Recipes for the Holidays There’s nothing quite like brunch on Christmas morning or New Year’s Day. It’s easy to prepare and serve and everybody loves it. Here’s a selection of our favourite brunch recipes, tips and tricks to make your holiday meal planning simple and delicious.

Heat griddle to 350°F or frying pan on stove to medium heat. In a shallow bowl or pie plate, whisk together eggs, milk, vanilla, cinnamon and salt. Dip each side of the bread in the egg mixture. Drop a small amount of butter onto the griddle, and then add bread slice. Cook French toast until golden brown—about 2 to 3 minutes per side. Serve warm with fruit, syrup, whipped cream and icing sugar as desired.

• Brunch offers a great selection of ideas (yay breakfast and lunch) so make a few different dishes that tie together. • A colourful fruit tray is not only delicious, but it’s also pretty on the table. • Save yourself time by preparing the night before. Set up the table with serving ware, napkins, plates, and glasses so it’s one less thing to do the next day. • Offer both hot and cold drinks—hot, fresh coffee, a selection of teas and cold fruit juice are the standard. Might we also suggest hot chocolate or mimosas too?

Sausage & Hashbrown Casserole 2 lb. breakfast sausage 1 bag frozen shredded hash browns 1 tsp. salt ½ tsp. pepper ¼ tsp. garlic powder ¼ tsp. onion powder 2 c. old cheddar cheese, grated 8 eggs 2 c. milk

Preheat oven to 350°F and prepare a 13 x 9” pan with cooking spray. In a bowl, whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Set aside. In a skillet, crumble and cook sausage until no longer pink and drain fat. Remove sausage and set aside. Add hashbrowns to skillet and cook until golden brown. Add hashbrowns to 13 x 9” pan and top with sausage and cheese. Pour egg mixture over hashbrowns and sausage. Bake uncovered for 35 to 40 minutes.

Here’s a few ideas to get your imagination working. • Coffee and doughnuts – elevate the office coffee and doughnuts to the next level. Pretty trays of fresh doughnuts and pastries and a selection of coffees— regular roast, dark roast, espresso and flavoured—will wow your holiday guests. • Road Trip Style – nothing says brunch like the classic eggs and bacon you enjoy on the open road. Set up your spread with scrambled eggs, crispy bacon, warm sausage, hashbrowns, pancakes and plenty of buttered toast—and be sure to have more than just white toast. Who doesn’t love rye or sourdough to mix it up? • Waffle bar – break out the waffle maker and keep the waffles coming. Classic waffles with fresh fruit, syrups, whipped cream and fun sprinkles are a great way to feed the family between rounds of presents.

Preheat oven to 375°F and grease an 8 x 8” pan. In a bowl, add crumb topping ingredients. Using a pastry blender, mix until crumbs are formed. Set aside. In a mixing bowl, blend together flour, sugar, baking powder, butter, salt, milk and egg and beat for 1 minute with a stand or hand mixer. Fold in blueberries carefully. Spread batter into prepared pan with a spatula or wooden spoon. Sprinkle crumb topping over cake. Bake for 45 minutes or until a toothpick comes out clean.

GIVING BACK EVERY DAY Souls Harbour Rescue Mission Serves with Compassion and Kindness BY FRESH YQR STAFF

Souls Harbour Rescue Mission has been serving southern Saskatchewan for over 30 years. During that time, the mission has fed over 2.5 million people, given away well over one million pieces of clothing, and provided over 100,000 nights of emergency shelter. Providing food, shelter, and clothing is at the core of who they are. When combined with over 100,000 hours of counselling, these free humanitarian services are foundational in providing ‘Real Answers for Real People’ for the long term that Souls Harbour is committed to. Souls Harbour also offers further programming and services, including two 60-spot subsidized daycares, an addiction program for women and their children, an atrisk youth center, and 60 suites of safe affordable housing. They truly strive to ‘love their neighbour’ as themselves. It is primarily through the generosity of the Souls Harbour volunteers (and their time) and their donors that Souls Harbour can offer such a holistic continuum of care to those in need. Souls Harbour Rescue Mission receives very little government funding at any level—municipal, provincial, or federal. The primary source of revenue for the important work that Souls Harbour does comes from donations. “We value every donation, and so stewardship is something we take seriously,” says Joe Miller, Souls Harbour executive director. “To the extent that two years ago we completed a new build at 1632 Angus Street here in Regina with that in mind.” The building was constructed as a ‘passive’ design and not in the conventional manner. There is no boiler in the four-story building, but rather two furnaces which heat the entire facility, even in the cold winter months. “This is all made possible because of an exterior envelope (walls and roof) that is 22” thick and heavily insulated. Window frames are not made of aluminum or PVC but rather fibreglass,” says Joe. “This helps minimize heat loss, and with a specialized air handling unit we have the ability to move cold or hot air when and how we want. Plus, the building is also solar.” Because of this, Souls Harbour

