St. Lucia

The Cathedral is located just off Derek Walcott Square, a park named in honor of the Nobel Prize-winning poet. Day 1 - Sand & Sea Pack a bag and head to Reduit Beach. Take a leisurely stroll down the long stretch of golden sand, set up your beach umbrella, then have your pick of water activities – including swimming and kayaking in the calm, clear waters. When it’s time for lunch, there are plenty of dining options at Rodney Bay Village, which is within walking distance from Reduit Beach. Indulge in local cuisine, like fresh-caught seafood, and sip a glass of rum punch while overlooking the turquoise waters.

Day 2: Soufriere Volcano Jeep Safari Take a scenic journey through Saint Lucia’s banana plantations, fishing villages, and the towns of Anse La Raye and Canaries, and take an easy hike to beautiful Piton Waterfall, where you can also swim. In Soufriere, the island’s oldest town, see the soaring twin peaks of The Pitons and visit Sulphur Springs – the world’s only “drive-in volcano” – where you can luxuriate in the soothing mud baths, followed by some delicious creole cuisine.

Day 3: Castries Culture Castries, the island’s Victorian capital and largest city, is a hot spot of activity, with its cruise ship docks, open-air markets, duty-free shopping, and entertaining nightlife. Stroll the quaint streets, lined with historic 19th-century colonial architecture, and explore the Cathedral of the Immaculate Conception, the largest church in the Caribbean. Day 4: Sweet Sunset Join the Piton Sunset Cruise and take in the gorgeous scenery as you make your way to the majestic Pitons, a UNESCO World Heritage Site. Swim and snorkel in the blue waters at the base of the volcanic peaks. Cruise back up the coast as the sun lights up the sky with orange, amber, and gold hues – you may even see the elusive “green flash” sunset phenomena. Pass through Marigot Bay and dance to some island rhythms while you enjoy drinks and delicious appetizers.

Day 5: Rhythms of the Ocean Get back into that beach mode before you tearfully depart Saint Lucia. On an island that borders two seas, there’s always more beaches to visit, so head to popular Anse de Sables, a mecca for windsurfers and sun worshipers, or Jalousie Beach, with its absolutely stunning location between the two Piton Mountains.

What’s it Near? Modena is definitely off-the-beaten path a bit, which actually adds to its luster. As described in an episode of “Chef’s Table” featuring the restaurant’s head chef, Massimo Bottura, the restaurant was discovered by a food critic who ended up in Modena by chance while trying to avoid terrible traffic. The restaurant is a little more than a two-hour drive to both Milan and Venice.

What’s it Near? Right in the heart of Paris, this three-Michelin star restaurant (the highest honor) will be nearby everything Paris has to offer. You’ll be particularly close to the Musée d’Orsay, a museum that houses some of the world’s most revered artworks, featuring paintings by Renoir, Van Gogh, Monet, and others.

What’s the Big Deal? French cuisine is considered the model for high-end, fine dining, and you can’t go wrong with this contemporary French restaurant that holds every accolade a restaurant could ever want. Chef Allain Passard owns several farms and the restaurant is known to serve fresh vegetables daily to the point where they never even have to see the inside of a refrigerator. This is your stop for classic Haute French cuisine and is worth being the centerpiece of your Paris vacation. The chef has also banished red meat from the menu, so this spot is also a vegetarian’s dream.

What’s the Big Deal? Considered the best restaurant in the world, the marvel of Modena is worth the trip to Italy for the bragging rights alone. Bucking trends of traditional Italian cooking, the style almost put Bottura out of business at first; the locals were not quick to embrace new-age concoctions like Bottura’s dish The Crunchy Part of the Lasagna. As he told Forbes Magazine, “Every single kid in Emilia-Romagna knows it is the best part of the lasagna – the rest is for adults!” His dessert Oops I Dropped the Lemon Tart also takes this nontraditional approach, creating a dish that literally looks like a happy dessert disaster of deliciousness on your plate.

What’s it Near? Just 45 minutes north of Manhattan, this farm and restaurant is the perfect quiet respite from the city. Explore all New York City has to offer, but nothing will probably match the experience at this fine dining restaurant that puts new meaning into farm-to-table dining.

What’s the Big Deal? Innovative is an understatement. Your plates here will almost look like terrariums, so dense with detail and colors of nature that it’s almost like looking at a reflection of Japan itself. Celebrating the topography of the country – covered in forest and surrounded by water – the dishes are beyond beautiful to look at and beyond tasty and fresh. The menu is seasonal and uses sustainable ingredients from the surrounding regions creating an immersive meal into the culture and one’s senses.

Chef Barber’s not a fan of the phrase “farm-to-table”, though he’s a pioneer in the philosophy behind it, preferring “seed-to-table” or “local” more, as explained to The Guardian. Obviously changing by the season, the menu will feature some of the freshest produce and succulent meats in the Hudson Valley, with an unrivaled fine dining setting to match. The property is also home to Stone Barns Center for Food & Agriculture, so a meal here is a constant educational journey. Though every flavor will wow, maybe nothing matches Barber’s attention to bread. The Barber Wheat is literally a whole-wheat bread he invented from the seed up. He does this with other nutrient-rich ingredients as well, urging his farmers with the radical notion of farming for flavor, not quantity.

You can’t go wrong when consulting The World’s 50 Best Restaurants™ list or the Michelin Guide. Just know that it’s not weird to start your planning by picking a restaurant first. These meals will be dinner and a show.
