Cook pasta according to package directions and drain. Meanwhile, cook vegetables as directed on package and drain. Add oil and garlic to a saucepan and sauté for 1 – 2 minutes. Add evaporated skim milk, cheese, and pasta. Stir to blend. Add shrimp. Toss to coat then add vegetables and toss. Heat thoroughly. Season with salt and pepper to taste. Serves 4.

More Than a Spinach Salad

INGREDIENTS

16 oz. boneless chicken breast, cooked /4 cup celery, finely chopped

2 Tbsps. crushed pineapple, drained 1

/4 cup pecan pieces

2 Tbsps. coarsely ground black pepper 2 tsp. ground coriander 1 tsp. coarse salt Rosemary sprigs, for garnish

DIRECTIONS

Preheat oven to 425°F. With a sharp knife, make small incisions covering lamb. Insert garlic slivers. Brush lamb with 2 Tbsps. olive oil. Combine thyme, dried rosemary, pepper, coriander and salt in a small bowl. Mix well. Cover lamb with herb mixture, forming a crust. Place lamb in a shallow roasting pan. Place pan on center rack of oven. Roast for 45 minutes. Reduce heat to 375°F. Cook for an additional 30 minutes or until desired doneness. Remove pan from oven and cover with tin foil for 15 minutes before carving. Garnish with rosemary sprigs. Serves 6 – 8.
