Located in Misorano, a few minutes walk up from Echoland Rotary, Half Note Cafe is a warm and cosy log cabin restaurant offering a range of Italian inspired cooking, in addition to their speciality: wagyu shabu shabu. When most visitors think about the best Mexican food in Hakuba, they immediately think about the famous Happo restaurant Uncle Steven’s. This winter season Uncle Steven’s will be offering their grand menu for lunch from 11am to 5pm . The grand menu will have everybody’s favorite Tex-Mex delicacies including tacos, enchiladas, fajitas and buffalo chicken but at a special lunch prices, a lot cheaper when compared to dinner! If you’ve never tried yakiniku, you’re in for a treat. A Japanese term that refers to grilled meat, yakiniku cuisine involves cooking bite-sized pieces of meat on a grill or griddle heated by charcoal. The cooking style is what sets yakiniku aside from other sitdown restaurants is that you have to cook it yourself! You order the types of meat you would like as well as vegetables to go with it. Now, the good part: What types of meat? Beef is the most popular with other common meats chicken and pork. Yakiniku Matsuyama is a new restaurant in Hakuba Goryu. It is located right next door to the Rujin Onsen where you can have an onsen before or even after dinner! YAKINIKU MATSUYAMA Page 42

In the last few years, no other force has driven the celebrity chef phenomenon than TV. Getting on TV or competing on a reality show can give chefs the opportunity to become instant stars. And now in Hakuba we have our own celebrity chef, Sarasa Horie of Wamotenashi. Sarasa appeared on the hit entertainment television show ZIP. They filmed Sarasa, a qualified instructor of Japanese washoku cooking, giving one of her lessons to a group of foreign visitors to Hakuba. Sarasa, a former flight attendant with Virgin Atlantic, when based in London, started to develop a deep understanding of Japanese food ,she would often cook and teach for her flat mates in the UK. This carried on when she returned to Japan by further pursuing her hobby of cooking. After being taught by Sarasa the correct methods in preparation, her guests cook and present the cuisine, followed by devouring it. The most popular items to learn to make are sushi, tempura, gyoza and okomiyaki. Be warned; It is so delicious, that you might come back the next day too! WAMOTENASHI Page 30

Like a phoenix rising from the ashes, beloved former Beach Bar in Happo village is ready for its second act. The original Beach Bar moved to Wadano three years ago, leaving a void in the Happo area. Now, under the same ownership but with a new name, Sunset Bar will offer not only summery cocktails and cold beer, but favorite snacks such as pizza, fried or garlic shrimps and taco rice. Hakuba Brewing Company continue to brew themselves a storm! In June they launched their super-easy-drinking Session IPA, which went on to be a hit both in the village and in cities around Japan. They are brewing a wheat ale this winter (Hakuba White), made with Hakuba-grown wheat and lots of American hops. If you see it, get it as this batch used all of Hakuba’s remaining locally grown wheat and is therefore definitely a one-off! Many of the local bars and restaurants serve Hakuba Brewing Company drinks, please ask for them by name.

A new bar opening in Goryu and built in a type of concrete bunker is aptly named Concrete. In fact the bar’s exterior is shaped like an igloo – a real snow bar. Food is limited to ramen, though it is the drinks that they will specialize in. One of the unique twists will be cocktails made with sake definitely something to try while in Japan. CONCRETE Page 40

Looking for somewhere for the whole family to enjoy in the evening? Mr Miyagi’s at the White Horse Hotel in Echoland has recently added a climbing wall in their play room. A new restaurant/ bar opening this year is Hanabi which means fireworks in Japanese. Hanabi is located just behind Lion Café about 50meters off the main road. Besides having both food and drinks, Hanabi will have fireworks! Believed to be the first type of fireworks bar in Japan where you can watch quality homemade fireworks. What is an unforgettable dish that you have eaten? Escargots à la Bourguignon at the restaurant in Mouffetard Street when I visited Paris for the first time ever. I actually didn’t even know at that time how to eat escargots. Another one is smoked salmon and Poireau Tariata at a small restaurant in Corsica. It is the best pasta I have ever eaten in France. How about the off season? I work at a restaurant in the prestigious Rihga Royal Hotel in Kyoto in the mornings and give cooking/wine lessons in the afternoons. I am also a organizer/tour guide for gourmet tours to France. How many people can you cater for? I can cater for 12 guests for a set course dinner. If it is a party style ,then anywhere up to 50!

