If there’s one thing Jersey knows how to do it’s eat. The Appetite eating guide from Gallery Magazine tells you everything you need to know about Jersey’s restaurants from the top-class to the takeaways.


Appetite began when we couldn’t find a decent restaurant guide that gave us a comprehensive overview of the island’s places to eat, when they were open and what they served. We’ve tried to include everyone we rate, some with full detailed profiles and others listed. We also took the opportunity to get some of Jersey’s top chefs into the studio for a great ‘food fight’ photoshoot.

Embrace Seasonality with Genuine Jersey Jersey is famous worldwide for its own breed of cow and superior quality milk and the prized Jersey Royal, but the Island can also be proud of an abundance of fresh, seasonal produce.

Produce carrying the distinctive red Genuine Jersey mark include dairy goods, fruit and vegetables, herbs and salads, meat and poultry, fish and shellfish. Genuine Jersey produce can be bought in supermarkets, markets, farm shops and sampled in restaurants, gastro pubs, cafés and from ice cream stalls.


Produce carrying this distinctive mark has been reared, grown and caught in Jersey by accredited Islanders and local businesses who qualify to be members of the Genuine Jersey Products Association. The Association was launched in 2001 to promote the diversity and quality of local produce and products. Since the Association started it has attracted a loyal and enthusiastic membership. While some members ensure the

survival of Jersey's heritage and traditions others are at the forefront of introducing pioneering farming methods, new crops or exploring previously untapped international markets. John Garton, Chief Executive said "whether it's reared, grown, caught or made in Jersey, Genuine Jersey is the guarantee of local provenance. In a nutshell, the Mark allows you to make an informed choice to support the local economy, embrace seasonality and reduce your carbon footprint." If you are eating in or out and want to enjoy the best of what Jersey has to offer then look for the Genuine Jersey mark before you buy.

Seasonal Jersey Nothing tastes better than just-dug Jersey Royals or strawberries of the season. Fresh, seasonal, local food is likely to be fresher and more full of flavour than food shipped long distances. Freshly-dug Royals taste incomparably better than washed imports. The loss of sweetness in asparagus is a simple equation of time elapsed after cutting. Imported asparagus can be 10-12 days old before it gets to your shopping bag. Taste is everything but nutrition - its less apparent partner - is also vital. Strawberries from South Africa bought in December have roughly 10% of the iron, vitamin C and antioxidants than our gorgeously local berries. Jersey produces a wealth of top notch produce year-round. It’s a question of knowing what’s in and what’s out. Ultimately, eating seasonally is about enjoyment not abstinence.

Preserve the environment Buying local and fresh produce means we can reduce excessive and expensive packaging - all you need is your shopping bag. Good farming methods also help preserve the natural environment.

Reduce food miles ‘Food miles’ are the distance food travels from where it was grown or raised, through the distribution process before finally ending up in your shopping basket. Buying local, seasonal produce reduces packaging materials, waste and carbon dioxide emissions.

Recycle your pound What better way to support the local economy than to buy from local shops? We have some fantastic farm shops, small stores and supermarkets which stock locally grown items. Make sure your money goes back into supporting our farmers and growers.

Provenance - traceability Wouldn’t you like to know that the hen which laid your eggs led a happy life or that your pig was well fed? Knowing where your food comes from and how it is grown or raised enables you to make informed choices about the origins of your food.

Passionate about pigs A handful of dedicated farmers are producing small quantities of high quality, free range meat, free from growth promoters and fed on high-quality traceable feed.

Jon Hackett started keeping pigs as a hobby and now has 5 sows and two boars on his farm in St Brelade. Drive along La Route des Genets and you can see his gorgeous saddlebacks basking in the sun or rooting about. “We chose to keep saddleback pigs because they are a British rare breed, sadly declining in numbers due to the demands for faster growing commercial breeds. However, they are ideally suited to outdoor living and are renowned for producing pork of an exceptional quality and taste.”


Last year he reared 200 porkers that he sells as pork joints, chops, bacon and hams. He also makes them into a fantastic range of sausages, using local ingredients like tomatoes, garlic, herbs, lavender, leeks and black butter. He makes everything on the farm and sells from his gate on Fridays and Saturdays and at St Aubin’s & Weighbridge markets. The freshest produce and absolutely zero food miles. “We grow our own barley and I boil up parsnips and carrots, so the pigs have a hot breakfast. “ says Jon “Then

they are free to do all things piggy, rooting around and wallowing in mud to their hearts content!” Me and the farmer, Jon and his wife Jenny’s company have recently launched their website and plan to launch online ordering for a weekly delivery.

