The specifi c test to measure cardiac risk is called hs-CRP (high sensitivity CRP). You will probably have to specifi cally request that your doctor include this test at your next physical. While you’re at it, also be sure to check your blood homocysteine levels, another marker for potential heart problems. It’s important to know that CRP levels increase with obesity, smoking, inactivity and lack of sleep. So the advice to lose weight, quit smoking, exercise and get plenty of sleep still applies for reducing risks of cardiovascular problems. You may also be able to reduce your CRP levels by taking supplements such as vitamin E, borage oil, fi sh oil (Omega-3), DHEA, vitamin K and nettle leaf extract. Diets low in arachidonic acid, omega-6 fatty acids, saturated fats, high-glycemic food and overcooked food can also suppress infl ammatory factors in the body. Is Growth Hormone the

FOUNTAIN OF YOUTH? Part One

THE ANTI-FAT HORMONE Growth hormone is made in the brain in large amounts when we are young. It is called growth hormone because of its stimulating effects on the growth plates of growing bones. Growth hormone has several other important effects. First of all it has a powerful action on fat metabolism called lypolysis. This means that it causes fat cells to release their fat content for energy production. Thyroid hormone also has this effect, and there is evidence that growth hormone assists thyroid hormone in this action. Without the action of lypolysis, your fat cells would just accumulate fat without your body being able to burn it. Sound familiar? Because of its importance in lypolysis, a deficiency of growth hormone may be a major factor in the development of obesity. This is a fact that is dramatically seen in the differences between growth hormone levels in obese and normal men. When adults with growth hormone deficiency have their sagging levels replaced, they lose an average of about 15% of their body fat mass. THE MUSCLE/BONE HORMONE Growth hormone also stimulates muscle and bone cells to grow and multiply. As our growth hormone levels decline, we end up losing significant amounts of muscle and bone mass. In medical terms this combined loss is referred to as a loss of lean body mass. The degree of loss can be dramatic.

WHAT ARE YOU BATHING WITH?

Functional muscle mass can be determined by a test called Bio-Energy Testing, which uses sophisticated oxygen and carbon dioxide measurements to analyze energy production. Using Bio-Energy Testing, I often see people who are only in their fifties who have functionally lost more than 30% of their muscle mass. When adults with growth hormone deficiency are properly treated, they gain back about 10% of their lean fat mass. WHAT TO EXPECT Remember that developing a deficiency of growth hormone as you increase in age is just as predictable as the deficiencies you are certain to develop in all of your other hormones. It’s not a question of “if”, it’s merely a question of “when”. Therefore, as you become deficient in growth hormone you will slowly but surely develop many of the common symptoms and clinical signs of growth hormone deficiency such as: decreased energy, mood disturbances, impotence, decreased quality of sleep, decreased ability to focus and concentrate, osteoporosis, muscle loss and weakness, obesity, decreased HDL cholesterol, increased LDL cholesterol, decreased metabolic rate, decreased anaerobic threshold, decreased fat metabolism, sagging muscles and congestive heart failure. ing for growth hormone deficiency is a little bit less than perfect. Perhaps the best overall test is a blood test for IGF-1, also known as somatomedin-c. Although IGF-1 levels are not actually a measurement of growth hormone itself, they can serve as an accurate although indirect indicator of growth hormone activity. This is because IGF1 is formed in the liver in response to the presence of growth hormone. Many physicians are like me and prefer to use IGF-1 as a test for growth hormone. It also makes sense because almost all of the benefits of growth hormone stem not from the hormone itself but from IGF-1. In adults, like growth hormone, the IGF-1 levels also significantly decrease with age. So much so that the values in the average seventy year old man are less than half of what they were when he was thirty-five. Happily enough however, when depleted growth hormone levels are replaced, studies show that it is quite possible to restore IGF-1 levels to those common of youth. Practically speaking, often the only true way to diagnose a deficiency of growth hormone in a person with an IGF-1 level less than 230 ng/ml who also has some of the signs and symptoms of growth hormone deficiency is to perform a clinical trial. A clinical trial means administering growth hormone for 6-9 months and observing what happens. A diagnosis of growth hormone deficiency is confirmed when growth hormone replacement therapy results in a significant increase in IGF-1 levels along with improvement in energy, strength, lean body mass, and bone density. In the second part of this series, I will be discussing how to treat growth hormone deficiency once you find out you have it. In particular, I will focus on natural ways to boost sagging levels. life creates the many discharges that put a continuous drain on your life’s battery. When the body is balanced and has the proper nutrients, the natural healing process is from the top down and from the inside out. However, it ages in the reverse order. In other words, the skin is the first to go, then the organs, and finally, the brain. The more work the body has to do internally, the faster the aging process proceeds. Let’s look at digestion for an example. Normally, you eat three meals each day. Over a lifetime you ask the body to digest approximately 24,000 pounds (12 tons) of food. It takes energy to digest those meals. I’m not talking about the energy you get from digesting those meals, I am talking about the energy you expend from your body’s store of energy just to digest those meals. When you eat good whole foods, the body expends very little of its enzyme energy to digest it. If you were to convert the digestive energy expended in processing and assimilating good foods into movement energy, you could use that energy to walk approximately seven miles. However, when you eat poor foods, processed foods, packaged foods, and things like white flour and white flour, the energy used to process and assimilate those foods would be the equivalent of walking up to 20 miles. My point is, many people expend unnecessary energy on digesting poor foods that could be used to keep your battery charged. Homeostasis means your body is balanced. It is a clean burning engine. The