has been able to reduce their operational costs by about 30 to 35 per cent. “Now donor dollars go even further, and in the spring or early summer of 2022 we will be constructing a new facility in Moose Jaw as well. It too will be designed with operational savings initiatives,” says Joe. None of this work would be possible without support from the community. Unfortunately, given the pandemic and its fourth wave, Souls Harbour’s need for volunteers has decreased significantly. However, with the Christmas season upon us, here are a few suggestions on how you can help Souls Harbour help others. Classic Scottish Shortbread

2 c. salted butter, softened 1 c. brown sugar, packed 4½ c. all-purpose flour With a stand or hand mixer on high, cream together butter and brown sugar until light and fluffy (about 3 to 5 minutes). Set mixer to low and scrape the sides of the bowl. Slowly add in flour until combined. Do not overmix. On a sheet of plastic wrap, press the dough into a rectangle and refrigerate for at least one hour. When ready to bake, preheat oven to 325˚F and line baking sheet with parchment. Flour a clean workspace and roll dough into an even sheet about ½” thick. You may need to add flour to prevent sticking. Use a large knife or pizza cutter to cut dough into even rectangles (2½” x 1”). Place on baking sheets 1½” apart. Pierce each cookie with a fork. Bake for 20 to 22 minutes or until golden brown around the edges. Cool for 5 minutes on baking sheets before removing.

Classic Gingerbread 1 c. brown sugar ⅔ c. vegetable or canola oil ¼ c. blackstrap molasses 2 eggs 3 c. + 1 c. all-purpose flour 2 tsp. ground cinnamon 2 tsp. ground ginger 1 tsp. ground cloves 1 tsp. baking soda ½ tsp. salt In a bowl, sift together 3 c. flour, spices, baking soda and salt, and set aside. With a mixer, blend together oil, molasses and brown sugar. Mix in the eggs one at a time. Slowly stir in your dry ingredients into

the molasses mixture, one cup at a time (dough will be sticky). Place the dough onto a heavily floured surface and with floured hands, work in additional flour with your hands until the dough is no longer sticky. Wrap the dough in plastic wrap and refrigerate overnight. Preheat oven to 350˚F. On a lightly floured surface, roll out dough ¼” thick and cut with your favourite cookie cutters. Bake for 8 minutes on ungreased cookie sheets until just starting to crack. Let cool for 2 minutes before removing from cookie sheet. Decorate with royal icing and sprinkles if desired.

In a mixing bowl, cream butter and sugars together. Add egg and egg yolk and mix until combined. In another bowl, sift flour, cinnamon powder, cream of tartar, baking soda and salt together. Add dry ingredients mixture to wet and mix until just combined. Do not over mix. Chill dough for at least an hour. When ready to bake, preheat oven to 350˚F. Cover baking sheets with parchment paper. In a small bowl, mix sugar and cinnamon for topping. Scoop small portions of dough and shape them into small balls. Roll in cinnamon sugar. Place on baking sheets and bake for 10-12 minutes or until the edges are firm and golden brown and the centers are slightly soft.


Chocolate Snowballs 1 c. butter, softened ½ c. icing sugar ¼ c. cocoa powder 1 tsp. vanilla 2 c. all-purpose flour ½ tsp. salt ¾ c. mini chocolate chips or chopped nuts 1 to 1½ c. icing sugar for rolling Preheat oven to 350°F and line baking sheets with parchment paper. With a mixer, combine butter, ½ cup powdered sugar, cocoa, and vanilla until fluffy. Add flour and salt and mix until combined. Stir in chocolate chips. If dough is too soft, chill until you can work it with your hands. Scoop doughballs (1 tbsp in size.) and place on prepared baking sheet. Bake cookies for 7-10 minutes until bottoms are just slightly brown and the tops are no longer glossy. Remove from oven and cool for 5-10 minutes. In a small bowl, add icing sugar and roll each cookie sugar until coated. Place on a rack to cool.

