Happy 2015! I’m so excited we get to open another chapter of our lives and kick off the new year in style.

Last year I wrote down a list of goals I wanted to achieve in 2014. My year went a bit pear shaped in the middle due to some personal issues that were higher than little ol’ me, but essentially I didn’t do too badly. The list consisted of business-type activities and getting systems and processes sorted, and talking to my accountant about maximising profit. Double tick. Plus also personal things like travelling (tick), cutting my hair short (tick), climbing Mt Warning (tick), taking dancing classes (sort of tick, I did dancing at the gym and I was in a pantomime. I think that counts!), try a juice detox (tick) and make new friends (tick times a million!).

There were some things I didn’t get to do such as sky diving (I went bungy jumping instead), snorkelling at Byron, buying a tent and going camping, going to Fish House restaurant in Burleigh, abseiling at Kangaroo Point and buying a pair of Christian Louboutins. Well, I’m happy to report they are now on my list of goals for this year. I have always been one of those annoying people who writes everything down. I get that from my Dad: “Write it down” he would say. And I’m a huge believer in goal setting - in which we’ve spoken to the all-time guru in the sport of goal setting, Matthew Michalewicz, in this edition. Very apt for the first mag of the new year.

The human mind is a powerful tool. Everything in life is created twice: Before we manifest it in the “real” world, we create outcomes in our mind. Those outcomes are what we focus on – focus positively and with optimism, and we will have positive outcomes. That’s what I’ll be doing in 2015 and it’s also my piece of wisdom for you going into this year.

Tell us a little about yourself? I met my husband, Perry, overseas in America on a seven-day Contiki tour of the West Coast. We are coming up to our 18th wedding anniversary and are very proud of our two amazing children Sam, 12, and Zara, 9. Where else have you lived and worked? I was born and grew up in Israel and lived there until I was about 21. In Israel I served two years in the Israeli army, and later worked for General Motors in luxury cars sales. I moved to Australia shortly after meeting my Australian husband and initially lived in Maryborough, where I did voluntary work with school children, performing group exercise activities. I have been part of the Gold Coast fitness industry for 17 years and have been working as a naturopathic nutritionist and iridologist for about seven years. Why do you love what you do? I just love, through practicing my modalities, being able to help individuals become the healthiest they can be. It gives me so much pleasure seeing my patients and readers explore what wholesome eating and lifestyle can do for their health, affecting not only the way they look but feel as well. What made you want to get into it? I grew up with my father after my parents separated when I was about 10. Around the same time, possibly attention seeking during a very tough part of my childhood, I became vegetarian, which I still am now (although nowadays I do include fish in my diet). Living with my father, there was a lot of unhealthy food in the house. Although he did buy some fruit and vegetables, I wasn’t the type of child that would go for an apple, peach or broccoli. I most of the time ended up filling up with ice cream, biscuits and chocolate milk. Of course I got chubby, tired and unhappy. In 2000, I began to study nutritional medicine. This was the start of a journey that over the years has changed my life and my entire approach to health, body image and eating. Tell us about your book? Why did you write it? I believe life is way too short for bad coffee, peeling carrots and oh, that’s right, counting calories too! I also enjoy little treats like a glass of wine or chocolate with a great big smile on my face every once in a while. What are your top tips when it comes to the new year and a new you? • Keep it simple this year. Educate yourself and make gradual, longlasting changes to your eating habits and lifestyle. • Eat wholesome unprocessed foods. • Focus on foods that you can have rather than foods you can’t and enjoy an occasional treat with a smile. • Find a type of exercise you enjoy. • Learn to love and respect yourself and your body as you focus on bite-size personal results and achievements. Get goal setting, gorgeous Goal setting, what is it exactly and who should do it? Entrepreneur and goal-setting genius Matthew Michalewicz shares his insights into the art