Who else produces local meat? Classic Herd diversified from their dairy business to produce beef, veal and pork, which they sell from their farm shop in St Peter and is also available from Holme Grown. Vermont Organic Farm in St Brelade produces its own beef, chicken and lamb year round, as well as turkeys and geese for Christmas. Available from their farm shop as well as from Holme Grown. Vers Le Monts Farm in St Peter rear organic chickens and ducks, as well as turkeys and geese for Christmas. They are available through their

box scheme and from Classic Farm shop. Diane Best has a flock of almost 100 sheep in St Martin, including Hampshire Down, Shropshire and Clun Forest breeds. She sells whole lambs direct and joints to The Country Butcher at Rondels Farm Shop. Le Marinel Farm in St John rear geese, capons, guinea fowl, pheasant, duck, wild rabbit and chicken on their farm which they sell direct to customers. Oh and they have pigs too.

Classic fantastic Our lovely Jersey cow is sought after all over the world for its rich milk. Local producers are making a broader range of top notch dairy products.

Just across from the milking parlour, at Manor Farm in St Peter, is the dairy. The Classic Herd of 50 Jersey cows is milked and the fresh, organic milk is piped under the yard 30 metres to the dairy where it is pasteurised and bottled. On the third side of the yard is a beautiful old granite barn that houses the successful Classic Farm shop, now in its fourth year. Darren and Julia Quenault run Jersey’s only independent dairy and are committed to diversifying the range of products from their own herd. Julia (below) said, “We are artisan producers for a niche market and what we do is all about quality.”

Classic Herd won four golds at the 2008 World Jersey Cheese Festival - two for their camembert, one for their peppered brie and one for their Jersey Cache. Then there’s cream, double, single and heavenly thick, yellow clotted cream, an excellent range of yoghurts and ice cream and all using the best organic milk. As well as from their farm shop, the Quenault’s products are available from the Co-op and Holme Grown.

They produce their own expanding range of delicious cheeses - bries, camemberts, an award-winning blue and most recently, Jersey Cache, a mellow hard cheese based on a raclette recipe. The cheeses are made by Julia in their purpose-built facility with state-of-the art equipment and carefully regulated temperatures

2010 sees the opening of the new dairy up at the RJA&H site. The new dairy will provide a highly efficient and environmentally-friendly production facility, featuring all the latest state-of the-art equipment. There will be a visitor centre where we can learn more about the industry and see the production process as the butter is churned and the ice cream dolloped.

Sure as eggs is eggs Buying local eggs means a fresher yolk. Imported eggs will be about 10 days old compared with local ones that are usually delivered within 24 hours of laying. Happy Hens, with its distinctive label and 8,000 ladies, are the largest producer of free range eggs on the market, producing a whopping 6,000 eggs a day. Fungi Delecti also have excellent free range eggs from hens that peck through their harvested herbs. Vers Les Monts and Farm Fresh Organics both have organic egg production. Keep your eyes peeled for them in farm shops and in supermarkets.

Taste of the sea Jersey has some of the best quality waters in Europe. The world’s third largest tidal range ensures an excellent environment for fish and shellfish. With more trailers and stalls popping up all over the Island, local fishmongers are offering more fish than every direct to you. This means the freshest fish and seafood at the best price.

Louis and Vicky Jackson have been supplying fish and shellfish to the Island’s best restaurants for more than 10 years. The Fresh Fish Company buy from 15 different local boats. “All our shellfish - crab, lobster, scallops - are local and we buy in as little fish as possible”, says Louis. “Traceability is very important for us. We only sell line-caught bass”.


The road along to the harbour, between La Folie Inn and La Collette, has become busier with weekend fish and shellfish stalls all selling direct to customers. The Fresh Fish trailer, before the turning up to Fort Regent, is a great draw on Fridays, Saturdays and Sundays. They have a loyal and growing customer base who appreciate the couple’s friendly and informative chat. How do the Jacksons see the change in locals’ fishbuying habits? “It is a learning process. Many people didn’t know that local waters hold squid and red mullet as well as brill, bream and turbot. But knowledge and interest is coming on leaps and bounds. When people understand that this bream was swimming in the sea yesterday, that you simply can’t get fresher.“ The Fresh Fish Company - it does what it says on the label.