DIY SCRUBS FOR WINTER BY FRESH YQR STAFF Peppermint Epsom Salt Foot Scrub 1 c. Epsom salts ¼ c. olive oil 10 – 15 drops peppermint essential oil In a small bowl, mix Epsom salts, olive oil and essential oil together. Store in an airtight glass jar. Use a tablespoon-sized amount to vigorously scrub each foot. Rinse well and dry. Winter Sugar Hand Scrub ½ c. white sugar ½ c. brown sugar 1/3 c. olive oil 10 drops lavender essential oil In a bowl, mix sugars and oils together. Knead to blend well. Pack into an airtight glass jar. Use a teaspoon-sized amount to vigorously scrub each hand. Rinse well and dry.

WINTER SKIN CARE TIPS • Get a humidifier. Our winters are dry and cold. A humidifier can add moisture to the air and help keep your skin hydrated.

• Moisturize frequently. Keep your skin healthy with good quality moisturizers applied after handwashing, showering and bathing. • Sunscreen matters year-round. UV rays are out there even in the dead of winter. Apply a moisturizer with sunscreen every day all year long. • Drink water. It’s just as important to stay hydrated in winter as it is in summer. Drink up!

Himalayan Salt Body Scrub ¼ c. sweet almond oil 1 c. Himalayan salt 5 – 10 drops lavender essential oil 5 – 10 drops eucalyptus essential oil In a bowl, place Himalayan salt. In another bowl, mix almond oil and essential oils. Add oil mixture to salt and stir. Pack into an airtight glass jar. Use ¼ c. of scrub to gently exfoliate all over body (avoid your face as salt can be hard on facial skin). Rinse well and dry. Wake-Me-Up Coffee Body Scrub 2 c. cane sugar 1 c. ground coffee ½ c. olive oil In a bowl, mix together sugar and ground coffee. Add olive oil and stir until well-combined. Pack into an airtight glass jar. Use ¼ c. of scrub to gently exfoliate all over body (avoid your face as scrub can be hard on facial skin). Rinse well and dry.

Priceless Connections “It feels so surreal.” That comment is made so often after the death of a loved one. People describe the experience of awakening in the morning, and for a brief milli-second feeling “normal”, and then the rush of reality slams their heart, leaving them in the tsunami and surrealness of the truth that their loved one is gone. It is an overwhelming journey through tsunami waves as life reminds us over and again that our loved one is in fact no longer here. The grief journey is a step-by-step process that in this very moment is being journeyed by innumerable individuals and families. It is for this very reason that W.J. Jones & Son Funeral Services offer Grief Support Services. Our Grief Support Groups are our way of offering a “safe space” for people to “gather” (during COVID via ZOOM). COME IN FROM THE COLD Hair Care Tips for Winter Weather BY FRESH YQR STAFF Winter is tough. It’s tough to get up in the dark. It’s tough to get in a cold vehicle. It’s tough to shovel snow. It’s also tough on your body. The cold, dry air wreaks havoc on skin, nails and even our hair. Just thinking about static hair is enough punishment. Here are a few tips to at least keep your hair in shape during the long, dark days of a Saskatchewan winter.

• Shampoo less frequently. Try to wash two to three times a week and use dry shampoo in between washings. Lots of washing can dry out your scalp and cause flakes plus dry out your hair even more. • Get oily. You can restore moisture to your hair with oil-based treatment. Lightweight argan oil treatments can work wonders. Plus, care for your ends daily with a nourishing hair oil before bed. • Think deep. Deep conditioning once a week can also combat the effects of a cold, dry winter. It also helps prevent damage from heat styling too. • Masking is for more than faces. Hair masks are another great tool for preventing damage and adding moisture. • Leave-in conditioners can combat static. There is nothing like removing

a toque or brushing hair and have hair develop a life of its own due to static. A quick shot of leave-in conditioner can combat the flyaways. • Don’t go outside with wet hair, just like your mom said. Wet or damp hair freezes in the cold and that causes breakage. Listen to your mom—she is right. • Cover your head. Back to your mom’s advice again. Wear a hat to cover your hair, and even better, have it lined with silk or satin. Your head will be warm, and your hair will be protected from the weather, static and breakage. • Keep up with trims. It’s easy to want to hibernate all winter, but the salon is one place you shouldn’t avoid. Regular trims keep hair healthy and reduce split ends.

