Las Fallas Festival The Fallas fiesta (Fire Festival) which takes place in Valencia from 15th to the 19th of March every year, is undoubtedly a ‘super-festival’, attracting many foreign visitors as well as Spanish tourists. All day, you’ll see processions, parades, and hear explosions around bonfires. On each night there is a firework display in the old river bed and they escalate in degrees of spectacle until the final night, 19th March,’La Crema’ the Night of Fire!

Recipe for summer Ingredients for 10 people:

600 ml. Olive oil 1 kg. Rice The local variety “bomba” is the one that should be used. Avoid basmati or similar. (100 gr per person.) 2 kg. Chicken 1 kg. Rabbit 1 kg. Duck (optional) 500 gr. Tomato 1 kg. Artichoke 800 gr. Flat green beans 300 gr. Garrofón or Butterbean 3 / 4 Rosemary sprigs 100 gr. Sweet Paprika Saffron Salt Water

ORIGINAL VALENCIAN PAELLA One of Spain’s most international dishes is, of course, the Valencian Paella. Originally from the city of Valencia, this dish is linked to the history and culture of the city and the surrounding areas. Today Valencian Paella is the traditional dish eaten every Sunday for lunch at local homes. Paella and Valencia cannot be understood without the Albufera Lagoon, where the ideal conditions to grow rice are given, and without the Mediterranean climate, that offers an ideal frame to grow fresh vegetables. Making the original Valencian Paella is not easy and some steps and ingredients are “mandatory” in order to be able to call it a Valencian Paella and stick to its original DNA. Otherwise we will be eating different “rice” dishes (which of course, can be as tasty as a Valencian Paella. Seafood rice, oven rice, a banda rice and black rice are good examples of local traditional dishes, which are ricebased too, but cannot be called “paella”. So no seafood, onion, carrot, chorizo or peas, but you can add snails, garlic and/or pepper (used in Castellón, Spain). Last, but not least: soon we will all have our “Paella Emoji” for Whatsapp based on the original recipe.

Steps: 1. Deciding the source of “fire” to cook the Paella is

the first step. The very original recipe is with orange tree logs and placing the paella on a metallic tripod. However, innovation has arrived to the kitchen, and we can also use a gas ring where you will be able to regulate the intensity of fire.

2. Look for the balance. It is important to have the paella pan aligned and balanced to avoid problems with next steps. How to do it? Placing the paella pan on the gas ring or tripod and pouring a bit of olive oil in the center. Whenever it remains in the center of the pan, you got it! 3. LETS START COOKING! Pour and heat the 600 ml. of olive oil in the center of the paella pan and, when very hot, add the chicken, rabbit and duck (all cut into pieces previously) and add salt on to it. Be patient: keep moving and sauté until the meat is well done.

4. Place the meat on the edge of the paella pan and clear the central part of the pan. You should only have the olive oil there. If you are cooking with a small pan you can always place it outside the pan on a plate. Add the flat beans, butterbeans and artichoke, add salt on to it and sauté until it is done. 5. Place the vegetables on the edge of the paella (with the meat) and add the shredded tomato on the center with a pinch of salt (You could also add shredded garlic clove too in this step). Keep moving the tomato until this turns into a kind of copper colour.

7. Add water to cover the mixture and leave to simmer for around 30-40 minutes. Remember to make sure that the pan is boiling consistently and homogeneously. It is in this step when the balance of the paella pan becomes very important. This water will become the soup in which we will cook the rice. IMPORTANT: water level will very much depend on the fire intensity and the paella pan to; control the level of soup, it is important to have enough quantity to cook the rice.

8. After 25 minutes of simmering, add saffron (which will give the paella the yellow colour) and the rosemary sprigs. Remove the rosemary sprigs after 5 minutes. Taste the “soup” and add salt, it should be just a little bit salty before adding the rice. 9. Add the rice making a “wall” across the pan (Also known as “caballón”). With the spoon move kindly until the rice is spread and distributed all over the pan. 10. The time in between the moment we add the rice and finish cooking is 20 minutes. It is very important to control the fire intensity. You will notice that the soup disappears (actually it has been absorbed by the rice). Que aproveche!

RED LIP ALERT

A red lip is always a good idea. On a dull grey weekday, wearing denim and a T-shirt, or at a party in your favourite dress. But how to create this amazing eye-catcher?

