Torta di Pere e Gorgonzola Savoury Tart with Pears and Gorgonzola Ingredients (serves 4-6) • 1 sheet of fresh ready-made puffpastry or you can use the 'Pasta Brisee' recipe • 4 mature pears • 200 g gorgonzola cheese • salt and pepper
Preheat oven to 160°C. Spread the pastry into a round quiche pan. Peel and cut the pears into thin slices. Place small pieces of the gorgonzola to cover about half of the pastry base, add the pear slices, then the remainder of the cheese. Add salt and pepper to taste and cook in the oven for around 40 minutes.