o it’s 2015, the new year, and your plan is to get organised and achieve big things. It’s the perfect time to start putting ideas in motion, list out your Larne Wellington goals and get into it. Goal setting isn’t a new concept, but it’s an effective one and Life in Half a Second author Matthew Michalewicz says you can implement it in any area of your life so your big dreams and visions can be broken into more management steps. Here he takes time out with Get it editor Elizabeth Campbell to shed some light on the subject. Why is goal setting important? I think it’s important for two reasons and the two keywords are focus and context. Most human beings - about 80 per cent, and most businesses are also in the 80 per cent mark - don’t have clear and precise goals, which means they are not focused on anything at any point in time. They are just operating. They are going through life, the motions and just existing, surviving and doing things from day to day. Whereas once you have a goal you start focusing on activities that will lead you towards that goal. You start looking for things you are going to contribute to that goal and it focuses your attention. It also allows you to make decisions within the context of the goal. Most people struggle with making important decisions and they ask their friends or they ask their advisers if they should do something; should I invest in this course? Should I change January 2015


“Once you have a goal you start focusing on activities that will lead you towards that goal. You start looking for things you are going to contribute to that goal and it focuses your attention.” career? Should I apply to this promotion? Should I leave my job and start a business? What these questions specifically signify is they don’t have clear goals. If you have a clear goal you would ask questions or you would evaluate opportunities within the context of those goals. You would ask yourself: Will this help me achieve my goal? Or is this a step towards my goal? Have you found this from personal experience and research? Or is this an actual proven fact? No, it’s a proven fact and even though I’ve used goals for a long time I really didn’t understand why they worked until the research, studies and statistics on them. I have always been that person who has written down things, focused on them and tried to achieve them, but it was really reading the research that explained it to me. When did you start goal setting? I think I started probably when I was 14 with weight training. That’s been almost 25 years. Who should goal set? That’s a good question. I want to say everybody, but I am not sure 100 per cent of the population would really benefit from it. The people who want to achieve something should goal set. If you are trying to get ahead in your career, are launching or growing a business, are in athletics or show business; whatever you are trying to pursue the achievement of something that’s when I think goal setting is of the most of value. How do you actually do it? The way I like to think about it is within your general direction of your life. You set some kind of goal whether it’s a position, a level of income, something measurable; something specific. You put a time period around it and then you work backwards. What needs to happen for you to achieve that goal? I like this concept and that’s where my goal pyramid comes from. It’s taking your end goal and unpacking that into all the other things that need to happen for you to achieve your end goal. It breaks down what you are trying to achieve into bite-size pieces. What other attributes do you need for goal setting? I think you have to be accountable, which is difficult for a lot of people. So the best way to be accountable is to force accountability on yourself. This concept of telling the public what your goals are is a form of accountability that you choose. The more people you tell and the more often you verbalise your goal, the more likely you are commit to it. Have a goal buddy, like a training partner, where you regularly meet and discuss your progress towards each other’s goals.

What about obstacles you come up against? I think in every journey we find obstacles and stumbling blocks. It’s rare that you set a goal and everything goes to plan. You always have challenges along the way. I like telling people the things that I am doing because I find that they comment on it, give me advice, open my brain up to new levels of thinking or they introduce me to people who can potentially help. When you get stuck, go back to what other people have done to overcome similar obstacles. Ask yourself is there a set of people that have achieved this kind of thing? What did they do? How did they overcome obstacles? What were the tactics they used? Are those tactics applicable to you? Also keep in mind that just because that you have a goal doesn’t guarantee that you’ll achieve it. It doesn’t guarantee success. It helps us achieve more than we otherwise would have. What is your best tip when it comes to goal setting? Get a good goal buddy. It’s always easier to do it with someone. Find a really good person who you get along with, who also has goals that they have committed to and make them your goal buddy. Do it together. 17

nline dating sites can be rife with unwritten rules, sleazy folks and loads of uncertainty…despite all the negative press, newly single woman Patty Kapua has found Tinder an adventure of online romanticism and courtship. Patty said when she started out in the dating game she had no idea of what to expect. “Or any idea of what I was getting myself into,” she says. “I’ve had a conservative love life with only two long-term relationships, spanning over 25 years. One of my longterm partners was a family friend and the other I met at a nightclub.” Patty, a managing director of Inner Spark Systems, now works with couples and