nutrients going in match the waste going out, and everything is working properly. When a body is out of homeostatic balance, it is ripe for disease conditions. This creates another source of energy loss. All diseases conditions (such as chronic illness, diabetes, fibromyalgia, depression, and stress create) cause the body to expend energy trying to overcome these conditions and to bring the body back into balance. Another source of energy drain is the build up of toxins in the body. Toxins are absorbed into our bodies from many sources (processed foods, chemicals in the air, chemicals in lotions, smoking, sun radiation, electrical radiation, etc. The list goes on and on.) We are exposed to more free radicals and toxins in 15 minutes than our great-grandparents were their whole lives. When these toxins build up in the fat, especially the subcutaneous fat under the skin, and in the liver, our body must expend more of our vital stores of energy to literally keep these toxins from killing us. Can we prevent our “human battery” from just unnecessarily leaking away its charge? YES! There are easy ways to make sure you are providing your child with all the necessary nutrients on a daily basis. Inflamatory Breast Cancer

A

ccording to the National Cancer Institute, Infl ammatory breast cancer (IBC) is an uncommon type of breast cancer in which breast cancer cells block the lymph vessels in the skin of the breast, a type of breast cancer that may not be apparent through routine screening methods (e.g., feeling for lumps, mammograms): This blockage may cause the breast to become red, swollen, and warm. The skin of the breast may also appear pink, purple, or bruised, and it may have ridges or appear pitted, like the skin of an orange. These changes often occur quickly over a period of weeks. Another possible sign of this type of breast cancer is swollen lymph nodes under the arm, above the collarbone, or in both places. Often, a tumor cannot be felt, and may not be seen on a mammogram. The diagnosis of infl ammatory breast cancer is based on the results of the biopsy and the doctor’s clinical judgment. According to the Mayo Clinic, signs and symptoms of infl ammatory breast cancer include: • A tender, fi rm and enlarged breast • A warm feeling in the breast • Itching of the breast • Pain • Thickened areas of skin • Flattening, retraction or swelling of the nipple • Change in color of the skin around the nipple (areola) Infl ammatory breast cancer is of particular concern because it progresses rapidly. IBC was previously treated through surgery and was almost always fatal; nowadays, additional treatments such as chemotherapy and radiation therapy have greatly increased the chances of survival for IBC patients.
