GARLIC AND HERB ROASTED TURKEY BREAST Prep Time: 30 Minutes Ingredients:

Cook Time: 1-1 ½ Hours Servings: 2-4

1 Garlic bulb Spices and Tease Herbs de Provence • ½  Stick of unsalted butter, softened • 1  Skin-On Turkey from Ceriello Fine Foods (about 3 lbs) •

• 1 Tbsp

sea salt oil drizzle 1 Large onion 2 Carrots, roughly chopped 2 Small white potatoes, cut into chunks

Instructions:

1. Preheat the oven to 350°F. 2. Cut the end off the garlic bulb. Place it on a piece of foil, drizzle olive oil, and wrap it. Leave it in the oven for about 30 minutes or until soft. 3. In a small bowl combine butter, Herbs de Provence, sea salt, and roasted garlic cloves. 4. Spread the prepared butter underneath and on top of the turkey skin, being careful not to tear. 5. Place the onions, carrots, and potatoes on the bottom of a baking dish. Place the turkey breast on top, skin side up. Roast for 1-1 ½ hours or until internal temperature is 165°F. (If skin is getting too brown, simply cover with foil.) 6. Let rest for 15 minutes before slicing. CONNECTIONS HOLIDAYS 2019 11

How long have you worked at Grand Central Terminal? I’ve been here three years and with the MTA for eight and a half years. Prior to joining Grand Central Terminal, I was the Project Executive for Turnstyle, the retail and dining experience at the 59th Street — Columbus Circle subway station. Exciting brands like Swarovski, Love Thy Beast, and Inaya have just opened. Whom can we look forward to in 2020? Right now, we’re working on introducing some really exciting new stores in 2020, continuing our successful formula of curating a mix of emerging and established brands to provide a broad offering to our customer base. What are the best stores for time-pressed commuters seeking last-minute gifts? There are so many! My go-to store is always Cursive; they’ve a great selection of unique and quirky gifts 18 GRANDCENTRALTERMINAL.COM

How do you see the future of retail evolving? It’s going a couple of ways. First, we’ll see more online retailers creating a brick and mortar presence. Then there’s the emerging trend of traditional retailers using their physical stores for product experiences, but then shipping them. This reduces the need for in-store space to hold stock. The new Aerosoles store in Lexington Passage is a prime example. Finally, customer experience is absolutely critical. Today’s most successful retailers are providing fantastic in-store experiences, great social media, and creating emotional attachments with their customers via shared beliefs, such as social causes and philanthropy. Managing Grand Central retail is an incredible job — what do you most love about it? It really is! I feel really lucky to work in such an iconic and recognizable place. I especially love seeing the awe on tourists’ faces as they see the Main Concourse for the first time... that’s really cool and reminds me how special Grand Central is! I also love working with so many different retailers, from global giants like Apple to the tiny momand-pops in the Graybar Passage kiosks. Perhaps the best part is nurturing those mom-and-pops, growing them from a kiosk to a fully-fledged store in the Terminal. Honestly, it’s always a special, and often emotional, moment handing a small business owner the keys to their very first brick and mortar store. I recently got to do that with Saskia and Jet Set Candy!

We focus on crime prevention, counterterrorism; we address various quality of life issues, and answer a variety of questions — all to make experiencing this historic building enjoyable and secure for all. With so many daily visitors, unusual and funny things must happen. Tell us about some. I’ve seen many tourists get photobombed by a commuter running to catch a train. I had one guy ask me how we rebuilt the Terminal so quickly after he recently saw a movie where a spaceship crashed into it. The place is so big, many people simply get mixed up and don’t know which way to walk to get out.

How long have you worked at Grand Central Terminal? I was a patrol Sergeant in the Terminal for two years from 20112012. I returned in 2016 when I was promoted to Captain. Have you always worked in transport police? I first started out as a retail software merchandizer. My police career started with the NYPD Transit Division in 1998. What are the challenges in keeping such an iconic building safe, yet enjoyable and accessible? GCT is challenging because of its size, multiple uses, and the thousands of people who come through it daily. It is a place of work, a gateway, and a historic wonder. We prepare for multiple scenarios, with multiple variables, to keep the Terminal and those who use it safe. Tell us about the MTA Police Department at Grand Central. Our primary mission is to maintain a safe environment for our customers, co-workers and

What do the “Tactical Hybrid Unit” personnel do? We often see them in the Main Concourse. The Tactical Hybrid Unit (THU) is a specially trained group that focuses on rapid response assistance and counterterrorism strategies. Their presence in the Terminal is a critical component to keeping this building safe. Keeping Grand Central safe is an incredible responsibility. What do you most love about your job? I love knowing the job we do every day helps keep this historically important building safe and operational. Vendors, commuters, visitors, and employees count on us to make their experience here safe, reliable, and memorable. We love seeing the K9 units! Tell us more about them? Our K9 Unit is a critical component to securing the Terminal. They respond to numerous unattended package calls on a daily basis. Most people focus only on the dog but it really is a partnership between the dog and the handler. They are partners who work and live together, forming a special bond. After the dog reaches retirement, the handler gets to adopt the dog and they become part of his or her family. CONNECTIONS HOLIDAYS 2019 19