singles as a dating and relationship mentor. She runs weekly dating classes to help those navigate the dating scene. Before checking out dating sites, Patty thought the world of online dating was only for desperate, lonely people who lacked somewhat in the art of communication. “I envisaged those with online dating profiles to be hiding behind a keyboard, unsure of themselves and their own ability to connect with real people, but desperate to find the love of their life,” Patty says. “Since researching this topic (both in theory and in practice) I realised I was not alone in my own uneducated judgment.There are plenty of others who have had a similar beliefs prior to entering the world of online love seeking.

“We are all a little curious. Most of us just want a little fun and connection in our lives and online dating often presents a safe and exhilarating option to seeing what, or rather who, is out there.” So Patty set out to get to know the world of online dating primarily through Tinder. “For those who want to do more than ‘hook up’, the key is you and how you portray yourself,” Patty says. “It is all about the profile and so many people get it wrong. If you want to get the most out of this whole dating experience, you need to forget the fake and the bravado that you could present to protect yourself. Just be you.”

Built in 1989, the monorail has been a favourite attraction for locals and tourists visiting the Broadbeach precinct for the past 25 years. Centre manager Michael Tree says he is thrilled about the reopening of the service. “I’m also happy to announce that the monorail will be running for free until Australia Day. We want people to rediscover Broadbeach and what better time than over the Christmas and New Year summerholiday period,” he says. The very sight of the Draculas Haunted House on the Gold Coast can send shivers down your spine, but what about the food? hen darkness falls, voices call, inviting you into the house for an amazing night of cabaret and fine food. The undead lurk around the front gates taunting guests to “enter if you dare”. I was fortunate enough to be invited by the team at Draculas to view the latest instalment of their hugely successful vaudeville cabaret production Spiderlash and to sample dishes from the three-course menu selection included in the package. From the moment my partner and I ascended the stairs into the Draculas castle, the playful bantering of the cast set the atmosphere for dark humour. A glass of Australian sparkling wine was offered before we were ushered to the amazing array of themed complimentary canapés for all VIP-pass holders. The nervous look on some first-time visitors to Draculas was priceless as the zombie and vampire-costumed wait staff walked by. Undead wait staff who remain in character throughout the night, encourage guests to chomp down on canapés such as brie cheese and strawberry fingers, prawn tornados and freshly rolled sushi. With drink in hand purchased from the ghoulish-themed bar where pre-dinner liquid courage is available, we joined the queue for the ghost-train ride to the dining hall. Not to give too much away, make sure you hold on to your drinks. Tightly! We survived the ride and were ushered to our table; centre dining area with a perfect view for the upcoming show. The bread on offer was baked January 2015

in the underground dungeons and served with a selection of three handmade dips, including a smooth hummus and a sundried tomato tapenade. While the band of the undead entertained the crowds with a twist on modern rock, our entrees arrived. A deliciously crisp tart shell filled with a textured filling of spicy chorizo, leeks, chickpeas and ricotta finished with balsamic and rocket. The ravenous hordes, myself included, unceremoniously devoured every last crumb. A mischievous vampire nurse took our maincourse order. I decided on the chicken breast sumptuously roasted with preserved lemon and fresh thyme, fused with streaky bacon and marsala jus. My partner opted for the pork belly with a lick of exotic Asian-inspired sauce, sided with silky sheets of creamed potato gratin. Also available was the Moroccan-style slow braised lamb shank on a soft pillow of saffroninfused rice pilaf and the delicate coriander and coconut-crusted snapper fillet, baked over fennel, with a kiss of kaffir lime beurre blanc foam. Once dinner was ordered it was then time to sample some of the cocktails that are as famous as Draculas itself. Undead with trays of all sorts of evil concoctions shuffled past with the eerie mists of 40

