London Cure Smoked Salmon H. Forman & Son has been producing world-class smoked Scottish salmon in London since 1905. It is the original and widely regarded as the best. Our London Cure is a mild cure that hasn’t changed in over a century: pure rock salt, a little oak smoke, nothing else. No additives, no brine, no nonsense. Just the freshest fish and a lot of love. It’s a true gourmet food that recently achieved the rare distinction of protected geographical (PGI) status, the first London delicacy to do so. Wild and farmed Our London Cure is applied to the best wild and Grade One farmed salmon available. Both are fantastic and there are considerable

differences in taste. As Lance Forman says, “Grade One is like a fine Chablis, Genuine Wild is a mature Claret.” Lean, fatty or mixed? Each side of salmon has lean and fatty parts. In the same way that some people prefer chicken breast to leg meat, and vice versa, many of our customers have a clear preference. That’s why, in addition to our ‘regular’ packs, we offer packs that just contain lean or fatty slices. Only Formans smoked salmon can be ordered in this way.

H. FORMAN & SON ROPE-HUNG SIDES Our London Cure rope-hung sides are available in large, medium and small sizes. When we cure sides we cut notches in them to allow the salt to cure from back to front. Fillets from fish weighing 3 to 4 kilos have one notch, 4 to 5 kilos have two and 5 to 6 kilos get three. We offer each size untrimmed with bones remaining, straight from the kilns, trimmed with bones and pellicle removed, or hand-sliced and interleaved, ready to serve with a choice of D-cut slices for a full flavour profile in each slice (lean and fatty), or long lateral slices that range from the lean outside to the gloriously fatty belly. WHEN HARRY MET SALMON H. Forman & Son has been producing ‘London Cure’ Smoked Salmon since 1905. Why Scottish salmon? Because it’s the best, and the freshest – delivered to the smokehouse within one to two days of being netted. But a century ago it wasn’t quite such an obvious choice for one aspiring immigrant. Aaron (Harry) Forman arrived in the East End of London knowing he could make a living from selling cured fish, a staple food for his fellow émigrés, but assumed he would have to use Baltic salmon imported in barrels of brine. When he discovered the availability of gloriously fresh Scottish salmon, delivered to Billingsgate market from Scotland on overnight trains, his eyes opened wide to the potential of creating a new gastronomic delight that London’s bon-viveurs would relish. With clever marketing, a secret cure, some smooth sales patter and the energy of a natural entrepreneur, he and son Louis were soon supplying Harrods, Selfridges and chefs at fine dining establishments such as Mirabelle and the Savoy. Today Lance Forman, Harry’s great grandson, continues the family tradition. It goes without saying that Scottish waters are still providing the salmon which recently earned London Cure Smoked Salmon protected geographical status, a 38

rare accolade only given to gastronomic greats such as Champagne, Camembert and Stilton cheese. Remarkably, it’s the first London-produced food ever to receive this distinction. Harry’s legendary London Cure has earned the plaudits but it’s the salmon that remain the star of the show. The whole point of curing is to preserve flavour, and flavour where fish are concerned is largely governed by freshness. Forman’s still smoke wild salmon but stocks are limited and prices high so the vast majority is farmed in lochs off the west coast of Scotland, two of which are featured in these pages, or in the Shetlands where the fish swim in cold, fast-flowing currents and build up stronger muscles. Salmon farming is, of course, big business but there 40

Before smoking, fillets are laid in rock salt for 24 hours to dry-cure. During this period they will lose at least 10% of their weight as the moisture is removed. This is the heart of the London Cure. The recipe remains as it has for over a century: The best Scottish salmon, rock salt, a little oak smoke. Nothing else.

The farms are strictly regulated and the husbandry of such a high standard, not to mention the refrigeration technology, that the quality of salmon delivered to Forman’s Fish Island smokehouse is consistently high, far beyond anything Harry Forman would have envisaged. Does farmed salmon taste as good as wild salmon? “People always ask me that,” says Lance Forman, “and I try to explain it like this: Grade One farmed is like a fine Chablis, wild is a mature Claret”. After curing the ‘sides’ are hung in the kilns for up to 24 hours to be air-dried and smoked using oak logs burned by friction so the smoke level can be perfectly controlled. Smoke seals and protects the flesh, forming a smoky coating that is removed before slicing so as not to overpower the delicate flavour of the fish.
