Margaret A. “Peggy” Borrello, 63, of Silver Creek, NY passed away Wednesday evening (April 9, 2014) at the Chautauqua County Home in Dunkirk, NY, surrounded by her loving family and her devoted husband. She was born on Feb. 8, 1951 in Silver Creek, NY the daughter of the late Richard and Barbara (Mason) Bible. A lifelong area resident, she was a loving wife and beloved mother who enjoyed spending time with family and friends. Socializing was a big part of her life and shopping was very dear to her. She also liked to cook and go camping. She belonged to Our Lady of Mt. Carmel R.C. Church in Silver Creek. Survivors include her husband of 42 years, Frank N. Borrello; a son, Frank G. (Jennifer) Borrello of Silver Creek; a daughter, Dawn M. (Greg) Elias of Tallahassee, Fla.; five grandchildren; four sisters, Patricia (Jeff) Bible of Zephyrhills, Fla., Paula (John) Catalino of Silver Creek, Linda (Bill) Bender of Silver Creek and Vicki (Robert) Badia of Zephyrhills, Fla.; and several nieces and nephews. Besides her parents, she was preceded in death by six grandchildren, including Eric and Emma Borrello. DEAR DR. ROACH: For several years, when I have had blood drawn it has shown an elevation in the alkaline phosphatase. It has been as high as 377 in recent tests. I have had the test to see if it was from the liver, but it was all right. I recently had a bone scan, and the doctor suspects Paget’s disease and is referring me to a bone oncologist. Do you have any comments in regard to this? — D.C.A. ANSWER: Alkaline phosphatase is an enzyme that, when found in the blood, usually comes from the liver. Conditions such as gallstones or others that affect bile flow are the most likely to increase the level in the blood. However, alkaline phosphatase also may come from the bone, and in this case, Paget’s disease is the most likely cause. Your doctor may have determined where the alkaline phosphatase is coming from by ordering a special isoenzyme blood test. The bone scan is usually diagnostic for Paget’s. Paget’s disease is thought to result from abnormal osteoclasts, the cells that normally remodel bone. The osteoclasts break down bone, and osteoblasts build it back up again. Bone needs to be replaced over time to repair any microscopic cracks that have formed. Without normal bone turnover, the bones become brittle. In Paget’s disease, the bone

The key to a healthy immune system remains a good diet, good exercise and sleep, and avoiding too much stress. Good hand hygiene is necessary for reducing exposure to bacteria and viruses. I am skeptical of the ability for supplements to improve the immune system. That being said, there are vitamins and trace minerals that are essential for the immune system to function at peak level. Most of us can get adequate amounts from a healthy diet. The supplements sold to “boost the immune system” generally are multivitamins with some additional unproven ingredients. I’ve adapted this family recipe from the Lodge Cast Iron Nation cookbook, doubling the amount of the White Cream Gravy used as a binder in the recipe to serve as a side with the croquettes.

1. Melt the butter and add the oil to a Lodge 10inch cast iron skillet over medium heat. Add flour, salt, black pepper, poultry seasoning and cayenne pepper. Stir for 3 to 4 minutes, without coloring the flour. Slowly pour in the milk and the Worcestershire sauce, stirring all the while, and continue to stir until the white sauce thickens. Pour half of the white sauce into a bowl and set aside. 2. Add the chicken and the green onion to the remaining white sauce in the pan. Place the chicken mixture into a bowl, cover and set it in the refrigerate for at least 30 minutes to cool.

To Make the Croquettes:

White Cream Gravy: 5 tablespoons unsalt- ed butter 1 tablespoon veg- etable oil 1/2 cup all-purpose flour 1 teaspoon salt 1 teaspoon black pepper 1 tablespoon poultry seasoning 1/4 teaspoon cayenne pepper 2 cups whole milk 1 tablespoon Worcestershire sauce Chicken Croquettes: 2 cups cooked chicken cut into small pieces or 2 cups cooked ground chicken or turkey 1/2 cup finely minced green onions, green tops and white ends 1 large egg, beaten 3/4 cup fine bread crumbs or Panko breadcrumbs Vegetable oil

1. Place a beaten egg into a small bowl. Place the breadcrumbs on a plate. When the chicken mixture is cool, take a rounded tablespoon of the mixture; first dredge it in the crumbs, then coat with the beaten egg, then dredge the croquette with the crumbs again. Refrigerate the croquettes in a single layer in a covered dish for several hours to firm up. 2. In a Lodge 10-inch castiron skillet, heat 1 inch of oil over medium to high heat. When the oil is hot, fry the croquettes in batches (don’t crowd them in the pan because they will steam and won’t get crisp), turning often until croquettes are a golden brown. Drain on paper towels. 3. Re-heat the reserved White Cream Gravy and serve it on the side with the Chicken Croquettes. All told, the defenders get no more than a spade, a heart and a club. It is true that the suggested method of play would not succeed if West held the QJ-x-x of trumps. In that case, the effort to guard against a 4-1 trump break would, unfortunately, amount to a futile exercise in good technique.

