LYUTENITSA (Bulgarian: лютеница, (lyuto meaning spicy) is a national relish of Bulgaria. The ingredients include tomatoes, peppers, eggplant, onion, garlic, black pepper, cummin, sunflower oil, sugar and salt. Lyutenica may be slightly hotter (spicier) depending on the spices and the chilly pepper in it. In recent years, industrial production of lyutenica has flourished and popularized it outside the Balkans. Thanks to its ingredients it is extremely healthy and delicious as well. Bulgarian children have grown up with a slice of bread, lyutenitsa spread on it. In addition, it has to be noted that different regions and countries have substantially different interpretations of it.
