THAI MANGO – GOAT CHEESE – OATMEAL The idea was to work with the very good Thai mango that we can easily find everywhere in Thailand so I first started to work on different textures of Mango: crispy, dry, frozen, creamy. The association with the goat cheese just came out like this and then something was missing and I was looking at something earthy as I already had something from a tree and from an animal. I needed something coming from the ground and when I tried with and cook the oat, a nutty flavor came out balancing perfectly the dessert.
