4 Dear Neighbours, One of the dictionary definitions of Advent is “the coming or arrival, especially of something extremely important” and of course, the big thing on the horizon at the moment is Christmas. In this month’s festive issue Nicholas Rhea takes a look beyond the sheer commercialism that Christmas brings with it and focuses instead on the celebration of the event itself. Earlier this year my sister started sending through copies of all the family photos that she had, many of which I’ve never seen, and among them were photos of Christmasses past, which led me to write about what I remember of those times. As a special treat, this month there are two recipes and as baking seems to be having a big impact at the moment they both involve whipping up butter, eggs and flour in a mixing bowl. So there goes my diet for this Christmas! Pippa Greenwood advises us that it’s the perfect time to plant fruit trees, there’s the crossword to do and two (count ‘em, two!) sudokus to get to grips with. Did you know that although sudoku is derived from Japanese, it isn’t a Japanese word. If you talk to a Japanese person about sudoku they won’t understand you. Their word for sudoku is namupure, which is derived from the English words number and play. You live and learn! It’s panto time at Helmsley Arts Centre again (oh yes it is!) so book your seats now for Aladdin & his Wonderful Lamp. I’m told the Saturday matinee is already close to sold out. Carrying on the family tradition, my son Tom is appearing this year as Wishee-Washee so we’ll be there, cheering him on! If you’ve got young children you might want to glance at page 60 for the list of places to be visited by Santa and his sleigh, courtesy of the Ryedale Lions Club. t is probably an understatement to say many of us are busy with our Christmas preparations. Being individuals and of differing religious faiths or of no faith at all, each of us will have our own particular and very special plans for this most popular of seasons.

12 to the public. They would sing, dance, play instruments and in general terms be very jolly indeed. Some would perform a sword dance. The mummers would tour the houses in County Durham and Yorkshire, their official season beginning on the Feast Day of St Thomas, December 21st, which is the shortest day of the year. Inevitably, the fact these characters were masked meant that some took advantage of their anonymity to commit crimes and social nuisances. It is not surprising that King Henry VIII made a law which said that all mummers wearing visors would be treated as vagabonds by being arrested and subjected to three months imprisonment, or alternatively fined “at the King’s pleasure.” In the Richmond area of Yorkshire, the head of a horse, either a wooden model or a real skull, was fixed to a long pole and carried around the houses. The jaws were made to work by

pulling strings, and the accompanying party carried hand bells, sang songs and generally entertained the people. In return, they hoped for rewards in the form of food, drink and money. Throughout the North Riding of Yorkshire, it became the custom for women to make goose pies, but these were kept until after Christmas and on St Stephen’s Day, otherwise known as Boxing Day, they were given to the poor of the parish. Some pies were kept until Candlemas, February 2. Perhaps the most curious custom occurred after the end of Advent. In some parts of Yorkshire it was the practice, after Christmas morning Mass, to leap up and shout, “Yule.” Yule, of course, is the pagan name for the season but there is an old verse that reads, “Yule, Yule, Yule, three puddings in a pule. Crack nuts and cry Yule.” Why this was done, and what it meant, remains a mystery.

Makes 65

This richly spiced traditional German festive biscuit provides a grown up alternative to gingerbread. Slathered in rich dark chocolate and studded with sweet cherries, these are chewy and sweet, with a spicy kick. Perfect with a cup of strong black coffee.

100g ground hazelnuts 70g almond flour 350g plain flour 3 tablespoons cocoa powder 2 teaspoons cinnamon 2 teaspoons nutmeg 1 teaspoon mixed spice 3 teaspoons ground ginger ¾ teaspoon salt ½ teaspoon baking powder ½ teaspoon baking soda 150g dark brown sugar 225ml clear honey 50g butter 3 medium sized eggs 200g glacé cherries 300g dark cooking chocolate

Tip These can be kept uncoated for up to a month in an airtight container, so are ideal to make ahead of the festive rush, to be dipped in chocolate later on.

Preheat the oven to 170 degrees. Prepare all dry ingredients and sift together in a large bowl until combined. In a separate bowl, combine honey, sugar and butter, and beat with an electric mixer until light and fluffy. Add one egg at a time to the mixture and beat until well mixed. Gently fold in the sugar mixture into the dry ingredients. The mixture will be sticky and dense. Add glacé cherries into the lebkuchen mixture until evenly distributed. Prepare a large tray with greaseproof paper. Place heaped teaspoon sized portions across the tray, with plenty of space around them. Bake for 10-12 minutes. The biscuits will rise and be firm to touch, with a little softness to pressure. Remove and allow to cool overnight. Once cooled, you can now dip them in chocolate. Prepare the chocolate coating by crumbling 300g of dark chocolate in a large bowl, over hot water. Stir until the chocolate is evenly melted, and of a smooth, glossy consistency. Dip each biscuit into the chocolate mixture. You can either dip the front surface only, coat half a biscuit, or submerge the entire thing! (You may need more chocolate to do this for the entire batch.) Place dipped biscuits on a tray and allow to cool and harden. Store in an airtight container.

Days Of Christmas Past The writer Proust famously bit into a madeleine and was instantly transported back to a magical childhood. He then wrote a huge series of books to commemorate the fact. It happens to everyone at some point, but we don’t all go writing our memoirs. I saw a photograph of a Christmas party so thought I’d share this.

he first photograph, or more specifically, the world’s first permanent photograph from nature, was taken by Joseph Niépce in 1826 or 1827. The image depicts the view from an upstairs window at Niépce’s estate, Le Gras, in the Burgundy region of France. Not very inspiring and very difficult to make out any details. A lot like many peoples’ photos, including mine but heyho, it was a start.

