Total Catering – at Clacton Covered Market As a business, we are constantly evolving, and during our first six years we have developed many different skills from completing a wide range of projects. Just recently we were asked to look at refurbishing a small kitchen and servery area at Clacton Covered Market … says Andy Mumford In the past we may perhaps have turned down this type of project, but our working relationship with M Lewis, Builders, has enabled us to look at using more traditional building and carpentry skills to transform the whole area. In true Total Catering style we arrived on site on Friday afternoon. Mick and his team stripped out the small kitchen area, relocated the kitchen to a temporary site, and installed work hoardings to turn the site into a bare shell. I have never seen anyone transform an area so quickly or as efficiently as Mick does. It was still Day One but the electricians were

already on site and Mick was calling me, urgently needing the walls to be clad. For this, we rely on Andy of Stream Clean who uses a 2mm cateringquality white wall cladding. Unlike others in the market, we use a clever heat-forming machine to bend and form the sheets, to create a smooth wipe-down surface. We then fitted heavy-duty non-slip vinyl flooring and handed back to Mick to install nice new kitchen cabinets and a lovely butcher’s block work surface. Owners Lesley & Martin wanted to ensure that there was a true transformation; there were a few tenuous

moments where minds were changed and goal posts moved, but the change from ugly duckling to graceful swan took less than five days. They now have a smart open-plan kitchen

area, sporting a stunning new servery counter and the shop front is a triumph for Mick and Lesley whose design has lifted the whole area and made it more like a French Pavement Bistro than ‘just another café’. The food served has always been important and although no significant changes have been made to the menu it is show-cased so much better with a range of glass cloches displaying a range of home baked cakes and pastries. Don't get me wrong; they still

produce one of the best ‘Full English’ breakfasts in the town, along with other daily specials! You might like to pop along there and treat yourself to a leisurely breakfast or to enjoy afternoon tea in the Covered Market – and you might also pick up a bargain while you’re there!

Take this month So what does all this rain actually mean? I went to have a look on Wikipedia about something called the Gaia hypothesis… says Polly Enfield The Gaia hypothesis, also known as Gaia theory or Gaia principle, proposes that all organisms and their inorganic surroundings on Earth are closely integrated to form a single and selfregulating complex system, maintaining the conditions for life on the planet. Gaia was the goddess or personification of Earth in ancient Greek religion. She was the great mother of all the heavenly gods; the Titans and the Giants were born from her union with Uranus (the sky), while the sea-gods were born from her union with Pontus (the sea). Her Roman name was Terra – probably more familiar to people today. A little side-bar on the webpage, under this beautiful picture of our planet from Outer Space, informed me that “the study of planetary habitability is partly based upon extrapolation from knowledge of the Earth’s conditions, as the Earth is the only planet currently known to harbour life”. Confused yet? Well, maybe – but for me, one of

the most interesting things in life is the way everything affects everything else, and creates an amazing web that’s rather intriguing, so if the Earth is to be the starting point of our study of how it makes itself habitable, then that’s good enough for me! So, what of this damp squib of a summer? After so much talk of drought-resistant planting for our gardens, and road edges shrinking back, making everwidening gullies that were filling with molten tar running off from the roads … and earlier this year the hosepipe ban, of course. But have you noticed how magnificent the trees are? Have you noticed the profusion of green leaves and the greenest grass we’ve had for years? If you

are a gardener you will of course have noticed how often it needed mowing but how little chance you had to get out there and do it. But cast your mind back not ten years to the blue-green algae in reservoirs, that had the potential to poison our drinking water, as water levels dropped way below where they should normally have been. Trees were falling prey to diseases. Go back further still to stand pipes on street corners; to people putting bricks in their loo cisterns and sharing the bathwater. The naturalists were all worried about the Sahara Desert getting bigger and moving further south, which was disrupting bird migratory patterns, but look at how our coastal businesses here in Essex enjoyed a boom time as people reassessed their views of the British Weather and stayed here rather than flying abroad for their summer break – our patterns of annual migration equally disrupted from the norm! So can we extrapolate from all this mayhem that there are forces bigger than ourselves at play? Human beings just love to think how powerful they are, and to beat their communal breasts at the havoc they are wreaking in the world at large. We are all doing our bit now for conservation; give or take; and more power to our elbows for taking responsibility for our perceived mistakes; but is it really all down to us? ☺