The tax credit plan benefits property owners when municipalities remain within the two-percent tax cap for two years. This is an incentive to create more efficient government. It may be just the kind of incentive we need in New York State to reign in high property taxes. One of the major causes of high property taxes is the numerous layers of government that we face here in Chautauqua County and in other counties statewide. We have village governments within town governments, and multiple towns within the county. Each level of government has costs and they use their taxing jurisdiction to cover those costs. These costs are reflected on your property tax bill. Only through sharing services, identifying and implementing efficiencies and reducing the layers of government will we be able to realize substantial changes in the way we, at the local level, control our own property tax destinies. Many municipalities do share services, and thatâ&#x20AC;&#x2122;s a good thing. But we must go further. To create a community that has long term viability for business growth and investment we must work toward lowering property taxes and lessening the hardship these onerous costs have placed on homeowners and business owners alike. Residents and businesses should be working now with their local elected officials to talk about the real and substantive change toward merging local governments and working together in new ways that will reduce administrative and overhead costs for towns and villages. School districts can get on this bandwagon as well, looking at further ways to consolidate. We have some excellent examples already in Chautauqua County, with the Panama and Clymer districts sharing a superintendent and with Ripley paying tuition to Chautauqua Lake to provide high school students with more educational opportunities. Tax credits for homeowners are available under this new budget. But our municipalities and school districts must continue to creatively seek cuts that can not only enhance our quality of life, but reduce the costs as well. The state is dangling a carrot before all of us. We need to go for it. We strongly encourage all taxpayers to get behind this plan. Make your voices heard at your village, town, City and County meetings and advocate for streamlining in a way that will structure these tax credits so that you and everyone in our community can benefit.

When you think about gardening and preschoolers, a spindly bean sprout emerging from a half-pint cardboard milk carton might come to mind. Every child deserves to be initiated into a “green thumb society” with this classic gardening activity. But there’s another favorite my kids enjoyed when they were young, even before they could say “rutabaga.” We called it a saucer garden. It uses kitchenscrap throwaways from vegetables such as carrots and beets, offers life lessons about care and responsibility and, like the bean seed, this simple garden grows to maturity before the kids go off to college. HERE’S THE FUN: Preparation Use a pie pan, a 12-inch plastic drainage saucer from a flowerpot or a large glass or aluminum plate with a rim. Sprinkle clean pebbles you have collected into the container randomly, or cover the bottom completely. Pour water in it to barely cover the pebbles. Keep a cup with a spout or a pitcher nearby so your child can be responsible for keeping fresh water in the saucer at all times. A spray bottle mister is a fun tool, too, for giving sprouting plants a shower now and then. Growing Most carrots are generally sold with their “tops” already cut off. Now you’ll grow them back again. While preparing dinner vegetables, slice off the top 3/4-inch of several carrots. Set them cut side down on the container or pebbles, making sure they are almost completely submerged in water. Keep the water level

For extra whimsy, let your kids’ creativity sprout, too. Place plastic miniature animals and Lego figures in the container to create a jungle or enchanted island scene. Or, add a few marbles, colorful clear beads and sparkling gems for a platter of jewels. Extra growing idea: You actually can re-grow celery. Cut off the bottom inch of the bunch and place in the container along with the carrot tops. Set it base side down and cut stalks facing upright in the water. When tiny leaves begin to form from the center of the base, they’ll grow, turning a darker green. At this stage, you can plant it in soil in a flowerpot or container with drainage holes, covering everything but the leaves. Water regularly. Eventually, transplant the growing base to your outdoor garden. Stalks will start to grow back for you to eat.

I know you’ve covered this many times before, but my two sons were chasing each other and one of them crashed into his bedroom wall and left a big dent and crack in the wallboard! He’s OK, but how do I deal with such a big damaged area? — Sara in Des Moines A large area of damage can be a bit daunting, but you can probably replace that section yourself. You’ll need to buy a piece of wallboard that is a few inches bigger on all sides than the damaged area. You’ll also need a utility knife (box cutter), a wallboard saw, a sturdy scrap of plywood or a 1-by-1 board, wood screws, drywall screws, an electric drill, drywall tape, drywall putty (or joint compound) and a putty knife, and finegrit sandpaper. The wallboard caved in when your son charged into it, meaning the impact probably occurred between two studs. You’ll find this out when you begin to remove the damaged section. Use a pencil and straight ruler to mark a cutting line along the top, sides and, if needed, bottom of the damaged area. Make the area as perfect a square or rectangle as possible, which will make the repair much easier. Using the utility knife, slice along the lines, then follow with the drywall saw to cut all the way through. Be very careful sawing next to the studs, as electrical and plumbing lines sometimes run along these boards. Use the utility knife or angle the saw to slice drywall that’s flush against a stud. Carefully pull away the dam-

