Katchkie Farm is our 60-
acre NOFA-certified organic farm in Kinderhook, NY. We are the first catering company to own and operate an organic farm. It represents our commitment to sustainable practices and serves as inspiration for our chefs.
In the GP Kitchen, over 100 tons of food scraps are diverted annually from landfills through repurposing, composting and recycling efforts. • The ‘Tradition’ line repurposes leftover and uncommonly used ingredients to make creative new dishes. • In the past three years, over 480k pounds of food leftovers and farm surpluses went to food pantries throughout the city and upstate. • Annually, over 2000 gallons of discarded cooking oil are transported to Katchkie Farm, where it is used to heat the farm’s greenhouses. • The company’s environmental impact is mitigated by utilizing biodegradable disposables, fair-trade commodities and efficient energy integration.
