Preheat oven to 350°F. Clean chicken and remove giblets. Place whole chicken in a roasting pan surrounded with potatoes, carrots and celery. In a separate bowl, combine soup mix, tomato sauce and water. Pour over chicken into roasting pan. Roast for 11/2 – 2 hours or until chicken is cooked thoroughly and vegetables are soft. Justin’s Peanut Hummus INGR E DI E NTS

2 cloves garlic

1 tsp. balsamic vinegar

/4 cup lemon juice

2 Tbsp. sesame oil


2 Tbsp. Justin’s Classic Peanut Butter 1 can garbanzo beans, drained

/2 tsp. cinnamon


/2 tsp. cumin


/2 cup plain Greek yogurt



In a food processor combine garlic, lemon juice, Justin’s Classic Peanut Butter, garbanzo beans, balsamic vinegar and sesame oil. Blend well; slowly add cinnamon, cumin and yogurt. Blend until mixture is smooth. Chill until ready to serve as a dip with crackers and vegetables or as a spread on your favorite sandwich. 11/2 lbs. stew beef, cubed

2 bay leaves

2 Tbsp. olive oil

1 can (28 oz.) Cento tomatoes

1 cup onion, chopped

1 Tbsp. sugar

1 cup celery, sliced

2 tsp. salt

1 bell pepper, chopped


4 cups beef broth


3 carrots, peeled and sliced


2 lg. potatoes, peeled and cubed



/2 tsp. pepper /2 tsp. crushed rosemary /2 tsp. ground thyme

It’s National Meat Month and National Soup Month To celebrate National Meat Month, pick up a boneless chuck or rump roast at the butcher counter in Fiesta’s Meat Department. Either of these two cuts are perfect for a pot roast, slow cooked in the crock pot all day. Preheat oven to 450°F. In a large bowl, combine first seven ingredients. Mix well and form 12 balls. Space onto a nonstick baking sheet. Roast in oven for about 12 minutes.