If you’re new to wallpaper, try experimenting in a smaller space such as a powder room, dining room, or entryway.

Wallpaper is back in and it’s nothing like the florals and kitchen prints from the 1980s. It’s fresh, fun and bold and it’s a wonderful way to add flair to any space in your home—and it’s surprisingly easy to install. Pick Your Space

First, you have to decide where you want to place your wallpaper. Is it for a small bathroom, or the feature wall of your living room? Think about the scale of the room versus the scale of the pattern you want to use. Also, consider how the wallpaper will work with any art you have for the room, and how it will have to stand up to the room’s use. For example, do you have kids that will touch it over and over again? If so, make sure the wallpaper can take a beating.

Select a Style

When you have determined where the wallpaper is going, now you have to pick your style. Consider the look of the room and your overall aesthetic. If your space is formal, think about classic papers such as handpainted designs or damask. To create some serious wow factor with bold décor, you’ll want to check out metallic, flocked, glitter or embossed designs. If your style is more laidback, simple plant, florals or textures will work well. If you lean more into country chic, try ginghams, plaids or retro farmhouse looks. Bird Feeder Fun this Winter BY FRESH YQR STAFF

This winter, you can help pass the cold days with a bird feeder in your yard. Bird feeders can attract a range of birds that are interesting to watch while supporting local wildlife. We call our birdfeeder “Cat TV” as our indoor kitty loves to watch the many birds that come to snack outside his favourite window. He’ll never catch one, but he loves to squeak and wiggle as the birds dine at the feeder. Getting Started

Your local hardware or home renovation store will have a selection of feeders for your yard. Platform, hopper and tube feeders are common options. Platform feeders are just that—a flat open platform birds can stand on. Hopper feeders are commonly box shaped and protect seeds from rain and snow. Easy to use, they can also attract squirrels. Tube feeders typically have small perches, are good for smaller birds, and are harder for squirrels to get into.

Where to Put Your Feeder

Whatever feeder you pick, place it near trees and shrubs and make sure you can reach it yearround for easy filling. Also, make sure it’s in a spot where you can see it from a window and enjoy watching the birds feed. Keep it far enough away to prevent birds from colliding into your windows.

What to Feed

• Black-oil sunflower seeds are the easiest option and work with platform, hopper and tube feeders. Purple finches, cardinals, goldfinches, grosbeaks, juncos, chickadees and nuthatches love sunflower seeds. • Nyjer (thistle) seeds are popular with finches. You can by Nyjer seed socks or bags to hang outside for easy feeding. • Unsalted peanuts are a hit with jays, nuthatches, woodpeckers and chickadees. • Suet is a block of animal-fat mixed with seeds, nuts and dried fruit. The block is placed in a wire box and placed outside in the winter (remove it when the


weather warms up). Hang it from a branch, and watch chickadees, nuthatches, woodpeckers and other birds that eat insects enjoy it. • When buying bird seed mixes, look for good quality blends for prairie birds. Look for mixes with sunflower seeds, nuts, white millet and corn. • To get a good mix of birds, have two or more feeders with different types of food.

Feeder Care

Regularly thoroughly wash and dry your feeders (once or twice a month) and ensure bird seed is not spoiled. Be sure to make sure your feeders are full and accessible to birds during snowfall and after heavy snowfalls. Watch for squirrels. They might be cute, but they can be pesky. Squirrel baffles can help keep them away from your seed.

Record Your Visitors

Once your feeders are installed and filled, be sure to watch who is coming by for a meal. Take photos and get to know the species that are visiting your feeders. Beyond the typical house sparrows, other species that overwinter in Saskatchewan include downy woodpecker, northern flicker, northern shrike, cedar waxwing, gray jay, black-capped chickadee, red-breasted nuthatch, snow bunting, dark-eyed junco and evening grosbeak. Bird feeding is a simple and fun way to support local wildlife and help reduce declining bird populations. Install a feeder and see who you can attract to your yard. You might be surprised who stops by!
