Tasty Turkey Enchiladas Ingredients: 10 8” flour tortillas 4 cup shredded turkey Meat 2 tbsp. butter 1/2 cup diced onion 8 oz. cream cheese salt, pepper to taste 1 clove garlic minced 8 oz. Monterey Jack cheese, shredded 1/2 pint whipping cream (l cup) lettuce, tomatoes, black olives, salsa Directions: Sauté onion in butter. Add garlic and sauté an additional 1 minute. Add cream cheese, salt and pepper, mix to melt cream cheese and stir in turkey. Spoon about 1/3 cup turkey mixture in middle of tortilla. Roll and place in greased 9 x 13 seam side down. Top with cheese. Drizzle with whipping cream. Bake 375 degrees for 35 minutes. Garnish with lettuce, tomatoes, olives and salsa. For less fat, use low fat cream cheese and substitute the whipping cream with fat free evaporated skim milk.
