Irish eyes will be smiling when you serve this refreshing lime concoction to mark St. Patrick’s Day. Even if you are not Irish, you’ll enjoy this tasty treat cooked up by your little leprechauns.

• 1 ½ cups lime sherbet, softened • 2 tablespoons limeade concentrate, softened • 1 teaspoon sugar

• 6 ounces lemon-lime soda, chilled • 1 ½ cups crushed ice

1. Combine sherbet, limeade concentrate and sugar in a blender or food processor. Blend until combined. 2. Add soda and ice and continue blending until smooth. 3. Pour into glasses and garnish if desired. Makes 2 servings