Jersey Oysters are grown in a totally organic area of Grouville Bay, covering a surprising 26 hectares. Jersey Oyster produce a staggering 40 to 50 million oysters a year which are eaten locally and exported to the UK and France. They also have the small, Bouchot mussels, so called as they grow on poles washed in and out by the tide. These deliciously sweet bivalves are guaranteed free of grit and harvested in July and August. Crabs Direct is local fisherman, Les Burt. He goes out on his boat and catches Jersey crabs chancres and spider crabs (when in season) - to order.  If you want them cooked and delivered to your door, Les is your man.  Lobsters too. That’s service. Captain Lobster is Peter Gay, an experienced fisherman now selling direct to customers from his trailers at Holme Grown and alongside Jon Hackett’s pigs in St Brelade. Next to the shellfish, they sell their seasonal catch from their boat 'Loup de Mer'. You can order online. Jersey Turbot run a vivier in a WW11 bunker in St Catherine’s. They import tiny, 50p-sized fish and rear them in seawater tanks on an organic diet.

Homegrown harvest After three years they are big enough for a really sublime fish feast. Order them direct from Dave Cowburn, giving him 24 hours’ notice, and you won’t get fresher. Experienced fisherman, Kevin Holden has recently started Jersey Fresh Fish selling direct from his stall at Lucas Bros Farm Shop. Highly recommended, he has the freshest scallops, skate, squid and whatever the seas yield. They bring their catch there on Fridays and Saturdays and when it’s gone, it’s gone. Ten fat scallops for a fiver is worth crossing the Island for. De La Haye Fisheries have now opened their vivier at Victoria Pier six days a week. Brothers Andrew and John are fishing seven days a week. Go down and choose your live crab from the tanks and have it cooked while you wait. They also have their trailers at Homefields Farm shop in St Clement and Jersey Bowl on Saturdays and Sundays. Vicky Jackson

Jersey has a long history of fruit production with local orchards that grow bumper crops dating back centuries. More recently soft fruit has grown well with our warm summers Joe Freire, has been growing strawberries for over 20 years and is the Island’s largest commercial grower of the summer fruit, producing 120 tonnes a season. His farm in St Lawrence has some early indoor strawberries and the bulk is grown outdoors. Joe has a range of varieties, including the most popular strawberry El Santa, so that he can produce a constant supply from May to September. If you haven’t yet found your way up his lane, Les Charrieres Nicolle, in St Lawrence, you are missing out on a treat. His charming stall and honesty box sells direct to passers by and you can pick your own. Joe also supplies local supermarkets and the Market.

Andrew Averty who runs Beechvale Farm Orchard in St John grows a selection of organic cookers and eaters - Bramley's, Tydemans early Worcester, Lord Lambourne and Cox’s - to spread the picking season from September. Available from the door and farm shops. Trevor Renouf has 100 fig trees and kiwi vines on his south-facing cotils at Rozel Farms. Apparently there’s a 19th century Jersey tradition that saw a fig tree in most farm yards. Packed with vitamins and fibre he aims to supply the local market this summer. Watch this space.

Everyone wants to get their hands on our lovely Jersey Royals, but local production goes way beyond the regal spud. The range and quality of local tomatoes, peppers, herbs and salad leaves is exceptional. Jersey is in the enviable position of being able to supply most of the vegetables we need, making us less dependent on imports. And buying local means no food miles and minimal packaging.


Amal-Grow supply the Island with seasonal produce - maincrop potatoes, carrots, leeks, broccoli, cabbages, cauliflowers in the winter and salads in the summer months. All their crops are grown outdoors in and around St John, across 1100 vergees (484 acres). Founder Anthony Le Brun says, “We have expanded our production to meet local demand and we are totally dedicated to supplying Jersey and the rest of the Channel Islands. We produce 2,500 tonnes of potatoes a year, meaning that the Island is self-sufficient in most of its vegetable production. We like to think that our customers’ support in making local produce their preferred choice has far reaching benefits to the Island as a whole. This in turn helps preserve the public expectation of what makes Jersey’s countryside.“ A strong, sustainable, local food system makes Jersey largely self-reliant which is an important and powerful position going forward.

