Cooking Corner Peach season is in full swing, which means it’s the perfect time to try this Lightsey Farms Peach Crumble recipe. Ingredients (Peach Mixture) • 8 Lightsey Farms Peaches • 1/2 cup Sugar • 1 tbsp Cinnamon • 1/4 cup Unsalted Butter (Crumble Mixture) • 1/2 cup Melted Unsalted Butter • 3/4 cup Sugar • 1 cup All Purpose Flour 2033 FM 1365 • 1 tsp Baking Powder Mexia, Texas 76667 • 1 tbsp Cinnamon • 1,4 tsp Salt • Vanilla Ice Cream Preheat oven to 375. Make Peach Mixture: Add peaches to a baking dish. Sprinkle with the cinnamon and sugar, stir to cover each peach slice, place pats of butter on top of peaches. Place in oven for 15 minutes. Make Crumble Mixture: Mix together butter and sugar. In a separate bowl mix together dry ingredients. Combine wet and dry ingredients and stir until well combined. Remove peach mixture from oven. Spread crumble mixture over peaches and bake for an additional 20 minutes.

Summer Creation Sings In the summer months, creation seems to hum—not metaphorically, but literally hum. I don’t know about you, but I have noticed in the last month, the noise at night is LOUD. Even, with all the doors and windows shut to keep in the precious air conditioning, the hum of the summer night could be heard over the insignificant sounds of the house. Mosquitoes buzzing, cicadas singing, hot breezes blowing through trees laden with leaves—these are the sounds of summer. It is the song of creation—the oldest song that has ever been sung. Rev. Jenn Pick The Psalmist sings, “O sing to the LORD a new song; sing to the LORD, all the earth.” I imagine that as he was writing this, the psalmist wasn’t just thinking about humans singing to God. I imagine that he was sitting in ancient Israel listening to the sound of animals and plants and people surrounding him that night, looking up to the countless stars and hearing a song that the earth sings to God. It is the response to a song that God sang to creation at the beginning of time. It is a love song, and it was good! Not just good, very good. And so I invite you to pause and listen closely as you go about your summer activities; as you work in your gardens and eat in your backyards and play at the beach. Listen. Can you hear the song?

MEXIA CIVIC CENTER Mexia’s Happy Place The golden-domed Mexia Civic Center has always been the most beautiful building in Mexia and happy place. It was shortly after the 1920 oil boom that Mexia passed several bond issues that would allow the city to build a new municipal building, as well as a high school, sewer lines and a city park with steel grandstands. The municipal building was to include a city hall that would house all city offices, and an auditorium that would provide a place for many kinds of events. Page Brothers Architects, of Austin, designed the building in November 1926, and the cornerstone was laid April 20, 1927., with about a thousand people attending, not only from Mexia but nearby towns, too. Student and teachers from Mexia High School walked to the site to witness the event. The county courthouse even closed to allow fans to attend the first baseball game that featured the Mexia Gushers against the Corsicana Oilers, A ban from Teague played, and Mexia Mayor J. Sandford Smith spoke, along with two state-level politicians. In the Mexia Daily News the day before the cornerstone ceremony, city leaders expressed confidence in Mexia’s continual growth, one official writing that the municipal building and auditorium “will be excelled in its appointments by no other in the state”. The auditorium had comfortable built in seats that descended to an orchestra pit in front of the stage. As planned the auditorium became the place for a wide variety of entertainment and events, and the building was the heart of the city, making it the happiest place in Mexia.

SESQUICENTENNIAL MEDALLION FOR SALE

This is the Sesquicentennial Medallion. They are $20 each and may be purchased at the Mexia Economic Development Corporation office located at 214 North Sherman Street. Please call ahead at 254-562-7900 to make a reservation to purchase the Medallion. All proceeds from the sale of the 2021 Sesquicentennial Medallions go to support the planning and hosting of the 2021 150th celebration. A date has not been set as of yet for the celebration because of COVID-19 restrictions. This is a beautiful medallion designed by Bob Crider after the 1871 Silver Dollar. There is a serial number for each medallion in the little rectangle box north of the Red River.

Summer is almost here. Please pay attention to heat advisory notices. When outside you can do everything is all right, but your body can still fail to keep you cool enough to live. Signs or symptoms of getting too hot are headache, quit sweating, chills, stomach cramping, nausea, vomiting, diarrhea, visual disturbance. It takes at least 15-20 min to cool down inside air conditioning, before going back out into the heat. On a normal day, a person should drink at least 64-82 ounces of water per day. Now if you are out in the heat sweating, drink 3 parts water to one part Gatorade, you need fluid volume with water, and the Gatorade supplies volume and electrolytes. The electrolytes let you know you are thirsty, but you still need your fluid volume with water. As I said earlier you can do everything right. Take breaks, shade completely cool down in AC for 15-20 min. But if your body temperature rises and stays high after you ignored the signs & symptoms you are in serious trouble. If someone has succumbed to heat prostration (awake) or heat stroke (out), call 911. Get their clothes off-cool them down. Removing the clothes lets the heat escape from the body. Next, put a fan on them, air convection will pull the heat away from the body. If you can move to a cool area of shade. If a shower is not available, use ice packs to the groin area, axilla area, and carotids bilaterally until EMS arrives. Again don’t ignore your FIRST signs and symptoms. Drink before you get thirsty. Take frequent breaks. Wear light-colored loose clothing.
