Ludovic Vanackere will share his passion for gourmet cuisine with you, serving dishes based on local products that place the farmers and producers centre stage. TROUT • CELERISOTTO AROMATIC FISH SAUCE WITH CREAM • QUINOA CRISPS 4 fillets of trout 40 g butter

Remove the bones from the trout fillets. Season with salt and half-cook in butter on one side.

AROMATIC FISH SAUCE WITH CREAM 200 g fish stock 1 fresh bay leaf 2 coriander seeds 1 long pepper 80 ml cream

Aromatic fish sauce with cream Reduce the fish stock to three-quarters with the bay leaf, the pepper and the coriander seeds. Add Debic Crème 40% to obtain a smooth sauce. Adjust seasoning.

QUINOA CRISPS 70 g quinoa 200 ml water 5 g salt 5 g pepper CELERISOTTO ½ celeriac 1 shallot 50 g butter 500 ml white wine 100 ml cream

Quinoa crisps Cook the quinoa in the salted water. When cooked, mix and spread on a baking tray in a thin 2-mm layer. Place in the oven at 170°C to dry out. Celerisotto Cut the celeriac into the shape of grains of rice. The aim is to obtain consistent pieces, as close as possible in size to a grain of cooked rice. Chop the shallots. Cook in Debic Cuire & Rôtir. Add the celeriac and moisten with white wine. Cook as you would a traditional risotto, moistening regularly with white wine. Simmer over a low heat until almost totally reduced. Cream slightly with Debic Crème 40% and reduce again for a few moments. Adjust the seasoning and add a little finely chopped coriander before serving.

LE CASTEL - FOSSES-LA-VILLE

Well situated between Namur and Charleroi, Le Castel is the ideal place for your seminars or any other professional or private meeting. The three-star hotel and restaurant in a mansion decorated in contemporary style has two rooms that can accommodate 15 to 20 people (garden side) and up to 30 people (Collegiate Church side). The chef, Benjamin Mathy, will also welcome you into his Workshop-Kitchen and share his passion with you during a residential seminar. Butternut cream Clean the butternut squash and dice coarsely. Boil in salted water as if to make purée. When cooked, drain and place in a blender. Mix, season with salt, pepper… to taste. Add butter in chunks and soften until the desired texture is obtained. Keep warm.

Bacon confit Obtain a slice of bacon about one centimetre thick, slightly smoked, from your local butcher. Cut into squares and leave to soak in the oil (neutral taste) at 70°C for a few hours. Brown the pieces of bacon and set aside. Celeriac tagliatelle Clean and trim the celeriac and pass through a mandolin or slice thinly with a peeler and then cut into tagliatelle, blanch in the deep-fat fryer then dry in the oven. Set aside.

Bacon foam Place the bacon trimmings in a saucepan with one-third water, milk and cream. Leave to infuse, keeping hot-warm. For the dressing use a hand blender to produce a frothy preparation. Keep the mousse only. Scallops When cleaned, dry well and then sear in a pan, pre-heated until white hot, and brown on both sides just in a little oil. Season and dress!

PASTILLA WITH CHOCOLATE & DRIED FRUIT CARAMEL SAUCE PASTILLA 300 g 70 % dark chocolate 200 g butter 60 g sugar 4 egg yolks 2 whole eggs 10 sheets filo pastry CARAMEL SAUCE 200 g sugar 1 cinnamon stick 20 cl fresh cream 10 cl milk

Pastilla Melt the chocolate, butter and sugar over a bain-marie. Add the eggs. Mix, pour into a mould and place in the refrigerator. Remove from the mould and cut into ten portions. Cover each slice with dried fruit and wrap in a sheet of filo pastry. Caramel sauce Caramelise the sugar and the cinnamon stick dry (be careful, it burns very quickly). At the same time, bring the cream and the milk to the boil. Pour over the caramelised sugar. Cook for a few minutes and add the same dried fruit as used on the chocolate.

Just before serving, place the pastillas in the oven at 180°C for a few minutes. Serve with cooled caramel sauce.