Nishikawa-san, tell us a little about yourself and the journey that you have been on? I went to Paris in 1979 and visited Lasserre, the very famous restaurant with my senior colleague who used to work at Nikko Hotel. I enjoyed the meal very much and felt as if there was a completely different world of food. I decided there and then to be a chef. Working as the Executive Chef at the Japanese Ambassador’s residence in Tunisia is one of my career highlights. You are born and raised in Kyoto. Does the Kyoto’s culture and tradition influence your cooking? Because of the influence of traditional Japanese cuisine

in Kyoto, I particularly like to serve French and Tea Kaiseki fusion dishes. Tea Kaiseki is a very specific type of Japanese kaiseki course that is served before a tea ceremony. I find that it is very interesting to see how the same ingredients are cooked differently in French cuisine and Japanese Tea Kaiseki. .

Do you use any local produce? Yes, I often use Nagano mushrooms, Nagano Fukumi chicken, Hakuba blueberry, venison from the local area, and apples from Omachi the town to the south of Hakuba.

What kind dishes do you serve for the Private Chef Service? I have a range of dishes that include Kyoto-style “temari” sushi, marinated salmon with pancakes, Nagano apple and chicory salad, avocado and tuna tartar, Nagano mushroom salad, saikyo-style baked yellowtail, bagna cauda, Provencestyle roasted lamb roasted duck with narazuke sauce and Japanese beef steak. Do you have any signature dishes? Yes, braised eel in red wine, apple and Foie Gras Croquette, braised beef cheek in red wine, rock oyster gratin and Lamb Broiled with salt. Do you cater for vegans? What is a memorable moment with your clients? While I was working in the Japanese Ambassador’s residence in Tunisia, I served a special tuna dish at a dinner party with the Tunisian Minister of Foreign Affairs and named the dish after his wife. Both the Minister and his wife enjoyed it very much.

A

s you must be aware Hakuba is chilly in winter, and, in cold weather, Nabe is the ideal dish for warming you up. It is fast and easy to make a one-pot hot meal. An wide range of ingredients can be used to prepare nabe. It typically has one chief ingredient, seafood or meat, boiled together with tofu and seasonal vegetables in a single pot. The ingredients are cut into small pieces for the purpose of cooking. The Japanese make use of an earthen pot or ‘donabe,’ made particularly for cooking nabe. For heating the nabe , a portable burner is put in the center of the table; the donabe is placed on it; after this, the family and friends gather round for the humble dinner. The one who serves is called ‘Nabe master’ or ‘Nabe-bugyo’, on the basis of the official positions of authority that were outlined in the Edo Period (1603-1867). The task of the Nabebugyo is to add new ingredients, as the pot empties, and, also to control the cooking and taste of the nabe. Who is going to be the Nabe-bugyo on your table for tonight? ‘Mizutaki’ is the most common type of nabe. It is an extremely simple, in which ingredients (mostly chicken and seasonal vegetables) are stewed in unseasoned water. It is eaten with a dip called “ponzu” sauce, which is a citrus-seasoned soy based. Though, recent changing trends in Nabe have offered a wider variety to Japanese people. ‘Sukiyaki’ is one of the most wellliked hot pot dishes in Hakuba. It has a sweet- salty flavor, which is slightly like teriyaki sauce, but, with a mix of vegetable and beef. However, the dish has its own Sukiyaki flavor that people love a lot, particularly if wagyu beef is made use of. These days lots of other diverse versions of nabe, like, curry nabe, kimchi nabe, dumpling nabe, soymilk nabe, ramen nabe and giblet nabe can be seen on the dining tables of homes. ‘Chankonabe’ is another well-known version that sumo wrestlers consume e ve r y d ay. I n s p i te o f w h a t yo u may think, as sumo wrestlers are so massive, chanko nabe is quite healthy; as, it consists of a lot of chicken, vegetables and tofu. As chanko nabe