One of the advantages of having so many aunts and uncles was the staggering number of presents us youngsters received! Next up would be Christmas games, which everyone, young and old, were encouraged to join in. I only remember two games. One involved passing a ring around on a piece of string and someone in the middle having to locate it. The other, for some inexplicable reason called “Toilet”, was a game of forfeits. One person would spin a plate on the floor and call someone’s name. If the person called didn’t manage to catch the plate before it had stopped spinning they were given a task. I remember being asked to run around outside shouting “Hot Peas” at the top of my voice. A

favourite forfeit would ask someone to kiss four bare legs and a bare bottom! Newcomers to our parties would be a bit perplexed and possibly embarrassed but the savvy ones would just pick up a stool and carry out the task with great relish. One of the exciting things for us youngsters, who generally went to bed very early in those days, was the fact that we wouldn’t be taken home until the early hours. No matter how tired we were, getting into a very cold car at 2 o’clock in the morning would soon wake us up again and when we got home I remember wanting to play with my presents again, but no such luck! These days, we take photos almost without thinking and there are so many that they tend to lose their potency a little. But if you’ve only got one, like the one of me and my dad that I’ve used in this article I think they mean a whole lot more.

Ginger Christmas Puddings Makes 6

Ready in 1 hour 30 minutes

These fruity mini puds flavoured with stem ginger are much lighter than a traditional rich Christmas pudding and don’t need to be made weeks in advance.

Ingredients: • 175g butter, softened, plus extra for greasing • 175g self-raising flour • ½ tsp baking powder • 175g light muscovado sugar • 1 tsp each ground mixed spice and ground ginger • 3 large eggs • 100g dried mixed fruit • 50g glace cherries, chopped • 50g stem ginger, finely chopped • 4 tbsp stem ginger syrup • Softly whipped cream or brandy butter, to serve

Tip For a boozy flavour, gently heat the stem ginger syrup with 1-2 tbsp of rum or brandy then pour over the hot puds just before serving.

Preheat the oven to 190C/375F/Gas Mark 5. Butter six small pudding basins (each about 200ml capacity) and line the bases with circles of baking parchment. Place the butter, flour, baking powder, sugar, spices and eggs in a large mixing bowl and beat together with an electric mixer for 1-2 minutes until pale and creamy. Fold in the dried mixed fruit and two-thirds of the cherries and stem ginger. Divide the mixture evenly between the prepared pudding basins then cover each basin with a circle of greased and pleated baking parchment and secure with string. Cover each basin with pleated foil. Stand the basins in a roasting tin and pour in enough boiling water to come halfway up the sides of the basins. Bake for 45-50 minutes, or until risen, firm to the touch and a skewer inserted into a pudding comes out clean. Leave the puddings to stand for 10 minutes then turn out onto serving plates. Mix the remaining cherries and ginger with the stem ginger syrup and spoon over the puddings. Serve with cream or brandy butter.

Fruit Planting The garden may be quieter than usual at this time of year, and certainly not likely to be yielding vast quantities of crops, but this near dormant time is perfect for planting fruit.

Y

ou can grow fruit trees in surprisingly small spaces, training them to espaliers (so that they have several sets of horizontal arms), cordons (as single main stems grown at an angle), fans (with their branches trained in to a fan shape) or as step-overs, (trained so that they make a neat edging for a bed or border about 45cm or so above ground level). You could also use a fruit tree to create a decorative and later a wonderfully productive arch. At this time of year fruit trees are great value because they are sold ‘bare root’, lifted from a field and not container grown. I find these establish particularly well and because you usually obtain them from a specialist supplier or nursery, the range of varieties available is second to none. You can either buy one year old ‘maidens’ and train these yourself, or if you want to save time, you can often buy trained or part trained forms. When you are choosing fruit trees it’s essential to get them on the right rootstock as this determines the ultimate size and vigour of the tree. Apples are particularly complicated, but as a rule, for step-overs, cordons, dwarf bushes and trees in containers try the extremely dwarfing but somewhat tricky M27 - but beware weak varieties or any tree grown on this rootstock in a poor soil as it may well fail. For bush, cordon, espaliers and half-standard try the easier to look after dwarfing rootstock M26 and for a cordon or espalier on a poor soil, for arches and for bush trees try the semi-dwarfing MM106. You will need to choose the varieties you grow so that they can pollinate each other (if there

is no suitable pollinator in the vicinity you will not get fruit) and on the basis of the taste and texture of the fruit and how well it stores and so forth. If you have space, it is good to grow apples for cooking as well as eating, or look out for those described as ‘dual purpose’, meaning they make very passable cookers as well as dessert apples. In addition to tree fruits such as apples, pears and maybe even a medlar or a plum or gorgeous gage, you could also consider some delicious bush fruits. The great thing about these is that they take up even less space and again can often be trained into wacky shapes such as fantrained or standard bushes, making them all the more ornamental and easier to fit into the smaller garden. Then there are raspberries - on my rather heavy and very alkaline soil I tend to stick to the autumn fruiting varieties such as Autumn Bliss and Joan J, but on freer draining and acidic soils you can try some of the more numerous summer fruiters too. Bare root fruit trees, bushes and canes are generally available from about November through until early March, depending on the weather, so don’t delay, start ordering or better still, planting, today. The Stamford Bridge Singers will perform a seasonal programme entitled “A Dickens of a Christmas” in aid of the Derwent Lions Club at Sutton on Derwent Village Hall on Friday 13th December at 7.30pm. The evening’s entertainment will feature some wonderful seasonal music, with tunes both old and new, together with evocative readings from works by Charles Dickens.