Where Amal-Grow specialise in outdoor veg, La Chasse Nurseries produces indoor crops of tomatoes, peppers and cucumbers and aubergines. They supply only the local market from their 5 acres of warm glasshouses in St John. Fungi Delecti have a sunny valley on the north where they grow shitake mushrooms in the traditional Japanese way - the spores are impregnated onto oak logs and left for two years to do their thing. They also grow loads of varieties of deliciously delicate baby salad leaves and herbs in their polytunnels. Look out for bags in the Market and farm shops.

Available across the Island and in their great farm shop, Holme Grown. Homefield in Grouville concentrates on top notch veg for the local market and the quality of his produce is worth a detour to the east and their fantastic farm shop. Trevor Le Brun grows the largest range of crops of any Jersey farmer in his southerly fields, polytunnels and glasshouses. Jersey Asparagus - from the people who bring you Happy Hens. Feast on it during the season from April to June. Accept no imports.

Bubbles&steam When is seasonal not seasonal? When it’s brewed or bottled to enjoy anytime. Jersey produces cider, beer and wine and clever producers cook up a glut of fruit and vegetables for jams and chutneys.

A passion for steam engines and cider make Richard Matlock a happy man. The man behind La Robeline Cider went to France to learn about the traditional art of making “cidre bouché” where the sparkling cider is sealed with a cork. He found a very rusty, eighty year old cider press in a barn in Normandy, restored it, and installed it in the old pig sty at his granite house in deepest St Ouen and got on with the job in hand. Richard makes extremely tasty medium and dry cider, using local apples. Last year La Robeline produced 12,000 bottles and was awarded first prize in the International Cider Class 2009 for the best bottled cider presented to the retail trade. The bottles are available in supermarkets and from farm shops and the draught cider is available in some local pubs and from his cider shack, designed and built by Richard to be towed behind one of his glorious steam engines.

La Mare has orchards and vineyards on their estate in St Mary. They produce sparkling cider but most of it is double distilled in a Cognac Brandy, aged in French and American oak casks, to become Apple Brandy and Cream Liqueur. La Mare produce over 40,000 bottles of Estate wine a year, including award-winning, méthode champenoise, sparkling wines and their still white, pink and red wines. They also produce the age-old recipe of black butter. Jersey Brewery have expanded the Mary Ann range to include their flagship traditional ale, Liberation Ale which won the ‘Champion Beer’ award at the CAMRA Jersey Beer & Cider Festival 2009. Relative newcomers to the jams and chutneys scene, The Jam Tartes Kitchen are causing quite a stir, selling out of much of their beautifullypresented production at the Christmas markets.

Lesley Garton and Isabelle Jepson use local produce for their delicious jams and chutneys - chilli jam, with ginger and lemongrass, and spiced rhubarb chutney - and they forage the hedgerows for scrumptious bramble jelly and elderflower cordial. Jersey beekeeper, Andrew Militis, has hives in Trinity and the north of the Island, taking advantage of the heather on the coast and the plants and crops further inland. The industrious insects collect the nectar from the plants and Andrew extracts it in late summer just as it is, resulting in a delicious creamed and liquid honey, a product free of any additives, and sold from their door in Trinity.

This recently refurbished country inn is located opposite the local church, which dates back to the 13th century and is situated in the picturesque Parish of St Mary’s.

Jersey’s freshest eating guide

When it comes to eating out, we tend to fall into two camps. Appetite explores the phenomenon of the ‘Easties’ and the ‘Westies’ and asks, which one are you?


It’s official. Jersey is foodie heaven. You could eat out at a different restaurant, every Friday and Saturday night for a year – and still be on the nice ones. But like a favourite pair of jeans, or that comfortable old jumper we’ve had for years, most of us still end up heading to the same handful of tried and trusted restaurants, month in, month out. And with the out-of-town restaurants clustered in the island’s two villages, Gorey and St Aubin, Jersey foodies tend to polarize into two opposing camps – Easties and Westies. It’s a bit unfair to say it’s ‘village versus village’, after all, each one has a distinct atmosphere. Gorey locals say their village is modern and cosmopolitan. After all, there’s the Castle Green, Suma’s, Ingalill’s Swedish Kitchen, quirky Café Poste, fabulous Feast, Village Bistro with its Bib Gourmand and the extremely popular Bass & Lobster to name just a few. It’s swish, contemporary and just a little bit eccentric in that well-brought up way. St