As a hair and make-up artist, I have several favourite products, routines, and rituals. I would like to share a few with you for this summer, so you can feel and look your best.

Step 1: Exfoliate your lips with a toothbrush or a lip scrub. Step 2: Choose your favourite colour red and the type of finish

you want for that occasion. Remember; a matt lipstick holds longer than a shiny one. Step 3: Apply the lipstick on the lips as much as possible, then take a lip brush and contour the lip lines. You can also contour with a lip pencil. This will give the lips even more definition. Step 4: Dap the lips with a tissue and apply a second layer of lipstick, and voilĂ , you are good to go!

For the face I recommend skincare by Dr. Jetkse Ultee - Uncover. Always finish your skincare with an spf 30. Because using an spf every day (yes, also when the sun is not shining), is the best anti aging product there is. It is my secret weapon!

Kiko

In the summer I love a good bronzing. Especially the classic one by Guerlin. Use one without shimmer for the face, (the shiny particles will make you look tired after 3 hours, so use a matt one), and with shimmer for the body. Place the shiny bronzing for example on shoulders, collarbones, and your legs.

HOW TO CREATE EYELINER A bronzed face and body with fun coloured nails looks amazing with a sharp and strong eyeliner. But how to place it like a pro on the eye? Go and sit at a table in front of a window, so you have daylight shining on your face. Place a mirror, maybe even one that magnifies, in front of you. Put your chin up a bit, and look down in the mirror, and lean with your elbow on the table for stability, when you start drawing your eyeliner. Follow the instructions like this image on the right and you can not go wrong.

A quick way to become summer proof is off course with nail-polish. Mix and match feet and hand for a fun and playful look and feel. Or go for a classic summer colour coral or as we used for this photoshoot on Rianne the colour June by Chanel.

The colour block trend has been around for a while. Definition: colour blocking, is a method of wearing multiple solid colors in one outfit. The outfit revolves around a palette of two or more colors, usually in bold and bright shades. The result is a simple, yet very chic look. Prints and patterns are typically not used in colour blocking, as such designs would take away from the “blocked” visual. The power of colour blocking is to use colours that reinforce each other, like pink and red, orange and blue or yellow and green.

Music was his greatest passion but after 15 years of working as dj/music composer, Otto decided to leave his secluded studio life behind and move into the real world. He bought himself a camera and started looking at life through a lens. For already 3 seasons Otto shoots and films all Tramontana productions. Favourite summer outfit? Bare feet and shorts. I know its unfashionable, but it will be cargo-shorts.  Best lunch at a set? I think the one’s on a beach while waiting for the afternoon light getting there. Although the studio Ernstige Zaken lunches are also delicious.   Bucket list travel destination? The Chinese bamboo forrest! Vast area’s covered by giant bamboo plants, listening how the wind plays through the leaves. Hi Panda bears! Favourite city in the world and why? Mmm choices.. Or Sevilla, or Capetown.. I think Capetown because of all the beautiful nature surrounding it.    Most beautiful location you ever had a shoot? Thats was in a desert. The Atlantis desert near Capetown or the one in Abu Dabhi. Atlantis with its almost white sand and Abu Dabhi with its orange-red sunsetting sand dunes.  

If you have to choose between film and photography, which one would you choose? I would choose film. Moving imagery in combination with beautiful music is unbeatable. Film translates emotion way more powerful. Even a still picture with music is powerful.

Who would you still like to photograph? Actress Natalie Portman. At a desert location, sunset, the wind playing with her hair and a long dress. She wears nice eyeliner. First word that comes to mind when you think of Tramontana? A beautiful woman traveling the world, with a hint of a smile and a touch off class. And dressed to that occasion. How do you unwind after a day of work? Grab my skate-longboard (and kahuna stick) and go for a nice cruise. In my cargo-shorts of course! Ultimate summer song? Daydream in blue From I Monster   Fun photoshoot memory? Building a digital Siberian steppe wasteland with mountains in the background to spice up a fashion shoot we shot a Kootwijkerzand in the middle of the Netherlands. A lot of people were asking where we shot it :-) What and/or who inspires you? I get a lot of inspiration from music and movies. The way the shots are taken in combination with music. I have to force myself not to ask the question ‘how was this shot made?’ every time, because it will ruin the beauty of the movie.
