Sid Miller is an eighth generation farmer and rancher and the 12th Commissioner of Agriculture for the great state of Texas. Commissioner Miller has devoted his life to the agriculture industry, and supporting Texas producers and the communities they call home. He is a businessman, rancher, community leader, former ag teacher and former school board member. Commissioner Miller is a rodeo cowboy and holds nine world championship titles. He is an honors graduate of Tarleton State University in Stephenville, where he received a Bachelor of Science in Vocational Agriculture Education. peaches and West Texas saddle leather. “Listening to our customers, we created a premium soy blend candle line and expanded that to include handmade soaps and lotions,” owner Randye McAnally said. “Our most rapidly growing area is our fundraising program, which is available statewide and showcases our all-Texas, allnatural product line.” Their products can be found in gift shops and specialty food stores all across Texas, as well as online. Some of their specialty items are their gourmet food gift baskets and gift boxes, which combine some of their most popular products to make great Texas-made gifts. GRAPE EXPECTATIONS: THE TEXAS WINE & GRAPE GROWERS ASSOCIATION THE STATE OF TEXAS HAS BEEN GROWING GRAPES FOR CENTURIES, BUT IT WASN’T UNTIL THE 1970’S WHEN A UNIVERSITY OF TEXAS (UT) VINEYARD PROJECT GENERATED SOME SERIOUS INTEREST FOR PLANTING GRAPES AND PRODUCING WINE IN THE LONE STAR STATE. Billy Carr, UT’s Lands Department of Surface Interest Manager at the time, was so passionate about this endeavor he and his team helped oversee a thousand-acre commercial vineyard that produced some outstanding fruit and very good wines. Carr’s staff included Dr. Charles McKinney, Gene Drennan and Dr. Roy Mitchell, some of the early pioneers in the Texas wine industry. In October 1973, George Ray McEachern, Extension

Horticulturist at Texas A&M University, gave a speech at the Texas Fruit Growers Conference. His speech, ‘The Potential for Wine Production in Texas in 1973,’ was sent out on the Associated Press wire, resulting in hundreds of letters to George Ray sparking even more interest. At the next year’s conference, a special session was held on grape growing attended by 30 9


growers. More pioneers like Doc McPherson, Dr. Bobby Smith and Ed Auler held planning meetings and did their homework. On March 1, 1977, 92 people met at a Howard Johnson in Austin to create the Texas Grape Growers Association. They soon elected officers and conducted the very first annual educational meeting.

The largest market for guar gum is in the food industry, but there are plenty of industrial applications, including textile printing, paper, as a binder or disintegrator in tablets and as a main ingredient in some laxatives, as a thickener in toothpastes, conditioner in shampoos and as an aid in hydraulic fracturing.

In hydrofracking, guar gum is used to thicken water, which allows it to move grains of sand underground a little more effectively than water alone would. Since the 1950s, guar gum has been used to make processed foods, acting as a thickener and preventing the formation of ice crystals. One benefit we all might enjoy from 17

FREDERICKSBURG FA CHOPS WITH JALAPENO


ARMS RECIPE: GRILLED LAMB O MINT AND MUSTARD SAUCE Lamb is a holiday favorite, and our friends at Fredericksburg Farms have a delicious recipe for you to try, see below for a zesty mint sauce created around their Fredericksburg Farms Jalapeno Jelly. Serves 4. Ingredients: 12 (4-ounce) To taste To taste To taste 2/3 cup 2 tbsp. 1 cup 2 tbsp.

Lamb chops, center-cut Olive oil Kosher salt or sea salt Black pepper, freshly ground Fredericksburg Farms Jalapeno Jelly Fresh mint, finely chopped Beef stock Fredericksburg Farms German Stone Ground Mustard

Directions: 1. Coat lamb chops on both sides with a light brushing of olive oil; season chops with salt and black pepper. Set aside while preparing the sauce. 2. Combine Fredericksburg Farms Jalapeno Jelly, mint, beef stock and Fredericksburg Farms German Stone Ground Mustard in a small, heavy-bottomed saucepan over medium heat. Cook, stirring often, to melt the jelly. Reduce heat to medium-low and simmer until sauce has thickened, about 20 minutes. Keep warm over low heat while grilling the chops. 3. Grill the lamb chops to desired degree of doneness, although medium-rare will showcase their optimum taste and texture. Serve three chops per person, drizzled with a portion of the sauce. 21
