Alex will bring his culinary creativity to menus in all seven restaurants throughout the casino including the signature French Quarter Restaurant. Having fourteen years of experience, Chef Alex’s previous experience at restaurants in Fort Lauderdale included working for Chase Restaurant at Gulfstream Park and the Court at Palm Aire. Previously employed as Chef Saucier at Mardi Gras Casino, Alex’s talents and achievements have helped his successful rise to the desired position of Executive Chef. The Search for Hollywood’s “Top” Chef The extensive search for a new Executive Chef to help bring Mardi Gras the best restaurants in Hollywood, Florida was not easy. This search was carried out on a national level, and to spice things up a bit Mardi Gras’ Food & Beverage Director, Sallyanne Kelly, decided to include a twist to the search; a tasting contest. This tasting contest was in coordination with the hit television show “Top Chef.” The highest qualifying applicants were invited to the casino. In the contest applicants were required to present a tasting of two appetizers, two main dishes, and an optional dessert. After a great evening and many delicious dishes South Florida’s own Chef Alex unanimously took the cake in the contest. His imaginative and creative dishes won over the hearts and stomachs of the judges as
he scored the highest in the tasting contest. Some of his signature dishes include Pesto Roasted Portobello Mushrooms and Herb Crusted Snapper with layers of Peas, Mashed Potatoes and Pepper Sauce. “His dishes absolutely blew everyone away,” said Food & Beverage Director, Sallyanne Kelly. When asked what really set Chef Alex apart from the other chefs, Director Kelly said that it was “his passion for food and the presentation of it… his food comes from the heart.” Chef Alex is a native of Russia and learned his culinary arts skills while serving in the military, which may explain his highly disciplined work ethic, strict inventory control and his expert knife skills. He is most noted for his taste level, beautiful presentation of dishes and his passionate explanation of the food. He insists on fresh food that is homemade.