HOW TO MAKE NABE Ingredients • 1/2 Chinese cabbage (approx. 600g) • 400g thinly sliced pork, chicken, beef or seafood •Shitake Mushrooms • 360ml dashi stock • 2 tsp soy sauce • 1 tbsp mirin • yuzu peel • pinch of ground black pepper

is so delicious, they can just keep digging into it to get big and strong. As a matter of fact, there are a lot of chanko nabe restaurants, which the sumo wrestlers have opened up after their retirement. It is important to keep in mind that the best part of nabe comes at the end. A lot of people just love the meal-ending or ‘shime,’ customs. Udon noodles or rice is added to soak the remaining soup stock and are then eaten. It has an extremely rich taste of all the flavors that went into the nabe. It is somewhat like risotto. A number of people even make use of pasta and put in cheese for shime. Nabe not only warms you up in the winter, but is also a way to have a social gathering in Japan. Japanese love to have nabe parties with the family and friends at their home. Everybody takes pleasure in sharing food and conversation over a single pot is considered to strengthen relationships. So, on your visit to Hakuba, try some nabe to warm your heart and soul.

“My grandfather was a great hunter. He often brought pheasants and other wild game to serve in our restaurant, so I have grown up with it,” explained Kazuma Maruyama, director of Mominoki Hotel & Resort. “In fact, it’s another aspect to living in Hakuba. There are snowsports, there’s fishing, and there is wild game hunting!” Game represents the ultimate in free-range organic food. Compared to meat from farm animals, game is leaner, is higher in beneficial omega-3 fatty acids, and is completely free of hormones, antibiotics, and the other medicines increasingly used on industrial farms. Many foreign visitors imagine that the Japanese diet consists mainly of rice, vegetables, tofu, and fish, and that meat is only a fairly recent addition, dating from the westernization of Japan, starting with the Meiji Restoration in the 1860s. However, in ancient times, hunting of deer and wild boar, called inoshishi in Japanese, were commonplace, both before and after the establishment of agriculture and the construction of settlements. The rejection of meat was instead driven by the arrival of Buddhism from China. For villages like Hakuba that lie in mountains with deep snow cover, cultivation of vegetables is impossible for extended periods. Mountain dwellers, some the ancestors of Kazuma who can trace his lineage in Hakuba back to 1192, had no choice but to continue hunting for precious protein during the cold winter months. Since the hunting and eating of most animals

were prohibited by Buddhist teachings, various creative solutions were sought to retain the practice. Boar became referred to as “mountain whales”, to classify them as an animal with similar flesh whose consumption was still accepted. The tall ears of the Japanese hare were looked upon as the wings of a bird, another reclassification that remains in modern Japanese where rabbits are still counted in the same way as birds (“ichi-wa”, “ni-wa”, ....) Japan’s other religion, Shinto, also stepped in, with shrines providing hunters with amulets and charms and specially blessed chopsticks to be used when consuming game. To continue the long tradition of hunting in his family, Kazuma has recently acquired a license to hunt deep in the mountains around Hakuba. Gun control is very strict in Japan, with would-be hunters having to undertake special training with local hunting associations and to provide separate lockable storage for their weapons and ammunition. Hunting is not regarded as a sport as in other countries, and instead is increasingly being viewed as a favourable method of population management that can stop costly dam-