dry ice surrounding the room, we asked the nurse for her choice of cocktail. We were presented with what I believe was the haiku. A great mix of vodka, blue curacao and lemonade. Delicious. We also ordered a bottle of moscato and a few bottles of chilled Coopers. Main course arrived in what seemed no time at all. The chicken was superbly moist with the streaky bacon flavour seeping through the breast working well with the sweetness of the marsala jus. The meals are a generous size and have been well constructed with the emphasis on quality produce. My partner’s meal was also delicious. I should know, I ate half of it. The pork belly had taken on flavourings from the Asian-inspired sauce and I detected a subtle hoisin tone that complemented the pork perfectly. The curtains began to rise as we finished the last of our main meals completely satisfied. The cast are masters of crude comedy and the front men are greeted with a round of applause. As I squeezed in the macabre chocolate coffin of creamy bacio with roasted hazelnut, Frangelico liqueur and raspberry coulis, the cast of Spiderlash took over the evening and wowed the crowds who could not have enjoyed a better meal. INGREDIENTS • 4 serves barramundi fillets • 1 large ripe mango, peeled and diced • 1 large ripe avocado, seed removed and diced • 1/4 small red onion, finely diced • 1/4 cup fresh coriander, chopped • Juice of 1 lime METHOD: Prepare salsa by gently mixing together all ingredients in a bowl. Set aside and keep cool. Heat barbeque, grill or frying pan and cook barramundi fillets for 3-4 minutes each side or until cooked to liking. Serve barramundi hot with side of chilled salsa. VARIATIONS For a great addition, grill halved limes, flesh side down on the barbecue or heated pan for 1 minute. Serve on the side for a juicy squeeze over your dish.

BEETROOT DIP Makes: Approximately 1 cup

INGREDIENTS • 250g cooked and peeled beetroots (approx 4 medium beetroots) • 1/2 cup fresh mint • 1 tablespoon fresh lemon juice • 1 teaspoon ground cumin • 1/2 teaspoon ground coriander • 1 teaspoon extra virgin olive oil • Pink salt and black pepper to liking METHOD: In a blender or food processor combine all ingredients until smooth. VARIATIONS • Add 1 clove garlic, crushed. • Give this dip a boost of creaminess plus added calcium by adding 1 tablespoon of tahini. January 2015


MINI THAI BEEF SALAD BITES Makes: Approximately 16

INGREDIENTS • 250g sirloin beef steak, fat trimmed • 1 large cucumber, sliced into 3/4cm thick diagonal rounds • 3/4 cup cherry tomatoes, quartered • 1/3 cup, loosely packed, fresh coriander • 1/3 cup, loosely packed, fresh mint • 1/4 small red onion, finely diced • Juice of 1 lime • 1 teaspoon fish sauce METHOD Cook beef steak over medium heat on a light oiled frying pan for 3-4 minutes each side or cooked to your liking. Remove from heat and allow to rest. Meanwhile, in a mixing bowl gently toss cherry tomatoes, coriander, mint, onion, lime juice and fish sauce. Thinly slice beef steak and add to bowl of ingredients and gently toss. Spoon portions of the mixture on to each cucumber rounds. Make sure each piece of cucumber has some of each ingredient. Serve immediately or keep chilled. VARIATIONS For a balance of subtle sweetness add 1 teaspoon honey with lime juice and fish sauce. For an added crunch, serve these mini bites with a sprinkle of crushed roasted peanuts.

PINE LIME POPSICLES Makes: Approximately 6-8 INGREDIENTS • 1 large ripe avocado • 1 cup chopped fresh pineapple • 200ml full fat coconut milk • 1/4 cup coconut water • 10 drops liquid stevia or 1 tablespoon honey, maple syrup or rice malt syrup • Juice of 1 lime • 1/4 teaspoon vanilla powder METHOD In a blender, food processor or stick blender combine all ingredients until smooth. Pour into popsicle moulds and insert sticks. Transfer to freezer for a minimum of 4 hours or until frozen.