Aubin regulars would say (and westies are fiercely loyal), that their village is chilled out, friendly, and knocks spots off Gorey. Well they do have the Salty Dog, Danny’s at the Harbour View, The Boat House, Murray’s and the everpopular Cheffins. And that’s before I’ve even mentioned the Old Court House, La Barca and Pedro’s. Walking along the Bulwarks is the nearest Jersey gets to a restaurant strip, with all the restaurants within easy stumbling distance. But while St Aubin’s may be easy to navigate, curled around the harbour with all the restaurants next to each other, Gorey’s the place with the stunning out-to-sea views, where the late-afternoon sunshine streams through the windows for longer. Perhaps we end up always heading to our local village out of habit. Turning right onto Victoria Avenue to head to St Aubin’s, or driving down the hill to Gorey just comes so naturally, we can’t imagine doing anything else. After all, when I asked a couple of serial St Aubin monogamists whether they’d tried the revamped Suma’s, they just looked at me blankly and said, ‘why would we go all the way out there?’. But why can’t we enjoy them both? If you’ve been to St Malo more recently than St Aubin, then maybe it’s time to mix it up a bit. Break out of the mould, and try something new. You never know, you might even like it…

The Old Bakehouse Cafe

Open all day, every day, the Old Bakehouse Cafe has just had a makeover, turning it into a friendly bistro-style cafe that serves up healthy, homemade food in the heart of First Tower. The Old Bakehouse Cafe is one of the oldest cafes in Jersey, and its recent transformation into modern coffee shop and bistro has brought relaxed homestyle cooking back to the area. The menu features a daily hot roast with all the trimmings, a traditional Sunday roast and plenty of daily specials. There’s a full breakfast available Monday to Friday until midday, and the weekends until 1pm, but you can still have breakfast rolls all day. You can even sit outside at the cafe’s al fresco area when the weather’s warm. Mandarin Room When you want a takeaway that’s a cut above your average chop suey, head to the Mandarin Room. The restaurant and takeaway has only been open a couple of years, but it’s developed a reputation for outstanding quality Chinese food. Helen Wong and her chef husband Kenny are keen proponents of local produce, and this translates into a contemporary take on classic Chinese recipes using the best Jersey produce and seafood. Try the gourmet dim sum for a real treat or a steaming bowl of won ton soup, and follow it up with one of the Mandarin Room’s famous dishes - the chilli beef perhaps, or the Kung Po chicken. Also worth a try is the speciality Mongolian crispy lamb which comes with pancakes and hoi sin sauce to eat crispyduck style. Another of the Mandarin’s specialities is the noodle menu, especially their Japanese-style Udon noodle dishes. Meals are served in generous portions, and taste freshly-made.

Daniel Ward 30 Head Chef, Suma’s

Working in the kitchens from leaving school, Daniel was soon recognized as a rising star of the food world. He trained at Longueville Manor for 3 years before moving to Suma’s and becoming their head chef. He reached the semi-finals of the Young Chef of the Year competition, and has held two AA rosettes for the last 7 years. What’s the most fun dish to cook on your menu? Line-caught sea bass with herb linguine, king prawns and slow roast cherry tomatoes.   Where do you go to eat on your nights off?  My girlfriend cooks pasta and salad for me. Midnight feast – what would you choose?   Bacon and mushroom omelette.   Who would you love to cook for?  Pierre Koffman, so that afterwards I could pick his mind. What’s your foodie guilty pleasure?   Twiglets.   What’s your favourite local product and how do you like it cooked?  This has developed over the year. It started out as sea bass, but now I’d say it includes tomatoes, peppers and asparagus. Add them all together and cook them simply and you have a dish everyone will love. David fights with... Roger White 37