age to crops. With no wolves left in the country, Japan’s exploding deer population has been especially problematic. Even bear numbers are on the increase, with habitat loss and climate-driven effects on food sources driving bears increasingly into contact with humans. A few years ago, a bear smashed a window and gained access to the Wadano Visitor Center, home to Rhythm Snowsports and the Evergreen Outdoor Center. The Nagano Government has begun promoting the hunting of game and its consumption as a local delicacy. Shinshu, the old name for the Nagano region, and the French gibier for game have been combined to give us, Shinshu Gibier, a new brand backed by strict guidelines for the butchering and processing of wild animals. In Hakuba, Momonoki Hotel has become certified, so that animals caught by Kazuma and other local hunters can be properly handled and delicately prepared for expectant diners. The menus this year at Mominoki’s Izakaya Kaz and Mansaku restaurants feature game in the form of pheasant, duck, venison, and boar, together with the staples of locally raised fish and vegetables. Kazuma’s brother, Executive Chef Daiki Maruyama, has a deep understanding of how to highlight the characteristic flavours and textures of these unique ingredients. Accompanying diners may be reassured to find plenty of lighter and more conventional fare on offer, with some vegetarian options touted as the best in the resort. Red wine remains the default choice for the earthier tastes of game, though lighter meat like pheasant can be enjoyed with a rich white like Chardonnay. Whatever your choice, the sommeliers at the Mominoki are confident that their cellar with its many bottles will have just the right wine for you. Whether it be the expertly prepared dishes or the friendly server who brings them to you, restaurants Izakaya Kaz and Mansaku at the Mominoki remain committed to their goal of giving you a dining experience you will never forget. Where are you located We are located right in the middle of Echoland Main St. What meats do you recommend? You need to try the grilled steak rib roast of the Shinshu Japanese black beef. This is local bred cattle and they even grow up eating apples!

What could be better than sliding through the powder during the day followed by great pizza and pasta in the evening at the same time watching your fore mentioned riding on large TV screens with a glass of beer or two? If this sounds good then make your way over to Cru Café in Happo. Deciding what pizza to choose in Cru Café is a little hard because they have so many different varieties. Though the name does suggest a café, it has more of a sports bar feeling with screens showing many ski and snowboard movies. Cru Café is powered by GOPRO so go on be a hero after dinner and semi-retire to the private screening area. Here you can connect your camera to one of the huge TVs and sit back in the comfortable arm chairs and watch your days action while contemplating tomorrow’s. CRU CAFÉ Page 68

What is a good drink with dinner? At the Alpine Grill we have a selection of wines to match the menu. Why not try a local merlot with your local beef.? What are chicken apple skewers? We like to use a lot of local ingredients, so even the chicken and the apples are from Nagano. Herbs are used, as is my homemade sweet apple sauce. Everybody loves them! ALPINE GRLLL Page 55

Wasabi is more than just a hot sushi condiment here in Hakuba, it is also the name of the Wasabi Restaurant located adjacent to the Happo Adam Gondola base station. You can breathe some fire at Wasabi with a dragon roll sushi. This is sushi with the ingredients on the inside and the rice on the outside. The roll resembles a dragon. Another one of the delights is the unique Christmas Roll Sushi, great in a winter setting like Hakuba. As well as sushi, Wasabi also offers wagyu, shabu shabu and everyone’s favorite gyoza dumplings. First, do you know Wagyu? Wagyu, which is literally translated as Japan (Wa) and beef (gyu), refers only to meat that is reared from Japanese cattle being mainly from the breed Japanese Black. This specialty of Japanese cuisine has been marketed extensively in both Australia and America in more recent times with consumers in those countries becoming increasingly fond of this type of beef. Similarly to Champagne and other local specialties from around the World, Wagyu beef can only be named as such if the particular cut of meat originates from certain areas of Japan. There are many urban stories about how cattle are raised for the production of Wagyu in Japan. Some farmers have been known to play their cattle soothing music, hand massage them and even providing them with beer and Japanese sake as part of their diet! We’re never too sure whether

these amusing stories are true but if you want to eat the “Real Wagyu” here in Hakuba, then head over to LUCE opposite the Kokusai Lift in Wadano where you can enjoy Japan’s finest meat.

