njoying a summer dinner at any of the villas in the resort is always a pleasant experience.Sotograndinos are the very best hosts, and any evening they organise is always unforgettable.On this occasion, the surprise lay in the taste.A luxury dinner made from all natural products and paired with a MarquÊs de Riscal Organic 2016.An excellent Rueda Verdejo created by the winery using 100% organic viticulture methods since 2010. As he serves the drinks, the sommelier talks us through the process of creating this wine, with its greenish straw yellow colour, fresh and aromatic, and 100% Verdejo.Among the many details, he calls particular attention to its fermentation, created with the natural yeasts present in the grape-juice and only the natural mineral fining agent, bentonite, is used to achieve protein stabilisation in white wines. It was also fascinating to learn how weeds are controlled, through different soil-tilling methods which avoid the need to use soil-contaminating herbicides.The ultimate in organic architecture... After the presentation, it was time to taste the wine. On the nose it reveals its intense varietal character with the classic aniseed and fennel aromas of the verdejo grape.In the mouth it is a cool white, with good backbone and length, as well as a certain mineral character which clearly reflects the Rueda terroir.

As this is a top notch white, we imagine a traditional pairing of fresh fish and seafood.However, the hosts surprised the table with an original combination of fresh salads made with organic products.Mesclun lettuce and fruits of the forest; tomatoes with fresh cheese and coriander; Pad Thai with chicken, rice noodles, a touch of ginger and Asian spices...The perfect suggestions to pair with this Marques de Riscal white and liven up the festival of flavours on the palate.

IT WAS ALSO FASCINATING TO LEARN HOW WEEDS ARE CONTROLLED, THROUGH DIFFERENT SOIL-TILLING METHODS WHICH AVOID THE NEED TO USE SOILCONTAMINATING HERBICIDES. THE ULTIMATE IN ORGANIC ARCHITECTURE...

The evening truly became an extraordinary sensory experience, lasting late into the night with laughter, friends, good wine and the summer moonlight of Sotogrande. Who could ask for more? n
