ORGANOLEPTIC CHARACTERISTICS COLOUR: deep green, with bright reflections. BOUQUET: sweet-smelling, of mature olive. FLAVOUR: savoury and slightly spicy, with spicy hints of dried fruit and a bitter aftertaste. SUGGESTIONS: for refined palates, to be used raw, with a great dietetic value and very digestible.