Owner, Bass and Lobster Foodhouse Roger trained at the then 3 Michelin-starred Le Gavroche under Michel Roux jnr, and previously opened the Oyster Box and Castle Green for Jersey Pottery before taking over his own restaurant, the Bass and Lobster, last year. The Bass and Lobster has been extremely popular and is listed in the 2010 Michelin restaurant guide.   What’s the most fun dish to cook on your menu? Creamy pea risotto with grilled local hand dived scallops, smoked pancetta and rocket salad. The fresh local scallops are great, the creamy pea risotto and the salty crisp pancetta is a classic combination and the contrast of colours looks fantastic.    Where do you go to eat on your nights off? Dicq Shack or Pizza Express! Midnight feast – what would you choose? Houmous and pitta bread, and lots of chocolate.  Who would you love to cook for? Joel Robuchon, he is the original super chef and has been a massive influence on my career.  What’s your foodie guilty pleasure? Chicken and mushroom Pot Noodle with loads of cheap dried parmesan - the smell drives my wife mad, but I love it! What’s your favourite local product and how do you like it cooked? John Hackett’s fantastic pork belly from Brooklands Farm, slowly roasted with crispy crackling served with potato and pumpkin gratin.    Roger and Charlie White (3) fight with... Dark chocolate muscovado and hazelnut brownie with a white and milk chocolate mousse, cherry sauce and pistachio crumbs.


Richard Allen

34 Head Chef, Tassili at the Grand With an upbringing that centred around food - Richard’s father owned a chain of bakeries in Dorset, and his mother worked for Mary Ford as a cake decorator, it’s not surprising Richard soon decided he wanted to be a chef. From working with master chef Chueng Lu in Australia, to gaining 3 AA Rosettes at Dukes Hotel, and a stint at Le Gavroche, the young and talented Richard arrived at Tassili, where he has also been awarded 3 AA Rosettes.

What’s the most fun dish to cook on your menu? The venison dish, it looks straightforward but there’s a lot of work involved. Where do you go to eat on your nights off? Tamarind, the quality new Indian Restaurant in town.    Midnight feast – what would you choose? It has to be cheese and biscuits.


Who would you love to cook for? The British soldiers over in Afghanistan.   What’s your foodie guilty pleasure? Chocolate.    What’s your favourite local product and how do you like it cooked? I love the local sea bass here when we can get it, just pan fried with butter, lemon and Maldon sea salt.     Richard brought us... 39 Ocean Restaurant at The Atlantic Hotel After starting out in the kitchen at the tender age of 15, Mark went on to train under some of the country’s best known chefs including the late, great Keith Floyd and Jean-Christophe Novelli, the Roux brothers and Steven Saunders. His career has been marked by success at every turn, taking him from the main kitchen to the pastry section and ultimately to Head Chef, all at the finest establishments – and now rewarded with a much-coveted Michelin star for Ocean Restaurant at The Atlantic Hotel. What’s the most fun dish to cook on your menu?  It has to be my assiette of beef because it is the most technically challenging dish on my menu.  Where do you go to eat on your nights off?  When I’m off I generally stay at home with my wife, Magda and the kids. Magda is a fantastic cook, and there’s nothing I like more than relaxing at home with my family.   Midnight feast – what would you choose?  Toasted bread, cranberry relish and a few thick slices of Jersey brie, gently melted under the grill.   Who would you love to cook for?  Casey Stoner (Ducati Moto GP rider) and Valentino Rossi (Moto GP world champion) as Matti my son adores them.  What’s your foodie guilty pleasure?  Anything that doesn’t have fat free written on it.  What’s your favourite local product and how do you like it cooked?  Jersey hand-dived scallops, as they are as good as it gets served with caramelized pork belly, apple and vanilla purée, crispy pancetta and a lie de vin jus. Mark fights with... Raspberry nougatine, pistachio cream and raspberry juices.


David Cameron 46

Head Chef, The Boat House Group David dreamed of being a chef from the age of 6. He’s been in Jersey for about 20 years – first at the Granite Corner in Rozel, then Jersey Pottery, followed by The Village Bistro. He spent a while in Spain before returning to Jersey for a spell at the Wayside Café before joining The Boathouse Group last year.

What’s the most fun dish to cook on your menu? It’s not so much about what I’m cooking – the things that are the most fun are the people you meet and work with. Where do you go to eat on your nights off? I tend to work most nights so if I am off, it’s nice to just be at home. Eating-wise at home, it would have to be something that’s easy to prepare and involves the least amount of washing up!

Midnight feast – what would you choose? Sushi or a big steaming bowl of Asian noodles with pickled cabbage, fried shallots and peanuts. It depends which country I’m in.   What’s your foodie guilty pleasure? All food is a guilty pleasure while children are living in poverty.     What’s your favourite local product and how do you like it cooked? It depends on the season. My favourite fish is brill, which I’d fillet then steam or lightly bake and serve with a nice butter sauce or a nice fresh tomato vierge. And of course it has to be Jersey Royals and strawberries in the summer.

