Il Principe at Inworth The Bible says, "You Can't Keep a Good Man Down" (Genesis 40-41) and this is certainly true of Mario Casella … When he decided to leave The Old Siege House, everyone including himself thought he was giving up being a restaurateur - after all, he had been in the business since 1975 when he opened Dino’s in West Mersea, but the pull of an industry that is in his blood was too strong and Il Principe was born. Mario has a distinguished history in the catering trade. After selling Dino’s in 1979, he moved on to open La Piazza (Now Pizza Express) behind the Town Hall in Colchester. Then after a spell running the Andromeda night club, he moved on to The White Hart in Coggeshall , followed by The Drapers in Earls Colne (renamed La Piazza) then back into Colchester to run The Old Siege House!

England proved a decisive motivation to the young teenager who upped sticks and moved, but only after following his older brother to France for a time. It was during a trip home to Italy that Mario met a businessman from Colchester who ran a Anglo-Italian Silk factory. Mario asked him for a job and his fate in Colchester was sealed, so at 18 years old, Mario arrived in England. He worked at the factory for a while, until he heard that the Casino at The Kingsford Park needed a Croupier who could speak French, and Mario speaks fluent French. In 1968 the new gaming laws prevented the Casino running, so the opportunity to learn the Hotel & restaurant business presented itself.

But all this is a far cry from his roots back in Calabria Italy where Mario was born on his Father’s farm in 1948. Watching television as a 15 year old and seeing the swinging 60’s in 2

Hollow Trees Farm Shop at Semer, Ipswich Robert & Sally of Hollow Trees Farm Shop have like many other farmers, diversified their farm in recent years developing a thriving business which includes, growing their own produce that is then sold through their farm shop. There is also a Plant shop, Woodland trail and coffee shop ... Over time the business has expanded and like many other venues which start up a coffee shop as an additional service, they then find that it becomes an integral side to the main operation that encourages visitors from all over the region and is as popular with families as it is with all the local schools. Situated in Semer near Hadleigh, it is almost equally-distanced between both Colchester and Ipswich so it’s an ideal day out, far enough off the beaten track in the rural Suffolk countryside. Its idyllic setting is close enough for an afternoon out, but has enough of an attraction to make a day of it.

As the business grew it became apparent for the need to expand the coffee shop area and build a new kitchen. It was refreshing to find that during our many discussions and planning that Robert & Sally were committed to creating a bright, clean, kitchen environment, with the emphasis on making life easier for their staff and creating a pleasant yet organised open plan kitchen. Not scared with pushing the boundaries the first thing we did was go to a cooking demonstration of the latest Rational Combination Oven at Colchester Institute, where the oven was demonstrated cooking a variety of dishes, from a full English

Even last week, when I met up at the end of the working day, Sally was chasing up the staff making sure that all was in order and the kitchen looked as clean and presentable as it did when we first handed it over. For me it’s great to see the kitchen being kept in such good order as this is not necessarily the norm.

Like many projects we do, during the process of the design and planning through the final execution, you get to know your customers pretty well, Robert and Sally have been fun to work with and they have a wicked sense of humour, but also a real desire to make the whole plan come together and want to make the new open plan kitchen not only a real showpiece, but a pleasant and efficient working environment.

So if you fancy a day out before the kids go back to school, why not take a drive out to Hollow Trees Farm Shop and Robert may take you for a ride on his tractor. If not, take in the nature trail but be sure to have tea and cakes in the new coffee shop. One thing i can guarantee is, they will make you very welcome and the scones are to die for.

We were fortunate enough to be there at the launch on Thursday 18 August when there was also a special wine tasting on offer from Fintry Wines … The combination of excellent Thai food and a great selection of fine wines at Colchester’s longest established Thai Restaurant, made for a really great evening.
