DIRECTIONS

DIRECTIONS

In a large pot, combine wine, bay leaves and Italian seasoning and bring to a boil. Add the mussels, cover and cook over high heat until mussels open. Drain mussels over a medium bowl. Reserve the broth and discard any unopened mussels. Pour the melted butter over the mussels and toss to coat. Set aside. Heat the extra-virgin olive oil in a large skillet. Add garlic and red pepper and cook over low heat for 3 minutes. Pour in the reserved mussel broth. Add lemon juice and simmer until sauce is reduced, about 8 minutes. Cook fetuccine according to package directions. Drain the pasta well. Add buttered mussels and sauce and toss over low heat until pasta is coated. Season with salt and pepper. Serves 4.

In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes or up to 24 hours. Warm the Tikka Masala Curry in a large skillet over medium heat. Heat grill and lightly brush grates with oil. Place chicken on grill, shaking off excess marinade. Cook until it’s charred, about 2 minutes on each side (chicken will finish cooking in the sauce). Add grilled chicken to curry and cook about 10 minutes. Garnish with cilantro and serve over rice.