Patrick’s career began as an apprentice at Albert Roux’s 3 Michelinstarred Le Gavroche, and took him all over the world, from India to the US, the French Alps to Amsterdam working first under the Albert Roux consultancy arm, then for Relais et Châteaux, and various luxury hotels and private members clubs, before arriving in Jersey in 2008. What’s the most fun dish to cook on your menu? The passion fruit Marsh Mallow and Pina Colada parfait that used to be on the menu - not so much in the cooking but in the customer’s reaction when they see the plate presented in front of them. Let’s say it looks like a mushroom and I’ll leave the rest up to your imagination. Having an open kitchen here, you really become part of the restaurant. Where do you go to eat on your nights off? I'm still working my way round what’s on the island and have a fair few to taste yet. I didn’t expect there to be so much choice! I do prefer venues where you can clearly see effort and love has been put in.  Midnight feast – what would you choose? I love French pancakes with fresh sliced banana, vanilla ice cream and dark chocolate sauce. So simple, but just great.  Who would you love to cook for? Anyone who loves food and is going to enjoy their time round the table, whether with me at home or here in the restaurant.   What’s your foodie guilty pleasure? Great bread and cheese.  What’s your favourite local product and how do you like it cooked? It has to be bass, pan-fried with crisp skin served just shy of being pink.

Waterfront Brasserie & Terrace, Radisson Blu Waterfront Hotel In the industry for 20 years, Robert has worked all across the world from Scotland to Shanghai, with his experience of cooking a wide range of different cuisines influencing his particular style of cooking. He’s used to working for high end hotel chains, his previous hotel groups have included Hilton, Jumeirah and Rezidor. Robert was named Nestle Junior Chef of the Year in 1994 and was awarded 15th place at the prestigious Bocuse d’Or Europe awards in 2008.

What’s the most fun dish to cook on your menu? The sautéed Jersey Crab Cake is always good to cook as it uses locally caught crabmeat and is a popular choice with our diners. Where do you go to eat on your nights off? Where else would a professional chef want to go but to his own kitchen - well in my case the BBQ in my garden at home!  I love the al fresco lifestyle and wonderful BBQ dishes that you can create to suit the whole family.  BBQ food is simple, uses fresh ingredients and is very easy to cook after a long week at work.  Midnight feast – what would you choose? A party on a yacht – the James Bond choice!  A glass of chilled Champagne and my favourite local seafood – all consumed in the lap of luxury.

What’s your foodie guilty pleasure? Chocolate of course. You can’t beat good quality chocolate.  What’s your favourite local product and how do you like it cooked? I adore the crab served on our menu.  The local seafood in Jersey is excellent, particularly local crab, and cooking it simply just allows the subtle flavours to shine. Who would you love to cook for? The Pope.  Robert brought us... Tataki of Beef with a salad of Wild Mushroom, carrot curls, crispy onion and a wholegrain mustard dressing. Abdul Samid (Sam) 32 Head Chef, Cafe Spice

There was no question Sam was going to end up as a chef. His father was a chef, his father’s father was a chef, and Sam was born above a restaurant. He started working as a kitchen porter at 15, and feels he’s finally achieved his aim of opening a restaurant where he can rework traditional Bangladeshi classics in an exciting, contemporary way. What’s the most fun dish to cook on your menu? My signature dish, the Kurzi Lamb. It’s taken me years to learn and perfect exactly how to cook this dish that was an old Mogul speciality, served to the royal family. It takes 24 hours to prepare and marinate, but it’s worth it. Where do you go to eat on your nights off? When I have a night off… the Salty Dog. Midnight feast – what would you choose? Fish & chips. I make it myself! Who would you love to cook for? Gordon Ramsay or the Royal Family. What’s your foodie guilty pleasure? I could eat four or five packets of crisps a day – especially those Mexican hot tortillas. What’s your favourite local produce and how do you like it cooked? It’s got to be the local sea bass. I’d season it with paprika, put a slice of lemon or lime inside, squeeze some lemon juice over the top, then wrap it in foil and oven bake it. Then I’d serve it with lemon rice. Sam fights with... a flying naan bread! Sam brought us Gost Raj, lamb soaked in garlic and red wine and a cinammon stick overnight, in a vine tomato and lemongrass sauce.
