WELCOME For 29 years Hampshire Fare has worked at the heart of Hampshire’s food, drink and craft community, connecting artisan producers with consumers, chefs and businesses. This annual guide is part of this role: a directory delivering page after page of the very best local produce, natural skincare and crafting to be found in destination shops, cafes, pubs, restaurants and markets. This year’s guide also features a special fold-out table of delicious Hampshire fare – a spread that was specially commissioned for Hampshire Fare’s launch of British Food Fortnight. As part of this fold-out, there’s a useful guide to eating with the seasons. There are also articles focusing on other aspects of Hampshire Fare’s work: education, environment and celebration. For example, Hampshire Fare works closely with schools and colleges to inform and inspire the next generation, as well as encouraging grown-ups to be more kitchen confident; discover more on page 36.
Hampshire Fare have always been ahead of the curve regarding environmental issues and this year have teamed up with Hampshire & Isle of Wight Wildlife Trust supporting a special project focusing on seafood and sustainability in the Solent – read all about it on page 60. This year Hampshire Fare celebrates 20 years of the Hampshire Food Festival – the only month-long, countywide food festival in the country. Turn to page 40 to find out more. REASONS TO BE LOCAL We are so lucky in Hampshire. A busy coastline, gin-clear chalk streams and a landscape of farmland, heathland, orchards and vineyards provides an abundance of delicious local produce. This makes eating and drinking local a very special way to discover the county. Other reasons include:
1. Environment
Shopping local is greener. Reduced food miles cut our carbon footprint. Buying from markets and through local box schemes can also reduce use of plastic. Finally, when you buy local you are supporting local farmers, helping to preserve our countryside.
2. Economy
Buying direct from farmers’ markets, farm shops and independent butchers, delis, fishmongers and greengrocers supports small businesses and local employment.
3. Wellbeing
Shopping local is also an opportunity to interact with specialist producers and retailers, who are able to tell you about provenance, as well as advise on preparing, cooking and serving produce. It is not only a chance to learn; it is thought that making such connections with your local community is good for mental and social wellbeing.
4. Flavour
Local simply tastes better. Food that’s in season and fresher, having travelled fewer miles, has more flavour. For those short on time, local box schemes can deliver Hampshire at its freshest to your doorstep. In addition, we are a county of award-winners with many businesses and products having won national and international awards, from sausages to spirits. One discovery leads to another. Taste awardwinning cheeses and charcuterie and you will want to pair them with local ales, ciders and wines. There is a world of local flavour in Hampshire. We have a dish that goes down well: New Forest Mushrooms with Confit Chicken Wings, Chicken Jus and Pine. We cook the different types of mushrooms in different ways: roasted, glazed, dried, crispy and pureed. We pick pine from the Forest, make oil from it and pick spruce to garnish the plate. We dehydrate kale from our kitchen garden to represent leaves and finish with a mushroom powder. There is something special about autumn for me. The colours, the cold starting to set in and the cosy log fires. It’s a time of year for comfort food. Root vegetables are the seasonal stand out. So, too, are mushrooms and preserved ingredients from summer crops which come into their own as pickles; for instance adding wild garlic caper berries to a pumpkin and blue cheese tortellini makes the dish sing a different tune. One of Hampshire Fare’s key roles is education: encouraging school children and students to discover local food. To this end Hampshire Fare has been organising producer days in primary schools across the county as well as working directly with colleges who are nurturing the chefs of tomorrow. Education does not stop at the school gate. The joy and satisfaction of learning new cookery skills is increasingly appealing to adults. A new generation of cookery schools has developed, providing fun yet practical experiences. Some courses are in-depth and full-day, others are ‘bite-size’, taking an hour or two during the day or the evening. Some schools are informal and intimate, others, notably at exclusive country house hotels, deliver a glamorous experience.
There are schools and courses to meet all abilities, expectations, tastes and pockets. These include: butchery, game and sausage-making, bread-making and patisserie, and essential basics from knife skills to stocks and sauces. Many deliver a fresh take on new food trends. There are courses for beginners, the curious and the already accomplished who want to surprise guests with professional platefuls. Hampshire Food Festival Hurrah for the Hampshire Food Festival which celebrates 20 years in 2020. The initial aim of the food festival was to promote the area’s small food and drink producers. However, the result has been a cultural phenomenon – the food festival as attraction and entertainment, making a significant contribution to the renaissance of interest in local food and drink. From the off Hampshire Food Festival had an ambition not seen anywhere else in the country. Tim Brock, Manager with Hampshire Fare for ten years from 2001, recalls: “The Hampshire Food Festival has always been big and ambitious. Other food festivals were up and running, but nothing was on the scale of Hampshire’s. A jampacked programme showcased pubs and restaurants as well as producers (which was not the usual approach then) and included a Food Court in Winchester’s Guildhall with chefs creating menus and dishes inspired by Hampshire produce.” Most festivals were based around a market format and held for one-day or a long weekend (and still are). But not Hampshire’s - it ran for a fortnight during the summer with events such as walks, talks, farm tours, tastings and demos. The Festival grew as other event organisers approached Hampshire Fare keen to be involved. The result was that in 2008 Hampshire Food Festival evolved into a month of activities during July. It was a fun way to connect the public with local produce, encouraging them to discover the local area and creating an enthusiasm for trying and buying.

Our farm tours and cheese suppers started as just one evening, but over time they’ve gathered momentum, building to five or six evenings. We have customers coming back year after year who love getting out and about on a nice summer evening, and we give any profits to local charities. Mikes Smales, Lyburn Farmhouse Cheeses Hampshire Food Festival has gone on to receive national recognition, regularly collecting Gold and Silver at the Beautiful South Awards, organised by Tourism South East, and being named South of England Winner in the Enterprise category of the Countryside Alliance Awards. Throughout the past 20 years, some of our greatest chefs, cooks and wine experts have been involved in the Festival. The impressive roll-call includes Raymond Blanc, Gino D’Campo, Rose Elliott, Sophie Grigson, Ainsley Harriott, Shaun Hill, Mark Hix, Prue Leith (long before she became known for Bake Off) and Gordon Ramsay.

Other new elements include visits to local artisan distilleries; there are even opportunities to learn how to make your own gin. There’s an event for everyone from pop-up dining to sausage and ale mini-festivals, not forgetting the Local Produce Market with demonstration kitchen at the New Forest Show.
The Hampshire Food Festival continues to provide what it set out to achieve 20 years ago: a great opportunity for independents to raise their profile and a unique way for everyone to enjoy and appreciate Hampshire’s heritage and culture.” Last word goes to His Royal Highness The Prince of Wales who wrote for the 2006 Hampshire Food Festival Programme: “Festivals such as this play a vital role in widening the knowledge of the consumer about what is available on their doorstep.