Being located opposite the Happo-one ski area, LUCE is popular for hungry snowsports lovers for lunch to enjoy the creative fare of hearty sandwiches and the famous pulled pork burgers. So if you’re looking for an exceptional Wagyu steak and a unique dining experience try LUCE, be sure to arrive early and allow yourself to enjoy a glass of wine, either hot or cold before dinner. LUCE only opened in 2016 making it one of the new restaurant success stories in Hakuba. The physical surroundings being as much a part of the dining experience as the outstanding fare. LUCE combines a contemporary urban feel with a touch of mountain swank. Guests can enjoy a coffee or glass of wine at the lounge style arm chairs or enjoy a remarkable meal prepared by Executive Chef Reiko Okito as they sit down on the natural long wooden tables in the open dining area. A great deal of forethought has been put into the quality and sources that Chef Reiko prepares. She uses the freshest ingredients from local farms. The Wagyu is A5 Grade and the fish the finest Shinshu Salmon, a Nagano unique fusion of trout and salmon.

Just a short stroll from the main Echoland Street is Cherry Pub. The local’s favorite has been raising the bar of excellence since it opened in 2007. The stone walls and modern fireplace creates a warm ambience just like your local back home. The menu offers an excellent selection of tried and true favorites like Chicken Parmigiana, New York Steaks as well excellent pastas and pizzas. Their signature dish is slow roasted prime rib that’s aged five weeks, then prepared with seasoned rub. Pizzas are fire roasted in the brick pizza oven. Make sure you try the Garlic pizza or for those that prefer a spicier pizza then order the Diavola, topped with pepperoni, chicken and cayenne pepper. New this year is an improved dessert menu including the best soft ice cream. CHERRY PUB Page 48

Ideally located a stone’s throw from Happo information Center and Bus Terminal, Café & Bar Lion is fast becoming the premiere place to hang out, not only for great tasting coffee or the perfect lunch but also the coolest café in town. As you approach the counter you will be greeted to a wonderful selection of cakes. For those on a whistle stop before catching their bus then this is should be first choice. If you would like to sit back, relax and soak in the atmosphere with the other diners, then absolutely check out the fare that they have on offer. Lion keep it simple with five burgers to choose from. All of the burgers sound so great that the decision is sometimes a difficult one. A favorite is The Prince Burger with bacon and cheese. Open every day until the end of March, Tracks Bar located in the center of Goryu is probably the best bar for showcasing live bands and DJs. With Japanese craft beer on tap and open from 4pm to midnight it is the place not to be missed. On Tuesday evenings there is a pub crawl around the Goryu bars finishing at Tracks. IZAKAYA “ I

zakaya, or Japanese style pubs, are not only great places to diner in but also perfect to get an insight into Japanese culture. If you have made it to Hakuba, then you have to make it to an Izakaya! Izakayas were formed when liquor stores in Old Tokyo started offering a few snacks whenever someone came to buy sake, these stores soon began to sell a few appetizers and thus the Izakaya was born Time travel a few hundred years later and you have the modern Japanese Izakaya serving nihonshu -sake, shochu and local delicacies. Izakaya are friendly and social places where it is completely reasoable to strike up a conversation with total strangers. When you visit an izakaya, you will no doubt encounter the other side to the reserved and polite mannerisms of our Japanese friends. An Izakaya is where everyone can loosen up and talk about anything with not only their friends and coworkers but also with their bosses. The unwritten rule is very much like the Las Vegas rule, what is said in the izakaya, stays in the izakaya! For foreign visitors, izakayas are great places where you can easily access and experience Japanese culture and are indeed a great place to make new friends as people are more open and may even wish to either befriend you or to practice their English with you. Although the budget and food differs between izakayas they are all casual and most importantly, reasonable. A budget of between 3,500 to 5,000 yen is about average for both food and drinks. If you are still put off by the price then remember there is no custom of tipping in Japan! Once you enter and sit down in the Izakaya, yes, Izakayas are for sitting not for standing, it is custom to order a first glass of beer, usually with the catch phrase “toriaezu biru” which can seem more like a greeting rather

