Delicious Spring Dishes Beef Stroganoff INGR E DI E NTS

/2 cup chopped onions


1 lb. beef sirloin steak, cut into strips 1 Tbsp. butter /2 lb. fresh mushrooms, sliced


/4 tsp. pepper


Cook onions and steak in a large nonstick skillet on medium heat 5 – 6 minutes or until done. Drain, remove from skillet and cover to keep warm. Melt butter in skillet, add mushrooms and pepper, cook 5 – 6 minutes or until mushrooms are tender. Add cooking crème, stir and cook for 2 minutes. Return meat to the skillet, stir in broth and cook for 5 minutes. Remove from heat and let stand for 5 minutes. Serve over noodles and top with parsley. Serves 4. Preheat grill to medium-high. Lightly brush both sides of each slice of bread and eggplant with oil. Sprinkle eggplant with garlic salt and grill for 6 minutes. Turn with a spatula, top with cheese and continue to grill until cheese is melted and the eggplant is tender, about 4 minutes. Toast the bread on the grill about 1 – 2 minutes per side. Spread the olive salad on four pieces of bread, top with eggplant and cheese, red peppers, onions and remaining slices of bread. Cut in half and serve warm. Makes 4 sandwiches. Spring into Easter Season Springtime Treats Prosciutto and Cheese Wrapped Asparagus INGR E DI E NTS

16 asparagus spears

1 tsp. oregano

1 Tbsp. Colavita Extra Virgin Olive Oil

2 slices prosciutto, cut in half lengthwise

1 tsp. salt 1 tsp. fresh ground pepper

8 oz. Neufchatel cheese, softened


Preheat grill to medium heat. In a medium bowl, toss asparagus with oil, salt, pepper and oregano. Spread prosciutto slices with Neufchatel cheese and wrap around the middle of 4 asparagus spears. Repeat, making 4 bundles. Oil grill rack. Grill asparagus bundles, turning once or twice, until asparagus is tender, about 10 minutes. Makes 4 servings. Soak skewers in water for at least 30 minutes before threading items (this prevents them from burning when on the grill). Mix first 6 ingredients in a small bowl. Alternately thread red bell pepper, shrimp, onion, yellow bell pepper and scallop onto skewers. Brush shrimp and scallops with seasoned butter mixture. Grill over medium heat 6 – 8 minutes or until shrimp turns pink and scallops are opaque, turning occasionally and brushing with seasoned butter mixture. Makes 8 kabobs. Preheat oven to 400º F. Grease 12-muffin tin lightly with oil. Measure 2 cups granola into a large bowl. Use a fork to stir in flour, baking powder, baking soda and salt. In a medium bowl, lightly beat eggs. Blend in yogurt, oil and nectar or syrup. Stir liquid and blueberries into dry ingredients to create a lumpy batter; do not over mix. Spoon batter into muffin cups. Sprinkle remaining 1/3 cup granola on top of each muffin. Bake for 7 minutes, then turn muffin tin back to front. Continue baking 4 – 5 minutes until a cake tester inserted into center comes out clean. With a fork and oven mitt, pry hot muffins from pan and set on a cooling rack. Eat warm or at room temperature or freeze cooled muffin in an airtight container for up to 3 months. Makes 12 muffins.

12/3 cups whole wheat pastry flour

1 cup dried cranberries


/3 cup sugar

1 large egg

11/8 tsp. baking powder


/2 tsp. baking soda

4 Tbsp. butter, melted (but not hot)

/2 tsp. salt



Heat oven to 375ºF. Line a baking sheet with parchment paper, then butter the pan in the center to form a round that’s about 10 inches in diameter. Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl and whisk thoroughly. Stir in cranberries. Combine egg, yogurt and butter in a second bowl and whisk. Add to dry ingredients and mix until barely combined. The dough will be somewhat thick and sticky. Scrape the dough onto the prepared baking sheet to form a roundish mound about 7 inches in diameter. Bake until crusty and a toothpick inserted near center comes out clean, 25 – 30 minutes. Cool on a wire rack. Serve warm or at room temperature. Serves 8. Copyright by Terese Allen.
