Cheese Fondue Scores for Super Bowl Supper

1/4 cup dry white wine or apple juice 1 cup Swiss cheese, grated 1 cup Cheddar cheese, grated Tabasco (optional) Salt and white pepper 1 clove garlic, halved French bread, cut into bite- size chunks, each with some crust on 1. Heat soup, wine or apple juice, and cheeses over medium heat, stirring constantly until cheeses are melted. Add a drop or two of Tabasco and season to taste with salt and pepper. 2. Rub the insides of a fondue pot with garlic. Pour the smooth cheese mixture into fondue pot and keep warm. Serve yourself by spearing bread chunks with fondue forks and dipping completely into sauce. Make 4-6 servings. Extra idea: For preschoolers, dipping a long pretzel or bread stick topped with a chunk of French bread into their own bowl of the gooey cheese mixture is just as fun. Try veggies and apple slices for healthy dunkers, too.

Preheat oven to 350 F. Spray 8-by-12-inch baking dish with butter-flavored cooking spray. In a large skillet sprayed with same cooking spray, saute cabbage and onion for 5 minutes. Remove from heat; set aside. 2. In large bowl, combine meat, rice, Worcestershire, 1/4 cup tomato sauce and ketchup. Mix well to combine. Place meat mixture on a sheet of waxed paper and form into a 12-by-10inch rectangle. Sprinkle cabbage mixture evenly over top. Roll up jelly-roll fashion. Place meat roll in prepared baking dish, seam side down. 3, Bake for 45 minutes. Stir parsley and black pepper into remaining tomato sauce, and evenly spoon over partially baked meat roll. Tranum, President and CEO of the Chautauqua County Chamber of Commerce & Executive Director of the Manufacturers Association of the Southern Tier Just as he did two weeks ago in his State of the State Address, Governor Andrew Cuomo used his 2014 Budget address this past week to call for holding the line on spending and cutting taxes. Both of these themes are positive news for helping to improve the overall business climate in New York State. The Governor’s budget proposes a tax freeze to help provide relief to property owners, when their local governments stay within the state’s 2% spending cap. The package is not designed just as tax relief. It is also aimed at creating incentives for consolidating layers of municipal government statewide, which create burdensome tax structures, which is something the Chamber/MAST have been advocating for years. The jobs agenda proposed by Cuomo calls for an international marketing program aimed at Start-Up zones statewide. Each region of New York has been targeted for building assets that will boost the economy. These, too, are positive steps. In Western New York, the Governor’s proposal calls for creating a $100-million genome research center. Education funding proposed under the plan has received some significant attention, especially state aid to local school districts and universal pre-k. One area that has not been widely publicized yet sets aside $8-million for a STEM education package that would waive tuition at SUNY campuses for the top ten percent of high school seniors who study science, math, or technology and agree to work in New York State for five years. This measure is directly in line with the Chamber/MAST movement that created the Chautauqua STEM Education Coalition last year. Our Dream It Do It initiative continues to work on enhancing STEM learning opportunities, and the Governor’s latest move could help solidify our work. The budget includes spending cuts for a number of state agencies including over $1-billion in cuts for the Department of Health, the Office of the Medicaid Inspector General, and the Department of Labor. We remain optimistic about the proposed 2014 New York State budget, and ask lawmakers to make the important decisions needed to help move this state forward for businesses and residents alike.

In Meat We Trust: An Unexpected History of Carnivore America by Maureen Ogle (Houghton Mifflin Harcourt, $28) Reviewed by Larry Cox The battle surrounding meat and livestock production ranks among the longestwaged and hardest-fought in American history. It is a debate that dates back to the Colonial era. For her new book, Iowa-based author and historian Maureen Ogle sifted through more than 200 years of government documents, agriculture trade magazines, newspapers and personal accounts to serve up an unbiased look at how the American meat industry was shaped, by whom and to what end. Ogle believes that meat and its consumption help define us as Americans, and she began her research guided by two main goals: to educate herself about livestock production and meat processing, two of this country’s biggest industries, and to pass along what she learned so that we would better understand how meat gets to our plates. One of her more startling findings concerned manure