aged wallboard. If part of the damaged area is attached to the stud, tug gently on the attached wallboard to reveal the screw, and then either remove the screw or carefully knock out the drywall from underneath it. Measure the new, square hole, and cut the replacement wallboard to those dimensions. Make sure the new drywall fits — it doesn’t have to be perfectly snug, but should be pretty close. Now, even if part of the new wallboard will be secured to a stud, you’ll still need to add a backing to the unsecured side (or sides) of the patch, especially if it’s a really big hole. The 1-by-1 scrap wood comes into play here. Measure and cut the wood so that it extends an inch or so past the top and bottom of the hole. Place it behind the hole, located about the center of the biggest gap between the studs, and use your electric drill to secure it with a wood screw, top and bottom. With the backing in place, put the new wallboard up with a helper holding it steady. Use drywall or wood screws to attach the wallboard to the backing boards and to the stud (near the original screw location but not at it). Now to cover it up: Place drywall tape along the edges of the new patch. Using a wide putty knife, apply drywall putty or joint compound over the tape, feathering the edges out to better blend with the surrounding wall. Let the compound dry for at least recommended time, then sand the compound smooth. Additional drying time may be needed before you paint over the repair area, and I recommend priming the area first. © 2014 King Features Synd., Inc.

The Most Dangerous Man in America: The Making of Douglas MacArthur by Mark Perry (Basic Books, $29.99) Reviewed by Larry Cox Even a half-century after his death, Gen. Douglas MacArthur remains one of the most controversial military leaders in American history. His accomplishments often were overshadowed by his outsized personality, his self-importance and his disregard for civilian authority. In fact, it was this disregard that caused him to clash with President Harry Truman, triggering his sensational firing. MacArthur was born in 1880 in Little Rock, Ark. After training at West Point, he joined the U.S. Army engineers, and served with distinction in France during World War I. In 1932, Democratic presidential candidate Franklin Roosevelt dubbed MacArthur “the most dangerous man in America.” Roosevelt was aware of the incredible popularity MacArthur had earned from both political parties following World War I, and he knew the war hero could prove an obstacle for his New Deal plans if the

general made a run for the White House. After FDR was elected president, he defused MacArthur by offering him a permanent but largely ceremonial post in the Philippines, which he kept until his promotion to commander of the U.S. Army forces in the Far East as America prepared for war with Japan. MacArthur inspired extreme emotions. Army Air Corps chief Benjamin Foulois perhaps summed it up best, saying MacArthur was the kind of man people either deeply respected or hated with a passion. It wasn’t difficult to dislike MacArthur. He was headstrong, vain, had a rebellious streak ... and a massive ego. His capricious personality even came close to sabotaging the American war effort. Military historian Mark Perry is convinced that MacArthur’s legacy has been unfairly skewed, and he sets out to put the record straight. For years we’ve been told to focus on plant-based proteins (beans, for example) rather than meats and cheeses from animal-based proteins. Now all that may change — depending on our age. Two studies, released within a week of each other, concur: In middle age, a highprotein diet makes us four times more likely to die of cancer, especially animal proteins like cheese, meat and milk, which increases overall deaths. Yet after age 65, an increase in protein is healthy. One study, reported in the Journal of the American Geriatrics Society, suggests that as we age, we don’t absorb protein like we used to. This lack of protein can lead to a decline in cognitive abilities, as well as how we function in activities of daily living. Researchers studied the diets of over 1,000 seniors with an average age of 67, looking at their intake of plant versus animal protein, and queried them again seven years later. Men with the highest ani-

mal protein had a 39 percent lower chance of functional decline. Scientists didn’t see similar results in those who had a majority of plantbased protein in their diets. The other study, in the journal Cell Metabolism, took a closer look at the physics of why protein goes from being bad for us to being good. The growth hormone IGF-I drops off after age 65, and we can become frail with muscle loss without an increase in protein to offset what we’re not processing. Your best bet: Go to your doctor and ask for a referral to a nutritionist. In the week before you go to your appointment, write down everything you eat to give the nutritionist a baseline of your current food choices. Ask whether, given the two studies, you should make any adjustments in your diet. Fake Pregnancy Need to buy a positive pregnancy test to push a romance toward marriage? You can, if you hand over $25 or $30 for a fake positive test. Ads apparently are turning up all over the country. Checkmate Do you like to play chess? If so, you could be targeted by the Susan Polgar Institute for Chess Excellence, aka SPICE. The Institute is real, from Webster University; the SPICE scam isn’t, coming from Russia. The scammers will invite you to become an “ambassador” for chess for a year and earn $25 million for that year. Of course you first have to send the scammers some money. If you see an email with the subject line “Chess Contract,” delete it. Don’t download the attachment and don’t fill out the form, which asks for personal information. Spy TV Is your television spying on you with hackers selling the data?