Riesling can have a many varied array of flavours from the citrus spectrum of limes, lemons and mandarins to the tropical spectrum of papaya and mango to the orchard with green apples to the floral spectrum too. Albarino can portray stone fruits, citrus and floral notes but it has great natural acidity that gives the wine a nice crispness and pairs with seafood beautifully. Sauvignon blanc, of course, is in the aromatic family and the best come from France in appellations such as Sancerre and Pouilly Fume where the terroir gives the wines finesse and minerality subtlety and depth. Some would argue that New Zealand is making some of the best sauvignon blancs in the world.With their upfront fruitiness and their herbaceous notes, which can be super concentrated and pungent. However, there are many other great examples apart from Marlborough. Check out other regions such as Martinbourouh and Nelson that are also making a great sauvignon blanc. really doomed?

We have a lot to be grateful for this year, so let’s make that our focus ecently over Friday drinks, one of my friends blurted out, “Where do all the letters sent to Santa addressed ‘North Pole’ actually go?” Fair query. I began to investigate this ever-so-serious matter so I could share answers with you, until I realised it’s January already. Whoops, time to move forward. Here we are, the beginning of a brand new year brimming with possibilities and potential. I am not at all prepared! Usually by now I’ve drafted intentions on paper and have a plan of attack at the ready, but this year not so. There’s a little voice nagging in one ear telling me how disorganised I am; and into the other ear is a whisper insisting it’s cool, that I’ve finally grasped the notion of “going with the flow”, allowing surprises to come my way. Good start to the year, I reckon − hearing voices and all. Where to commence without a plan? Being the girl I am, last night pondering it, I added all the numbers together: 2+0+1+5. Eight. Bible scholars say the number eight signifies new beginnings, which is pertinent. Of course, the number eight is also associated with good fortune according to various Eastern cultures. Perhaps we’re all off to a lucky start? It turns out 2015 is the Chinese Year of the Goat (or sheep or ram) and guess what, it’s my year! January 2015

Upon further investigation, I discovered it’s not actually my year at all. In fact, many who strongly believe in the Chinese zodiac hope they do not have children born in 2015. It’s unlucky, devoid of magic and miracles. Oh, and we sheep should definitely steer clear of the number eight. Double whoops. As I understand it, we are apparently doomed. Awesome. “Sheep are thought of as loyal, generous and kind.” How lovely, I thought, until I continued researching ... “Traits not so useful in a dog-eat-dog world.” Bit depressing! I’ve decided to ignore all this doom and gloom though. If I was to buy into it, I’d be pretty lame, not because of any superstitious beliefs, but because on one swift sweep of the overall scenario, it’s obvious we have it pretty good today. Delve back to a significant moment in our history – 100 years ago this year, April 25 (the date of my birthday, actually), our troops landed at Gallipoli. It is one of many, many tragic war-ravaged days gone by. In that Great War, nearly 40 per cent of our small population of under five million was enlisted for service. Everyone in Australia would have been touched by it; but I was born free, and I consider that lucky. This was further reinforced by an ActionAid campaign I spotted recently. Called The Worst Period of Her Life, it’s designed to raise awareness and money for 50

the distribution of sanitary kits to female refugees in places like Syria and Afghanistan, so these poor women can retain dignity when “that time of the month” comes. Surveys of Western women indicate over half wouldn’t go to work if unable to access these products. How heartbreaking − and truly unfortunate − that on top of everything else that’s fallen apart, many women don’t have access to a whole host of products and services which we take for granted as absolute “basics”. No, it’s not about comparison and I don’t intend to put a downer on your New Year celebrations. My point is though, we are lucky. No year is without its highs and lows, but if 2015 is challenging (for goats or otherwise), then let’s tackle it gracefully and gratefully. Are we unlucky, even in the Year of the Goat? As a goat, sheep ... or perhaps ram, I choose to see most certainly I am not. I − we − have freedom and hope. We can access an education and medicine. We will not be prosecuted for dreaming big! What a fortunate gift. Speaking of, I did find out about those letters to Santa. They actually go to Canada – there’s elves on the task there, but they’ve got a lot to get through, so if you send your note soon, you’re more likely to receive a reply for next Christmas. There is always magic and good fortune in the world for those keeping an eye out for it. Happy 2015!