lagoons. To cut production costs, livestock producers began constructing and maintaining what amounts to open sewage tanks. While these lagoons have become rather common, few people — including farmers, public health officials and even engineers — understand the long-term consequences of these storage areas, especially when catastrophic flooding occurs. “In Meat We Trust” overturns many widely held assumptions about meat and meat production. For example, chicken, so popular today, was rare in urban American kitchens until the mid-20th century. And confinement livestock systems were born on the family farm; corporate producers did not adopt the practice until the 1970s. “In Meat We Trust” addresses many of the big questions about our carnivorous future. Carrot, celery, jicama sticks 1. Wings: Place oven rack in middle of oven; heat to 450 F. Line 2 baking sheets, including sides, with nonstick foil. In large bowl, toss chicken wings, oil and salt. Remove from heat; set aside. 2. In large bowl, combine meat, rice, Worcestershire, 1/4 cup tomato sauce and ketchup. Mix well to combine. Place meat mixture on a sheet of waxed paper and form into a 12-by-10inch rectangle. Sprinkle cabbage mixture evenly over top. Roll up jelly-roll fashion. Place meat roll in prepared baking dish, seam side down. 3, Bake for 45 minutes. Stir parsley and black pepper into remaining tomato sauce, and evenly spoon over partially baked meat roll. Continue baking for 15 minutes. Place baking dish on a wire rack and let set for 5 minutes. Makes 6 servings. Freezes well.

Slow-Cooker Pork Sandwiches Pork butt (also known as pork shoulder) is ideal for the slow cooker. 1 orange 2 limes 1 tablespoon paprika 2 teaspoons ground cumin 6 whole cloves (optional) Kosher salt and pepper 1/2 cinnamon stick 3 pounds pork butt or shoulder, trimmed and cut into 4-inch pieces 1/2 small red onion 4 slices country bread 1 bunch spinach, thick stems discarded 1. Zest the orange into a 5- to 6-quart slow cooker. Squeeze juice from orange and limes into measuring cup (should yield about 3/4 cup). Transfer all but 1/4 cup to the slow cooker; refrigerate remaining juice. 2. Add the paprika, cumin, cloves (if using), 1/2 teaspoon salt and 1/4 teaspoon pepper to slow cooker and whisk to combine; add cinnamon stick. Add pork and toss to coat. Cook, covered, until pork is tender and easily pulls apart, on low for 7 to 8 hours or on high for 5 to 6 hours. 3. When pork has 15 minutes left to cook, thinly slice onion and add to reserved juice. Let sit, tossing occasionally. Toast the bread. 4. Remove the cinnamon stick. Using forks, shred the pork and stir it into the cooking liquid. Push the pork to one side. Add the spinach to the other side; season with 1/4 teaspoon salt and toss until beginning to wilt. Va Little Dog Gets Too Many Treats DEAR PAW’S CORNER: How many treats is it safe to feed to a small dog at once? My grandmother always feeds two big fake pepperoni sticks to her Shih-Tzu after each walk. She walks “Cody” three times per day. Cody is looking a little stout. — Lila S., Dothan, Ala. DEAR LILA: Most petfood products, including treats, have a suggested serving amount based on a dog’s size. But in general, pet treats should make up no more than 10 percent of the pet’s total daily calories. Six “pepperoni”-flavored sticks per day is an awful lot of treats for a small dog. Does Cody eat all of his regular pet food as well? How much food is he given at his mealtimes? It can be difficult to correct a situation like this when you’re not the pet owner. However, you should give it

a try. Ask your grandmother how Cody’s last veterinary exam went, and whether the vet mentioned his weight. Ask her if you can help monitor Cody’s food intake, and try to convince her to reduce the amount of treats the dog receives after each walk. I’m willing to bet that if she feeds Cody just half a stick, breaking it into small pieces that she gives one at a time, the dog won’t notice the reduced amount. Find out from your grandmother if the vet has recommended a lower-calorie diet for Cody. If so, look at ways to get that calorie count down, and convince her to reduce the amount of treats to just one or two small bites of Cody’s favorite pepperoni stick after each walk. Your grandmother may resist, but it’s important for Cody’s health and is a way to ensure a longer relationship with her favorite dog.