than an order. A small appetizer called an otoshi, is placed on your table. This is more like a table charge, at about 300yen – don’t get upset, they are not trying to scam you, but only to break the ice with this deliciously. Ordering can seem to be daunting for Izakaya first timers, but in reality it is rather simple. Many Izakayas will have pictures as well as English menus. To order, catch the waiters attention by calling out “Onegai shimasu, please – a very useful phrase to know. You can always order more at any time. If you ever get close to the staff or locals, you should ask about the “ura menu” this is a secret menu only known to regulars. Drinks The Japanese themselves after starting with the first round of beer, may then move on to nihonshu (the rice wine that for some reason is commonly called “sake” in English, but in Japanese “sake” (or “o-sake”) refers to alcoholic beverages in general), which can be drunk hot or cold. There are hundreds of brands to choose from. Shochu – distilled spirits made from rice, barley or sweet potatoes among other things – is also popular and can be drunk neat, on the rocks, or mixed with water, fruit juices or even oolong tea. Naturally, soft drinks are available as well. Food These days, izakaya serve all sorts of things, but the focus is invariably on traditional Japanese dishes that go well with beer and nihonshu sake. Among the perennial favorites are yakitori (pieces of chicken grilled on bamboo skewers) and oden (potatoes, vegetables, eggs, octopus and other things boiled in a broth). Izakaya specializing in seafood are also common.

The Bill Usually people share the dishes and split the bill at Izakayas. This will likely be a handwritten piece of paper with only the total bill on it. It is very rare that an Izakaya will falsify the bill, if in doubt then you can always ask them to break it down. Lastly, as you leave the Izakaya, tell the staff iin a loud voice “gochiso samadeshita”, which means

F

or thousands of years, rice has been Japan’s most important agricultural product. Once a form of currency in Japan, rice is now used to produce many other goods, such as flour, vinegar, mochi, and of course, sake. Most winter visitors only see Hakuba blanketed in white and are surprised to know that the valley is not only an international resort but also a farming village with rice as its main crop.

The project run by Happo-one Ski Area is to make 2,800 bottles of sake, actually called Nihon-shu in Japanese, as a new original liquor. Many readers will know that the name “Hakuba” means “white horse.” It is also common knowledge that this derives from Mt. Shirouma (also white horse), the mountain above the town where the image of a horse appears in the rock as the snow melts in spring. What is less commonly known is that horse image, which is dark rock on white snow was originally called the “shiro-kaki-uma” the ploughing horse. Local use the appearance as an indicator to prepare the fields for planting, and like all good locals the horse appeared and I literally got my feet dirty and started to plant the rice. After a back


breaking 90 mins it was over! Because a good quantity of water is necessary to grow the rice, many farmers irrigate their paddies with water drawn directly from the nearby rivers. But because much of the terrain is mountainous it’s common to have the paddies arranged in terraced slopes where the water flows from top to bottom. So the snow that we were skiing on last season could now be used to grow the rice! Next time we got together was for choosing which flavor of sake to brew. As I recall (there was a lot of sake drunk) we had ten bottles of sake with each label removed. Like wine tasting, we tasted all of them and commented on which would be the most suitable for visitors to Hakuba

both Japanese and international. The full heat of summer had died down and fall was in the air, the fields were full of shimmering golden waves of grain. Finally harvest season had arrived. Another back breaking 90 mins or so of cutting the rice and placing on a wooden frame to dry out. The rice was then packed off to the brewery about 20km down the valley to neighboring Omachi. Here the rice will be polished, washed, steamed, mashed, and finally pressed, then only then do we have sake. The sake, named “Kurobish” after the upper part of Happo-one, will make its debut on the full moon of January 31st. I can’t wait! SW
